    The girls have had a very busy 4th grade school year.  We are very proud of all that they have been able to learn and accomplish over the course of this school year.  While we know they work hard sometimes we as parents are blown away at the things they are able to do.  Yes, we realize they are growing up!

    It is exciting to see their talents and interests continue to develop and grow as they get older.  Neither Jake nor I would consider ourselves as artistic (I can barely draw stick figures, seriously, ask my family).  Yet Karlie had two pieces of her artwork selected to be part of her schools display at the Pickens County Museum for an entire month.  It is a big honor to have any pieces of your artwork up on display at our local museum.  We were proud of her!

    Beginning in 4th grade the girls started learning how to play the recorder!  Karlie LOVED it and would go outside and practice on the deck.  She would play her special music for Skipper.  I forgot how shrill those instruments could be and when you have two kids that play them…..well let’s just say I requested that they practice outside for the animals.  I could still hear it inside, but it wasn’t as loud.  Also, they didn’t ever practice together because it was a little hard to actual work on skills.  I think Karlie really enjoyed the noise!

    In science during their electricity unit they built items out of recycled goods that conducted electricity.  They had to put together a homemade lamp that could light a lightbulb.  Below are the two designs that the girls came up with for their lamps.  The teacher sent home the non-breakable pieces of the project.  It was a great hands on way to teach the kids about conducting electricity.

    On Family STEM Activity Night all students and families were invited to participate in dinner, activities, and a STEM Club presentation.  Both of our girls spoke in front of all the school faculty, family, and friends that were at the event.  So proud of their courage and willingness to speak in front of so many people.  They did fantastic at the robotic competitions and speaking at the event.

    Jake met us at the school.  He was great at building the tower out of spaghetti noodles and marshmallows.  They were given a specific amount of dry spaghetti noodles and marshmallows to see how high of tower they could build.  They had one of the highest towers when we left the room.

     At the end of the night the school held a drawing for all the people that came.  We had the grand prize ticket – an Amazon Kindle!  The kindle has already been proven valuable on our last couple of road trips.  Instead of bringing extra books they can read a lot of books that we downloaded on the Kindle.  It’s been a nice item to have for the kids.  They are very lucky girls!

  • Travel & Vacation: Homewood Suites & Paddington Movie (Atlanta, GA)

    On a recent trip to Atlanta, Georgia we stayed at the Homewood Suites.  The girls were begging to go swimming so on the first day we were there we wrapped up early and headed back to the hotel so they could swim.  It was in the high 70’s that day, however, they had just filled the pool a couple days before we arrived so the water was freezing cold.  Both kids got into the pool, but Brina was done after a few minutes.  Karlie stayed in a little longer, although it wasn’t much fun swimming by herself.  The entire time we were at the hotel we didn’t see one other person in the pool….I wonder why?!

    Since we scrapped our pool time activity we decided to look for some other activities that we could do together that night.  We headed back to the room to re-group and figure out what we wanted to do that evening. While the girls got dressed Jake and I made dinner in the hotel room.  It was nice having one with a fridge, sink, dishwasher, microwave, and oven so we could eat at the hotel!

    Jake found a movie theater nearby where you can get movie tickets for $3 each and they were showing some good kids movies so we decided to check it out.  It was only a few miles away inside a open shopping mall and market.  We chose to watch the movie Paddington with the girls at the Venture Theater

    It was a cute movie.  I seriously cannot remember the last time our family went to the movie theater so this was a special treat for the kids.  Usually it is so expensive just to go to the movies so we usually wait until it comes out on video.  It was a nice activity for the four of us and only cost $12!  The kids enjoyed the movie.  Jake and I had a couple good laughs too.  Thankful for a fun evening with the family.  Sometimes even the best of plans don’t go as expected so it’s always a good idea to have a Plan B.

     Our kids typically don’t sleep in very late so one morning after breakfast we spent some time playing games until the place we were going to that day opened.  During the evenings after dinner if we had time and everyone wasn’t too tired we would play some card games too.  It’s always a good idea to bring card games because you never know when you’ll have a few minutes of down time to relax and have fun.

    It didn’t take them long to crash after a fun filled day in Atlanta!

    The “Travel and Vacation” series is an insight into our trips together as a family and ways we relax.  Life is short and we were thrilled to have the opportunity to build memories with family and explore of of the most amazing places during our time away.  Explore with a good attitude, look for fun, and it will be an awesome trip jammed packed with positive memories.  It is refreshing having some time away from the regular routine.  Make it a once in a lifetime opportunity to meet new people and learn.  You just might see or try something new that takes your breath away!

    As the school year comes to an end I want to share with you a few highlights over the last couple of months.  I was going through my pictures recently and realized I hadn’t posted on some of the kids big activities for the school year.  We have been so busy trying to wrap up everything that needs to be done with the end of school some things just got away from me.

    It is hard to believe that my babies will be finishing up 4th grade in just a couple of days.  Although they put in a lot of work, time, and energy this school year we managed to learn a lot and have some fun along the way too.  I am thankful for the teachers and administration who helped our girls throughout the school year.

    The girls had a blast in STEM Club this year!  It was a great year of learning, working together with other students, competing, and many other wonderful activities.  It was a big time investment especially at the beginning of the year when they were meeting twice a week after school, but it paid off and they won a trophy and the golden ticket to state competition (a picture below)!   Very proud of their hard work!

    They went on to compete at State and did very well.  This was their first time at state (the club started last year).  They competed not against a lot of other elementary schools, but also against middle schools as well.  It was neat seeing all the kids work so well together.  The coaches did an amazing job encouraging the kids.  Grateful for this opportunity to our kids to learn and compete!

    Thankful that the girls had the opportunity to participate in STEM Club and First Lego League competitions this year.  It was a lot of fun yet big learning experience.  They couldn’t have done it without the assistance of all their coaches who invested a lot of time into the kids.  It has sparked the girls interest in robotics and technology as well as developed more team building, life skills, and so much more!

  • Counting My Blessings: Week In Review

    The week went by quickly.   It was full and busy.  Even though we had a shorter work and school week because of Memorial Day we still packed in a lot the remainder of the week.   I am blessed.  There was so much to be thankful for last week.

    I want to be accountable to you so the following are snip-its of some of the things I am thankful for this past week.  Counting My Blessings – Week In Review:

    Monday – Thankful for extra time with my family and a chance to celebrate Memorial Day together.

    Tuesday – Thankful for an opportunity to go to the library with the girls and pick out some books to read this summer.

    Wednesday – Thankful for a husband who still surprises me and shows me that he loves me.  I found a “love note” on my night stand from him while he was away on a work trip.

    Thursday – Thankful for friendships and a chance to catch up over lunch.  It is nice having people in your life that will speak the truth, allow you to talk about what’s

    Friday – Thankful for an opportunity to spend some time at the girls school and watch them compete in their Field Day.  Grateful to have Jake back home again and some time together relaxing, playing games, and hanging out with family.

  • Recipes: Low Carb & Low Calorie Brownies (with Walnuts)

    Low Carb & Low Calorie Brownie goodness

    I am super excited to share this delicious and healthy Brownie Recipe with you.  It is both low carb and low calorie if you are trying to eat healthier, but occasionally want chocolate.  Sometimes even while you are trying to eat healthier you just want something sweet and chocolate.  This recipe includes walnuts, but they can be omitted.

    A friend shared this recipe with me a couple months ago.  I have made these brownies several times.  They are delicious especially if you have been cutting back on sugar already!  I especially like to pull them out of the freezer for a cool tasty treat during those hot days, but really they good any time.

    This recipe makes 32 individual brownies.  I like to make a full batch which is a 9 x 13 baking dish and store the individual brownies in the freezer for the chocolate cravings or sweet snack.  Yes, these take longer than the box brownies, but they are healthier for you too.  They are rich and filled with chocolate goodness that hit the spot, but it won’t set you back if you are keeping track of your calories and carbs. Once this recipe is baked and cool it has a similar texture of a real brownie, but without the extra calories and carbs in each bite.  If you are looking for a healthy brown alternative try this recipe!

    Low Carb & Low Calorie Brownie Recipe (with Walnuts):

    •  1 stick Butter or Margarine (room temperature)
    • 2 cups Erythritol (powdered is best, but works with granulated too)
    • 1 tablespoon Vanilla
    • 4 Eggs (room temperature)
    • 1/2 cup Cocoa Powder
    • 1 teaspoon salt
    • 4 oz Unsweetened Chocolate (melted)
    • 2 cups Flax Seed Meal
    • 1 tablespoon Baking Powder
    • 1/3 cup Heavy Whipping Cream
    • 2/3 cup Water
    • 1 cup Artificial Sweetner
    • 1 cup Walnuts (optional)

    1.  Preheat oven to 350 degrees and grease a 9 x 13 baking dish.

    2.  Cream butter or margarine until fluffy.  Add the Erythritol and cream until fluffy (want a fluffy texture).  If you use the Erythritol granulated it will not turn out as fluffy, but the brownies will still taste good (I have done it both ways).

    3.  Add the vanilla to the butter mixture.  Beat the eggs into the mixture one at a time.  Add salt and cocoa powder; beat well.

    4.  Add the melted unsweetened Chocolate and beat until fluffy.

    5.  Add the remaining ingredients and mix well.   This recipes has the walnuts added, but they are optional.

    6.  Pour brownie batter into 9 x 13 baking dish.  Bake for 35 minutes.  Cool and cut into 32 squares.

    These taste delicious fresh, cooled, or even frozen!

    Total Calories:  113   Total Net Carbs:  1.19  Per Brownie (including walnuts)

    Net Carbs is calculated by taking the Carbs minus the Fiber. 

    If you omit the walnuts the Total Calories: 88  Total Net Carbs: 0.94  

    The total calories and net carbs are based of the ingredients we used while cooking this recipe.  It is good idea to calculate based of the specific brand and ingredients you are using in your recipe because it may vary slightly, but this will give you a good base guideline.  As long as you use the ingredients listed above it should be fairly close.

  • What’s for Dinner: Our Weekly Menu Plan

    It will be a busy week with the girls last week of school, special events, work, and other fun activities.  I recently cleaned out the Food Pantry so I am basis my menu off some of items that need to be used up.  Hoping to make simple and easy meals so we can attend the events on the calendar this week.  Here is our menu plan for the upcoming week:

    • Monday (Beef or Pork Entree): Beef & Veggie Stew, Corn Bread
    • Tuesday (Kid’s Night to Cook):  Homemade Pizza, Garlic & Herb Vegetables
    • Wednesday (Chicken or Vegetarian Entree): Lemon & Herb Chicken, Homemade Bread
    • Thursday (Pasta or Seafood Entree): Steamed Vegetables, Brown Rice Casserole
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

    I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or seafood entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

    Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.

  • Intentional Living: Weekly Goals

    Happy June 1st!  This year is flying by so quickly still cannot believe we’ve hit June already!  This is the girls last week of school!  WooHoo!  I always love it when they are on summer break.  It is a great time to spend together doing a lot of fun things that we don’t always have time to do doing the school year like summer reading, swimming, hiking, biking, traveling, hanging out with family and friends, and so much more.  We are looking forward to a lot of fun over the summer and making some treasured memories.  Jake had to travel some last week for work, but thankful he is back home this week!  There is a lot I want to get done this week before the kids are out of school, hopefully I will be able to accomplish most of it!  Here are my goals for this week:

    I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

    Why Share My Goals?

    • To keep me accountable
    • To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
    • To have my goals consistently written down so I can gauge progress more accurately
