  • Living on a Budget: Groceries $40 for 4

    RiteAid and Walgreens
    It was my third week of doing my new cash budget system – Groceries $40 for 4.   Although it has been a learning process the last two weeks this one has gone pretty well so far.  I have to admit, honestly, this week we stocked up on some good deals on special treats and items for road trips for the family.  It is always a learning and growing progress for our family.  We are continuing to utilize the food we already have in our pantry and freezer.  Here is my grocery spending for the week:
    • $2.29 at Walgreens for 3 boxes of Sugar Free Jello Pudding and 1 M&M Cookie (see picture below)
    • $9.99 at RiteAid for a 3 Mountain Dew ThrowBack (12 packs) and 1 free Diet Pepsi (12 pack). Jake really likes the Mountain Dew Throwback and recently I have been having a hard time finding it even on the shelves so we stocked up this week.
    Mommy was a softy since the girls were home from school on Monday and helping me run errands. I bought the girls a giant M&M Sugar Cookie that was on sale for 50 cents. Brina and Karlie were more than happy to share the monster cookie! =)

    It was great having my two little helpers along for a ZoobaLoobaDoo errand!   The errands were not quite as “efficient” but they did help and were super good during the trip!

    • $8.14 at SaveALot | RiteAid for 2 gallons of Milk, Popcorn, and Sugar Free Candy
    • $5.54 at BiLo for 2 packs Eggs (Dozen each), Gatorade Orange, Gatorade Fruit Punch, and Fresh Cabbage.

    • $7.99 at RiteAid for 3 (12 packs) Mountain Dew Throwback and 1 free (12 Pack) of Diet Pepsi (We are not Diet Pepsi drinkers, but since it was a free item we have reallocated it to someone who does!  I wouldn’t have done this deal again but  I had 2 – $1 off coupons for Pepsi products so the packs were less than $2 each).  Jake should be set for quite awhile after this week’s stocking up on the Mountain Dew throwback!!!
    • $3.03 at Dollar Tree for 3 bags of Sugar Free candy
    • $2.00 at Winslett’s Produce (a family store with fresh produce)  for 2 bags of Gluten Free White Cake Mix (we have several friends with Gluten allergies so this comes in handy for hosting and sharing)!  The bags were marked down to $0.99 from $4 each!!!

    It was our third week of the challenge – Groceries $40 for 4 and we spent $38.98 so we were close to going over again, but thankfully we did better this week .  I was able to stock up on some items for my man this week; Mountain Dew Throwback, Gatorade packs, and Sunflower seeds are perfect for traveling!  Do you think I missed him a little bit while he was gone on a work trip, ha!?    I am still trying to work out all the details of how to make the budget most effective for our family and I think some weeks will be easier than others.  I used some coupons, bought clearance items, and utilized weekly ad discounts to help save us a little extra on our grocery budget.  I hope to do better next week now that we have replenished Jake’s drinks!  We’ll see how I do!

  • Family Recipe: Green Bean Tator Tot Casserole

    My Mom is a great cook and this is one of the recipes I remember her making when I was a kid.  It is a great mix of flavors and the perfect casserole to take to someone for a meal or if you want to make two and freeze one for a busy day later that month.  One thing I really love about this meal is that you can use what you have on hand in your pantry or freezer (you don’t have to buy a “special” type of green beans, hashbrowns, or cheese) to make it tasty!

    Green Bean Casserole

    • 2 lbs Hamburger, browned
    • 1 can Mushrooms (optional)
    • 1 pkg Shredded Cheese (Mozzarella or Cheddar or Mix)
    • 2 to 3 cans Cream of Mushroom Soup
    • 1 pkg frozen Hashbrowns or Tator Tots
    • 3 cans Green Beans (any style)

    Brown the hamburger then add the mushroom soup and canned mushrooms.  Stir and place on the bottom of a casserole dish.  Then layer the green beans on top of the meat mixture.  Spread the hashbrowns over the top of the green beans.  Sprinkle shredded cheese over the hashbrowns.  Bake at 350 degrees for 45 minutes to an hour.  Until cheese is golden.

    I made it through my second week of doing my new cash budget system – Groceries $40 for 4 and I have to be honest with you, it didn’t go well at ALL.  It was a super busy week and I decided at the beginning of the week to totally revamped my menu for this week.  The good news is the menu included a bunch of new healthy recipes, however, since we have been cutting back on our grocery shopping the last few weeks we had to rebuild our fresh fruit and veggie stockpile.  Although I was able to get a lot of great deals on veggies (Thank You Aldi’s) it still added up quickly.  My grocery store shopping this week was spread out and sandwiched in between appointments which made it even more hurried and less organized.   I am still learning how to operate on the cash grocery system (even though I blew it this week).  Hopefully, we can continue trying to utilize the food we already have in our pantry and freezer along with adding in extra fresh fruits and veggies.  I did learn a lot about the mistakes I made this week (hopefully I can refrain from repeating them).  What I learned this week from some of my grocery shopping mistakes:

    • It is important to make the time to go shopping and not try to squeeze it in between appointments (rushing through doesn’t always work well even with a list).
    • Forgetting some of my coupons made a huge difference ( I didn’t have the time or desire to use extra gas to go back for them)
    • Shopping early morning is much better than in the middle of the day (not as many markdown items)
    • Fresh items are more expensive (it is okay to substitute in some frozen ones too).
    • Completely altering your menu once the week has already started causes unnecessary stress
    • There are certain times of day it is not smart to take the whole crew with you to the store (right after school when they are restless and very HUNGRY)
    • It is very difficult sticking to a $40 grocery budget when I had numerous hiccups in my process

    Pictured above is my Walgreens and SaveALot | Rite Aid trip.  Sorry I was not able to get a picture of my Aldi’s and BiLo trips it took everything in me just to put the stuff away (actually, I still have a few cans sitting on the counter still waiting for me to put them in the pantry).   I didn’t separate out my household and grocery items at Aldi or BiLo either so I don’t have the exact totals but to be completely honest I more than double my grocery budget for this week.  Here is what I spent at the two stores pictured above and what we bought:

    • $5.05 at Walgreens for 2 cans of Cashews
    • $19.23 at SaveALot | RiteAid for Milk, Parmesan Grated Cheese, Yogurt, Carrots, Cheese, Mushrooms, Stew Meat, Hamburger Helper

    Life was spread out and busy this week.  My grocery shopping and house shows the ripple effect of it too. It was our second week of the challenge – Groceries $40 for 4 and we more than doubled our grocery budget of $40.   I was disappointed in myself for making so many silly mistakes (and I knew better too) in my rush to pick up groceries and feed the family.  I did get to use some coupons, bought clearance items, and utilized weekly ad discounts to help save us a little extra on our grocery budget even though the savings wasn’t enough.  I really hope to be more organized and do better next week.  We’ll see how I do!

  • Recipe: Broccoli Rice Hot Dish

    I made a new recipe this past weekend from one of  Taste of Home’s “Guilt Free Cooking” Cookbooks and the entire family loved it.  I received thumbs up from everyone, several please make this again, and the kids even asked for seconds.  What was leftover of the casserole was eaten the next day so it didn’t go to waste either.  The best part is it was a “healthier” dish and was easy to make. I am not a huge egg person so I had a little hesitation in trying it because I didn’t want something that had a heavy egg flavor.  In the end I was super happy I tried it because I couldn’t even taste the eggs because it had so much flavor in the dish.  As I am trying to eat healthier and cook better food for my family (not that we don’t have a couple of pizza nights a month) I am looking for new, easy, inexpensive and tasty recipes to try.  I bought this cookbook when it was on clearance for $2.50 before Christmas and this weekend as I was sitting on the front porch glider leafing through it while watching the kids play in the yard this recipe jump off the page begging for me to try it out, glad I did too.  It was a hit with the family and it included ingredients that I can easily have on hand.  I used it as our main meal but since it is meatless you could have it as a side as well.

    Broccoli Rice Hot Dish

    • 2 cups hot cooked Rice
    • 3/4 cup shredded reduced fat Cheddar Cheese
    • 1/2 cup Egg Substitute OR (1 egg)
    • 3/4 teaspoon Garlic Salt

    Filling

    • 1 pkg (10 oz) frozen chopped Broccoli, thawed
    • 4 oz chopped fresh Mushrooms
    • 1/2 cup chopped sweet red pepper (we choose to not add the red pepper)
    • 1/2 medium Onion, chopped
    • 1 cup Egg Substitute OR (2 Eggs)
    • 1/2 cup Fat Free Milk
    • 1/2 teaspoon Onion Salt
    • 1/2 teaspoon Pepper
    • 1 cup (4 oz) shredded reduced fat Cheddar Cheese

    In a large bowl, combine the rice, cheese, egg, and garlic salt.  Press firmly into a 2 quart baking dish coated with nonstick cooking spray.  Bake at 375 degrees for 10 minutes.

    Meanwhile, place the broccoli, mushrooms, red pepper, onion in a steamer basket over 1 inch of boiling water in a saucepan.  Bring to a boil, cover and steam for 5 minutes or until crisp-tender.

    In a large bowl, combine eggs, milk, onion salt, and pepper; stir in vegetables.  Pour over crust.  Sprinkle with cheese.  Bake, uncovered, at 375 for 25 to 30 minutes or until a knife inserted near the center comes out clean.

    Groceries from CVS, Walgreens, & RiteAid

    It was my first week of doing my new cash budget system – Groceries $40 for 4.   Although it has been a learning process the week has gone pretty well so far.  Since this my first week am I still testing the water and we continue trying to utilize the food we already have in our pantry and freezer.  Here is my grocery spending for the week:

    • $1.61 at Walgreens for 2 cans of Mandarin Oranges and 1 can of Mushrooms
    • $7.96 at RiteAid for a gallon of Milk, 2 packs of Cheese, 1 container of Sour Cream
    • $3.72 at CVS for a 24 pack of Bottled Water and 2 boxes of Popcorn

     

    Groceries from Ingles and CVS!
    • $1.98 at CVS for another 24 pack of Bottled Water (Jake should be set for a little bit!) & Free Mike-n-Ikes Candy!
    • $10.00 at Ingles for Strawberries, Oranges, Tangerines, Onion, Seafood, and Apples.
    Groceries from Aldi's
    • $14.06 at Aldi’s for Pineapple’s ($0.99 each), Salmon Fillets, 2 Cheese Packages, Cucumber, Bananas, Cheese sticks,  and Celery.

    It was our first week of the challenge – Groceries $40 for 4 and we spent $39.33 so we were very close to going over.  I was disappointed to see RiteAid’s milk spike up this week, but thrilled to get the 24 packs of water for $1.98 as well as some fresh fruit and veggies on sale.  I used some coupons, bought clearance items, and utilized weekly ad discounts to help save us a little extra on our grocery budget.  Since it was my first week I was testing the water and hope to do better next week now that we have replenished our fruit and veggie drawers.  We’ll see how I do!

  • Family Recipe: Steamed Gyoza

    My cousin Renelle gave us this recipe several years ago and it is delicious!  As I was going through my recipes and menu I realized it has been awhile since we have made Gyoza in our house, I think it is time to make them again.   Renelle is an amazing cook and comes up with some really creative, fun, and unique recipes.  Steamed Gyoza is a Japenese Steamed Dumpling.  If you like dumplings and are looking for something different yet delicious you should try this recipe!  Go ahead try something a little interesting this weekend.  You may discover a new recipe you love!  Thanks Renelle for giving us some many amazing new recipes to enjoy!

    Steamed Gyoza

    • 1/2 lb ground Pork or Beef
    • 1 tablespoon Soy Sauce
    • 2 tablespoon Water
    • 3 Shitake Mushrooms, finely chopped (optional)
    • 3 tablespoons Green Onion
    • 4 Water Chestnuts, finely chopped
    • 1 1/2 teaspoon Rice Wine or Sherry
    • 1 package Gyoza or Wonton Skins
    • 1-2 eggs well-beaten (you can just use water)

    Mix all ingredients together except skins and eggs.  Take one wonton skin, place about 1 T of the mixture in the middle of the skin and wrap skin around the filling.  Seal the edges with the egg or with water.  Place in veggie steamer so edges are not touching.  Steam for 7-10 minutes.  You can also fry them in a pan if desired.  Serve warm with soy sauce, sweet and sour, or plum sauce.

  • Family Recipe: Nancy’s Banana Bread

    A friend recently gave us banana bread which the girls absolutely loved.  After finishing that loaf I dug out our family recipe to make another loaf.  Grandma Willa shared Nancy’s Banana Bread recipe with us many years ago.  This delicious banana bread is always a super special treat around our house.  It is a wonderful recipe to pull out for a breakfast treat when you have guests staying with you or your hosting a get together for a group of friends.  I love that it is easy to put together too.

     

    Nancy’s Banana Bread:

    • 2 cups Flour
    • 1 tablespoon Water
    • 1/2 cup shortening
    • 1/4 teaspoon Salt
    • 2 Eggs
    • 1 teaspoon Baking Soda
    • 1 cup Sugar
    • 1/4 cup Walnuts (optional)
    • 3 Bananas, mashed

    Mix all the ingredients together.  Place in greased and floured bread pan.  Bake at 350 degrees for 1 hour.

    Now that I completed 9 weeks of my No Grocery Shopping challenge I want to share what is next on my agenda as far as grocery shopping is concerned.  I would LOVE to live off my pantry and freezer for the entire year, however, it is getting lower and I need to start shopping for some additional items.  I learned a lot from the recent challenge and want to keep my family fed while staying within our budget.

    Explanation: For the first time ever I am going on a strictly cash system for our groceries.  It is my desire to spend no more than $40 per week for my family of 4.  I am sticking to just grocery and food related items at this time since I have a separate budget for household, health & beauty.  If I find that I still have extra consistently I may decide to roll the other items into this as well.  As an additional bonus if I have more than a half of week of “extra” money remaining at the end of the month I want to contribute that money towards my Creative Cash. Although I know I will have days and weeks with hiccups like with any challenge it is my desire to be more accountable with what I have been given.  I perceive this budget change to have many benefits over the past systems I have used for example it will allow me the opportunity to buy items on sale but not over do it plus makes me more responsible with the money we have been given, and helps control the spontaneous purchases.  Only time will tell how well it works for our family.

    Every family is different so you need to decide what is best for your specific family and situation.  I am starting this endeavor after several months of thought and prayer regarding our family finances.  On a side note I do want to let you know that just because the title says Living on a Budget:  Groceries $40 for 4 that does not mean we will never host guests in our home or take a meal to someone in need.  Our guests and meal deliveries throughout the month are also included in this budget so the actual number will vary from month to month regarding how many people we feed but for simplicity sake it is Groceries $40 for 4 due to our family size and budgeting.

  • Family Recipe: Homemade Egg Noodles

    Grandma Willa makes the best Egg Noodles!  She received this recipe from her Mom, my Great Grandma Joedemann.  If you are wanting some great tasting homemade egg noodles these are amazing.  The ingredients are ones you typically have on hand and it is easy to make.

    Egg Noodles:

    • 4 Eggs
    • 1 1/2 cup Flour
    • 1/2 teaspoon Salt
    • 1/4 teaspoon Pepper
    • Optional – dash of garlic salt or caraway seed

    Mix and place on a floured pastry sheet roll out & cut.  You may need a little more flour depending on the moisture of the dough.  The dough should be pretty thick you want it just enough to roll it out.  Use the noodles immediately or let them dry for a few minutes before using with your favorite dish.
