• Book: “Made to Crave” by Lysa Terkeurst

    I recently attended a Ladies Bible Study at our church and we went through Lysa Terkeurst’s book and study guide “Made to Crave: Satisfying Your Deepest Desire with God, Not Food”  It was great reading a book that redirected our focus off food or other objects that we turn to when we want comfort or for celebration and turning our focus onto God.  The book isn’t a diet or healthy eating plan.  It is more of a guide to help you get your priorities in place.  If you are looking to eat healthier it gives you steps on how to set up a plan, find an accountability partner, and scripture to encourage you.  It was a refreshing yet challenging book to read.  I enjoyed going through the book and study with friends as well.  It was neat hearing their thoughts about the lessons and their own journeys as well.

    While I was going through the Bible Study I had the opportunity to attend the Extraordinary Women’s Conference at the Bi-Lo Center in Greenville, SC.  I was able to hear Lysa speak during that weekend and meet her in person.  It was really neat to meet the author of the book I was currently reading, I even got her to sign my two books that I had of hers!  The other amazing blessing about that weekend is I was able to spend some extra time with some girlfriends while my husband took care of the girls.  Having some time learning and celebrating with friends was a real treasure.  Thankful for a man who gave me the opportunity to go!

  • Living on a Budget: Groceries $40 for 4

    Another great week doing Groceries $40 for 4. It was another busy week but I managed to break away this past Saturday morning to go to the Sav Mor Box Sale with the family. If you haven’t been before and you live in the Greenville area it is worth the time to stock up on food items. It felt great saving some of the grocery shopping cash this week while stocking up on some items for our pantry. Below are my grocery shopping adventures for the week!

    Sav-Mor Sidewalk Box Sale - A Table Full for $16!

    We bought 107 items and paid $16.00 total which means we spent less than $0.15 per item!!!  You can often get some excellent deals at Sav Mor’s Box Sale.  I was hoping to stock up on snack items for our family since I will be traveling a little and I wanted to make sure there were plenty of easy snacks to take as well as  meals that could be made quickly for our family.  Our dining table was full once we unpacked the boxes!  We even got some Organic / Whole Wheat food items for the family.  We purchased two boxes at $7.00 each and the case of chips was $2.00 giving us our total of $16.00.

    Sav Mor has been doing their Box Sale for several years now.  They will occasionally offer additional discounts as well.  For example, last Saturday you could get a case of Tortilla Chips for $2.00 which meant you were getting the chips for 25 cents per bag.   There is more information I want to share with you about how the sale works so  I will be going into more details about the Sav-Mor Sidewalk Box Sale in a later post.

    • $2.85 at CVS for Kellogg’s Fruit Loops ($1.16 for the box), Kellogg’s, Rice Krispies ($1.16 for the box), and CVS Honey Wheat Pretzel Twists (of clearance for $0.49 cents)

    Groceries from Bi-Lo (I didn’t have a chance to take a picture this week, but wanted to include our milk purchase):

    • $6.04 at Bi-Lo for 2 gallons of Milk ($2.99 each)

    I am excited to see us doing better on our Groceries $40 for 4 budget.  This week we spent $24.89 on groceries so it was a pretty good week regarding saving extra grocery cash.  We did better this week because I a little extra time and went to the Sidewalk Box Sale at Sav-Mor.  I was able to stock up on a few extra items this week for the pantry.  I am still trying to work out all the details of how to make the budget most effective for our family and I think we need some weeks have been easier than others.  It was nice to share some of the items we picked up this week with some friends too!  Love being able to get a great deal and share with others.  We’ll see how next week goes, it should be interesting because my husband is in charge next week of the $40 grocery budget since I will be traveling!

  • Living on a Budget: Groceries $40 for 4

    It was my fourth full week of doing my new cash budget system – Groceries $40 for 4. This week I was able to get quite a few items with my $40 budget thanks to clearance items and coupons! Although it has been a learning process the last few weeks this one went pretty well. It is always a learning and growing progress for our family. We are continuing to utilize the food we already have in our pantry and freezer. Below are my grocery shopping adventures for the week!

    RiteAid Groceries

    • $2.16 at RiteAid for Cake Mix (25 cents), Hamburger Dinner (25 cents), Onion Spices, Ground Cinnamon, 2 Tomato Juices (25 cents each), Individual peanut packs, Combos, and two free Easter Candies.  Plus I used an UP Reward towards the purchase.
    FREE Mushrooms at Walgreens!

    Groceries from Walgreens:

    • $0.00 (FREE) at Walgreens for 4 cans of Geisha Mushrooms (used the Walgreens Coupon Insert and Register Reward to pay for the mushrooms! Can’t beat free!

    Groceries from Bi-Lo:

    • $36.52 at Bi-Lo for 4 gallons of milk (froze 2 gallons), 1 pack of Cheese Crackers,  2 Slow Cooker Packs, 2 Applesauce Packs, 1 Loaf of Bread, 1 box of Uncle Bens Rice (on closeout), 4 bags of Individually Wrapped Chocolate Covered Raisins (on clearance for 75 cents each), 1 bag of Chickpeas, 2 packs of Pasta, 2 packs of Cheese Sauce Mix, 1 jar Raspberry BBQ Sauce (on closeout), 4 bags shredded cheese, 2 bags sliced cheese, 1 package of fresh Chicken (99 cents / pound).  I used several store and manufacturer’s coupons plus I had a coupon from Bi-Lo for $5 off the entire purchase which helped bring the amount down below $40.

    It was our fourth week of the challenge – Groceries $40 for 4 and we spent $38.68 thankfully we did better this week .  I was able to stock up on some great dairy items this week – Milk (even froze 2 gallons), Cheese (which freezes well too), Chicken (enough for 2 to 3 meals for our family) and snacks for after school!  I am still trying to work out all the details of how to make the budget most effective for our family and I think some weeks have been easier than others.  I used some coupons, bought clearance items, and utilized weekly ad discounts to help save us a little extra on our grocery budget.  I hope to do better next week!  We’ll see how I do!

  • Vacation: “Cruise Adventure” on Royal Caribbean’s Serenade of the Seas (Part 2, Pictures)

    We talked a little earlier this week about our cruise vacation on Royal Caribbean’s Serenade of the Seas!

    Now we would like to share a few pictures of our adventures on board the ship that week!

    Our stateroom was great!  They had plenty of shelves and spots to put items away.  It had the most comfortable bed I have slept on in long time.  Jake and I are still trying to figure out how we can get that bed with the rocking motion of the ship so we can sleep soundly again!

    This picture was requested by our girls.  I did one last time and they wanted another window seat picture.  The beautiful scenery behind me is Puerto Rico.

    We played Put-Put or Miniature Golf in the dark and wind.  They had plenty of lights and music going.  Thankfully no one lost their ball but we had a few close calls!

    It was pretty amazing looking down through the coffee table to the centrium.  A couple brave people laid across the table but their pictures were too dark with all the lighting beneath them.  It wasn’t an ideal place to linger if you don’t like heights.

    Jake checking out the sights with his binoculars.  It came in handy several times during the trip. The walkie talkies were another great investment especially since we were traveling with a group.

    Every night after dinner our room would be cleaned, bed turned down, and we had a towel friend to welcome us back (tonight was a Swan)

    The towel animals were a special treat in our room every night.  Sometimes they were on the bed and other times they were hanging up in the room.  Little gifts from our stateroom attendant!

    The indoor pool and Solarium was really neat.  Full of plants, a pool, cafe and more.  The pool was really neat especially at night when the ship was moving because you could see the waves rolling back and forth in the pool as the ship rocked.

    The self leveling pool tables were pretty cool.  It was a hit with our group after dinner.  I even played a couple rounds!

    The food was simply delicious!  The best part is I didn’t have to cook or clean all week.  Love the fruit monkey in the tree.

    The swan was beautiful.  The detailed carving on these and other watermelons was really neat!

    The rooster made me laugh.  I have never seen someone turn vegetables into a rooster before, very creative!

    Noel was an awesome waiter.  He was positive, pleasant and entertaining.  Also, he offered a lot of great recommendations on what to do during our days on the islands, several times that proved very valuable!

    The elephant was so cute standing next to Jake’s pillows.  Our stateroom attendant did a great job keeping the room clean and was always helpful with any questions we had.  We only watched the ship and activity information channel on TV but since ours wasn’t working we ended up getting a Flat Panel TV in our room by the second day.  The maintenance guy said you would be amazed how many people actually spend the entire cruise in their rooms watching TV.  So thankful Jake isn’t that way because we had a blast exploring islands, learning, on adventures and meeting new people.

    Noel brought our table plates of lobster tails since everyone ordered lobster one night.  It was wonderful.  The girls were ready to go with us just for the lobster and seafood we ate during our cruise!

    Our second “formal” dinner night.  Jake and I had wonderful time having fun and relaxing together.  It was great traveling with family yet having some time alone as well.  Lots of fun memories!

    Fresh flowers were distributed throughout the ship.  The islands had the most beautiful plants.  Loved it!

    Pool Volleyball - Crew versus Guests

    They had a water slide on the ship.  Yes, I had to go down it!  Actually I think we went down it 3 or 4 times.  If you look behind the people standing at the railing you will see the ocean in the background.

    Noel was an excellent waiter.  He even came by our breakfast table the morning we were leaving to say goodbye to our group.  If you go on Royal Caribbean’s Serenade of the Seas request Noel as your waiter, you won’t be disappointed!

    This picture makes me laugh because it really is a long hallway with rooms on both sides.  With that being said we never seen or heard anyone in the rooms next to us (well except for Jeremy and Amber, but that was because they were part of our party).

    It was a wonderful week packed full of fun activities and great memories.  Jake and I had a blast and look forward to our next vacation traveling.  Next week I will share with you a little about our adventures in Puerto Rico!

    A Vacation To Remember series is a reflection on our recent trip and ways we relaxed.  Life is short and we were thrilled to have the opportunity to build memories with family and explore of of the most amazing places during our time away.  Go with a good attitude and looking for fun and it will be an awesome trip jammed packed with positive memories.  It is refreshing having some time away from the regular routine.  Make it a once in a lifetime opportunity to meet new people and learn.  You just might see or try something new that takes your breath away!

     

  • Vacation: “Cruise Adventure” on Royal Caribbean’s Serenade of the Seas

    As I reflect back over the cruise vacation we took on Royal Caribbean, Serenade of the Seas, I am thankful for the opportunity to experience a fun and relaxing trip full of new memories.  Over the last several weeks I have been sharing tidbits about our time exploring the various Caribbean Islands, however, today I want to focus a little more about the actual ship we spent our evenings on together.  We gave some facts regarding the ship in an earlier post but I want to share a little more about what we did on the cruise in this post.

    The seventh day of our cruise was the only full day we were at sea.  Every other day of the trip we were visiting an island in the Caribbean.  Ever day was packed full of a variety of activities.  There were a lot of fun things to do on the ship, here are just a few:

    • Breakfast – you could chose to have it delivered to your room, eat at the Windjammer (buffet) or eat a sit down meal at Reflections.  We did a mix of the Windjammer and Reflections throughout the week depending on the activities for the day.
    • Every day evening after dinner we would have a new schedule of the next day’s events, information and activities so we could plan out our day on the boat or if we were going onto an island.

    Our days were busy both on and off the ship.  There was always something to do.  We had fun, met a lot of wonderful people and created new memories.  We look forward to having the opportunity to cruise again in the future.  It was great not having to cook or clean the whole week!  On a side note, they had food available when you wanted it pretty much 24 hours a day!  It was nice because you could eat when it fit into your schedule!

    Here is a quick introduction of a few key crew members aboard the ship.  The Captain of our cruise ship was Captain Michel Claveau who started his career as a diver. Marc Walker was our Cruise Director from Weymouth, England started out in the entertainment industry as a DJ (22 years ago) then went on to juggle, unicyclist, then onto TV and Radio.  Marc has been with the Royal Caribbean family since the late 1990’s and has served on 20 of Royal Caribbean’s 22 ships.  Sanjay Dumar was our Hotel Director from Mumbai, India.  Marco Marzocchi was our Chief Engineer from Genova, Italy.  Cristiana Maruntelu was our Loyalty & Cruise Sales Manager from Romania.  Alistair Burnett was our Food & Beverage Manager from the United Kingdom.  Noel was our waiter and Janet our head waitress.  They did a fabulous job serving, singing, and creating a pleasant atmosphere during dinner every night we were on the ship.  I will add that the meals were amazing!  We met a lot of other wonderful people aboard the ship.  The staff was from all over the world and we enjoyed getting to know several of them during our stay on the ship.

    We spent some time in the late afternoon on the last day packing.  We were sad to pack but excited to continue our trip home and see the girls.  Jake and I walked around the ship on the last night snapping a few more pictures and video clips to show the girls.  They always have a lot of questions about the BIG boat!  If we could Jake and I would have just keep on cruising!  It was a wonderful experience again traveling with Royal Caribbean.  We will be sharing a few pictures on board the ship in a post later this week!

  • Living on a Budget: Groceries $40 for 4

    Now that I completed 9 weeks of my No Grocery Shopping challenge I want to share what is next on my agenda as far as grocery shopping is concerned.  I would LOVE to live off my pantry and freezer for the entire year, however, it is getting lower and I need to start shopping for some additional items.  I learned a lot from the recent challenge and want to keep my family fed while staying within our budget.

    Explanation: For the first time ever I am going on a strictly cash system for our groceries.  It is my desire to spend no more than $40 per week for my family of 4.  I am sticking to just grocery and food related items at this time since I have a separate budget for household, health & beauty.  If I find that I still have extra consistently I may decide to roll the other items into this as well.  As an additional bonus if I have more than a half of week of “extra” money remaining at the end of the month I want to contribute that money towards my Creative Cash. Although I know I will have days and weeks with hiccups like with any challenge it is my desire to be more accountable with what I have been given.  I perceive this budget change to have many benefits over the past systems I have used for example it will allow me the opportunity to buy items on sale but not over do it plus makes me more responsible with the money we have been given, and helps control the spontaneous purchases.  Only time will tell how well it works for our family.

    Every family is different so you need to decide what is best for your specific family and situation.  I am starting this endeavor after several months of thought and prayer regarding our family finances.  On a side note I do want to let you know that just because the title says Living on a Budget:  Groceries $40 for 4 that does not mean we will never host guests in our home or take a meal to someone in need.  Our guests and meal deliveries throughout the month are also included in this budget so the actual number will vary from month to month regarding how many people we feed but for simplicity sake it is Groceries $40 for 4 due to our family size and budgeting.

    I hope to give you regular updates on this budget section so you can celebrate the good weeks with me and thump me on the bad weeks!  As always you are welcomed to join the journey with me.  I would love to hear your story and how you are doing too.  I hope by taking the extra time to watch my grocery spending it will allow us to feed our family, enjoy life, and yet stay on track with our budget.

    Living on a Budget is a series of ways our family uses a budget to help keep us accountable with our finances.  Life doesn’t always go as planned.  We have used some of the ideas I will be sharing for years while others are ones we are just starting to implement as we continue finding ways to be creative and have fun with what we have been given.  Having a plan in place allows us the freedom to be smart with what we have been given, get more creative when it is a tight (week, month, year or a season) and when necessary live a much more simplified life.  A budget helps us stay on track so we have more opportunities to enjoy the many blessings we have been given as well as share what we have with others.  There is so much more to life than having all the stuff.  We may not have the newest or greatest items in our house, we drive used cars, and wear hand-me-down clothing…..however, if our family is taken care of and have love for each other and others we have more than all the riches in the world.

  • Life Simplified: No Grocery Shopping (Recipes)

    I am now wrapping up week number 5 in my No Grocery Shopping challenge!  It has been a fun adventure for our family as we continue to find ways to make the food in our fridge and pantry stretch!  Some of the recipes over the last few weeks have been a huge hit in our family for years while others were different.  We are always looking for ways to create healthy meals that everyone enjoys without wasting the food we have in our home.

    For those who have been emailing me about what we’ve been eating here are a few of our low budget main dish recipes:

    Macaroni & Cheese Casserole

    I came up with this recipe a couple years ago when I was trying to use up some leftovers in the fridge.  It has since become a favorite at our house.  The neat part about this recipe is that it can be easily altered based on the ingredients you have in your refrigerator.  We usually have a stock pile of Wacky Mac because we use double coupons at Ingles, Bi-Lo, or Publix plus we get extra money back from Upromise eCoupons which makes most of our purchases of Wacky Mac free plus some overage.  Dairy products are regular staples in our house so it makes this recipe fairly easy to make anytime.

    Macaroni & Cheese Casserole

    The neat part about this recipe is that it can be easily altered based on the ingredients you have in your refrigerator. It is a simple recipe that is almost impossible to mess up.

    Equipment

    • 9x7 Pyrex Casserole dish

    Ingredients

    • 12 oz Wacky Mac Veggie Noodles (Any shape pasta can be used, but the girls love the mixed shapes and colors of Wacky Mac)
    • 1-2 cups Milk (depending on how rich you want it, powder milk works too or add a touch of sour cream to increase the richness)
    • 1 cup Velveeta Cheese (cubed)
    • 1 tbsp Butter or Margarine
    • 1 cup Shredded Cheese (I use up the partial bags in our fridge so it is usually Cheddar, Mozzarella, Parmesan, Colby, etc..)
    • 2-3 cups Water (You want 4 cups liquid, if you add more milk, reduce the water)
    • dash Salt, Pepper, and Garlic to taste

    Instructions

    • Preheat oven to 350 degrees.
    • Add all the ingredients above except the water to a casserole dish.
    • The water will be different based on what you add to your casserole.  Add enough water to cover the noodles and stir everything together.
    • Bake uncovered at 350 degrees.  After 15 minutes of baking stir the casserole than continue baking for an additional 45 minutes.  The top of the casserole will be crunchy (everyone’s favorite part) but should not burn.

    Notes

    I have also been known to cut of cheese slices or put in a couple spoons of cottage cheese.  It really is a “use up the leftovers” type of Marconi & Cheese Casserole!  If you want you can add a cup of fresh or canned tomatoes that tastes great too.

    Chicken Pot Pie

    After several days of cooking we will often use the meat and vegetable leftovers in the fridge to make a Pot Pie.  Our favorite is the Chicken Pot Pie, but we have made several variations of Beef and Ham Pot Pies as well.  You can often get Store Brand Pie Crusts on sale or clearance for a great price if you them on hand use those otherwise the recipe below includes how to make your own pie crust with a few basic ingredients.

    Chicken Pot Pie

    A family favorite, chicken pot pie is a simple way to use up the remaining chicken that doesn't taste like a "leftovers" meal.

    Equipment

    • 9 inch pie pan

    Ingredients

    Pie Crust

    • 2 1/4 cups All Purpose Flour
    • 3/4 cups Crisco Shortening
    • 1 tssp Salt
    • 5 tbsp Water (cold)

    Filling

    • 1 to 2 cups Cooked Chicken (use leftover or canned Chicken)
    • 1 to 2 cups Cooked Vegetables (use leftover or canned Veggies)
    • 1 can Cream of Chicken Soup

    Instructions

    • Preheat oven to 350 degrees.
    • Mix together the ingredients for the crust until the dough is formed, split the dough in half.
    • Roll out half of the pie crust (add more flour if necessary).  Place half of the pie crust in the bottom of a 8 or 9 inch pie pan.
    • Stir together the Chicken Pot Pie filling ingredients.  Add the filling to the pie pan.
    • Top with remaining pie crust.  Roll the edges of the bottom and top crust together.  Cut a few slices in the top of the pot pie, (I usually will do a smile face or Christmas Tree or heart just for fun.  The girls are always looking to see the design on the the top prior to eating it.) 
    • Bake at 350 degrees for 1 hour.  Check halfway through and if the crust is getting too dark put a piece of foil over the top to keep it from burning.

    Pasta Night

    We will often have a “Pasta” night which is a quick and easy meal that our family enjoys. It is one of our “meatless” meals.   Many times Pasta nights consists of cooking:

    Poor Man's Pasta

    Don't let the name fool you. This is a simple staple that is quick and easy to make, yet still a comforting favorite.

    Ingredients

    • 4 cups Elbow Noodles
    • 1/2 tbsp Butter or Margarine
    • Grated Parmesan Cheese (aka. "Shaky Cheese")

    Instructions

    • Cook the noodles, drain and add the butter.  Sprinkle Shaky Cheese over your noodles and enjoy.

    Notes

    I add veggies and fruit to round out the meal.   It is quick, simple, and inexpensive. 

    Spinach Chicken Casserole

    This is another one of those quick recipes I threw together to use up some extra chicken we had in the fridge that was a hit with the family.

    Spinach Chicken Casserole

    This is a quick "throw together" meal that tastes great and feels like it should have taken more time.

    Ingredients

    • 2 to 3 cups Cubed Chicken (or you can use 2 to 3 frozen whole Chicken Breasts)
    • 1 can Spinach
    • 1 can Cream of Mushroom Soup
    • 4 oz Sliced Mushrooms (Optional: Canned works best)
    • 2 slices Provolone or Mozzarella Cheese
    • 2 cups Rice (uncooked)
    • 2 to 4 tbsp Water

    Instructions

    • Preheat oven to 350 degrees.
    • Pour the 2 cups of uncooked rice and water if necessary into a casserole dish.  Add the Chicken on top of the rice.
    • Mix together the Spinach and Cream of Mushroom then add it on top of the Chicken.
    • Spread the sliced mushrooms over the spinach mixture.
    • Bake uncovered at 350 degrees for 1 hour.
    • Add the cheese on top 10 to 15 minutes before the casserole is done.

    Veggie Beef Soup is another one we put together with items we have on hand.

    Along with the main meals we have a fruit and vegetable.  We still have chicken and beef weekly as well as fish every couple of weeks to make sure everyone is getting the nutritional meals they need.

  • Life Simplified: No Grocery Shopping (Meals)

    A couple questions we have been asked several times over the last month regarding my No Grocery Shopping challenge are – What have we been eating?  Do we have any recipes?  I am thrilled that we were able extend this challenge into February!   The quick answer is the meals have been “simple”.   Thankfully my family does not have any food allergies so we can be a little more flexible on what we eat.

    Here are a few ways we made our pantry stretch:

    • Always Eat Leftovers
    • Keep it Simple
    • Make Meals with Few Ingredients
    • Cook 1 Main Meal a Day
    • Cut back on Snacks
    • Make Meatless Meals

    On typical day we eat toast, cereal, eggs,  oatmeal or something we have on hand for breakfast.  The girls have lunch at school so they are covered for that meal.  Jake and I eat left overs for lunch (the left overs are usually from dinner the night before).  For dinner I fix a simple, few ingredients main dish to feed our family of four then add fruits, veggies and other sides to compliment the main dish.

    The first place I noticed a dip in the pantry was with the snacks.  When the kids get home form school they are HUNGRY (they eat their school lunch at 10:30 AM) and are always ready for a snack.  If it has been a busy day for me a lot of times they will grab an item from our “snack basket” on the kitchen counter which contains items such as granola bars, pretzels, crackers, etc…. We have noticed a dip in our dairy products too.  The girls will often have a cheese stick or yogurt for a snack after school so those have been being utilized.  Another snack they enjoy after school is a half of peanut butter & jelly sandwich or peanut butter with honey and veggies which gives them an extra boost of protein.

    One of the neat parts about doing this challenge is I have started noticing trends in our family.  I have seen what we eat more of as well as the items that get left behind more frequently.  It is important to me that we all continue to get healthy meals and snacks, however, I want to eliminate wastefulness.

    Along with the main meals we have a fruit and vegetable.  We still have chicken and beef weekly as well as fish every couple of weeks.  I will be adding the recipes for these items in the next day or two.  It is our plan to continue this challenge yet another week!
