Fire Ball Applesauce
I made a change to my crockpot applesauce recipe, I added 12 fire ball candies instead of cinnamon with the apples and a touch of brown sugar in the crockpot. The applesauce turned out delicious and a beautiful pink-red color! It’s a super easy recipe!
Fire Ball Crockpot Applesauce:
- 10 to 12 Apples (I just filled the crockpot)
- 1 tablespoon Brown Sugar
- 12 Fire Balls
1. Wash the apples. Core and cut your apples into slices. You can also peel the apples if you want too.
2. Put the apples in the crockpot. Sprinkle the brown sugar on top of the apples. Place the 12 Fire balls on top.
3. Cover and cook on low for 3 to 6 hours. Stir every hour or so until the apples are the consistency you want (we like ours a more chunky so it was a little over 3 hours in the crockpot).
4. Mash them with a potato masher, fork, or blender.
4. Cool and store in an airtight container or bag in the refrigerator or freeze to enjoy at a later date.

The best part about using my crockpot is on those super busy days I can stick a meal in it and when we all come home at night dinner is ready to eat. My sweet husband, for my birthday last week, got me The Big Book of Slow Cooker Casseroles & More by Betty Crocker and I LOVE it!
After the Thanksgiving Holiday we had some leftover ham that needed to be eaten up. So I grabbed my new book and found a great recipe to try “Ham & Wild Recipe Soup” and made it up on the cool Fall day. The soup was delicious plus it helped me utilize some of the leftover ham.
I already have several of the other recipes marked to try soon. I am thankful for quick easy meals especially on those crazy days. This cookbook will come in really handy as we approach the busy Holiday season too.
Recipe: Veggie Beef Soup
We made this soup recently when friends came over. I was trying to use up some fresh vegetables that we had in our refrigerator and came up with this recipe. It was super easy and tasted delicious. We have been trying out a variety of different soup recipes during the cooler winter months. All of us have enjoyed the leftovers too! The items that we put in the Veggie Beef Soup were ones we had on hand. Feel free to add more or substitute with the veggies that you have in your refrigerator. Today is a snowy day in SC so we are loving the warm meals. The kids have been in and out playing in the snow today.
Veggie Beef Soup
- 1 pound Beef Stew Meat
- 1 cup potatoes (cut into 1/2 inch)
- 1 cup carrots (cut into 1/4 inch pieces)
- 1 can stewed Tomatoes
- 1 can Beef Broth
- 1 cup frozen Green Beans
- 1/2 cup Snap Peas
- 1/2 cup Onion (chopped)
- 1 tablespoon of McCormick Grill Mates 25% Less Sodium Montreal Steak
Put all ingredients in the crock pot turn it on low and cook for 6 to 8 hours. If you want a slightly thicker soup you can add a tablespoon of sifted flour.
Recipe: Cheesy Broccoli Soup
It is winter and we are having a snow day here in South Carolina so I have been thinking about warm weather meals such as soup. I have been debating which one to make for our family but thought I could share them with you. If you like veggies and cheese you’ll enjoy this soup. You can add in other vegetables that you have on hand in your fridge. The girls like Cheesy Broccoli Soup just as much as we do. Glad both girls love eating veggies!
Cheesy Broccoli Soup
- 1 (16 ounce) package of Broccoli
- 1 can Chicken Broth
- 3 medium Potatoes (cut into 1/2 inch pieces)
- 1/2 onion (chopped)
- 1/2 tablespoon Butter
- 1/2 package Velveta Cheese
- 1/2 cup Milk
- 1/2 teaspoon Chives
- Pinch of Salt & Pepper
- Shredded Cheddar Cheese (optional)
Put butter and diced onions in the crock pot on high for about 30 minutes. While that is cooking prepare the remaining ingredients. Turn down the crock pot to low then add the cut potatoes, broth and broccoli to the crock pot. Stir in the cut up pieces of the Velveta cheese, milk, and chives. Cook on low for 6 hours, stirring occasionally. Sprinkle shredded cheddar cheese to the top before serving!
Family Recipe: Simple Potluck Corn
My husband had to make a side dish for a work event. The main course was BBQ so we wanted to come up with something that would compliment the main dish. The challenge was it couldn’t be something that required refrigeration or heating up right before the meal but had to make it four to five hours so they could eat it at lunch. Several years ago my Mom shared a recipe for corn that cooked in a crockpot it was simple, easy and delicious. Since Jake has a plug at his desk at work, I put together the corn recipe, stuck it in the crockpot and sent it with him to work. He stirred it a few times throughout the morning and it was ready just in time for the potluck lunch.
Potluck Corn Recipe
- 32 ounces Frozen Corn
- 8 ounces Cream Cheese
- 1/2 stick Butter
- 2 tablespoons Sugar
- 6 tablespoons Water
- Salt
Cook on low in the crockpot for 4 hours.
The Potluck Corn recipe was a hit. Even though the crockpot went to work completely full it came home empty. Glad it was enjoyed by the Jake’s co-workers. It is always a joy to share with others.
