    Snowman Pizza

    Cool days, Christmas approaching quickly, and pizza just seem to go together really well.  During the Holidays the girls always hope for snow.  I can only remember one Christmas since my time in South Carolina where it actually snowed on Christmas day so that’s a rare treat!

    The nice part about snowman pizza is you don’t actually need snow to make it!  We made homemade pizza and decorated it.  The girls chose black olives for his mouth, a cheese wedge for his nose, pepperoni (with black olives) for the eyes, and two slices of ham for the eyebrows.

    You can use your favorite pizza recipe and make any snowman variation you want.  If you are looking for a pizza recipe here is one of our favorites from Money Saving Mom.  You can get really creative and make three separate pizzas and put them together to make a whole snowman (instead of just the head).  🙂

    Freezer-Friendly Homemade Pizza Dough

    • 2 cups warm water (105 to 115 degrees F.)
    • 2 Tablespoons active dry yeast
    • 2 teaspoons sugar
    • 2 teaspoons salt
    • 4 Tablespoons oil (vegetable, Canola, or olive oil)
    • 5 cups flour (can use all whole-wheat, half white/half whole-wheat, or all white)

    Pour the warm water into a bowl and sprinkle the yeast over it. Stir to dissolve.

    Add the remaining ingredients and mix.

    Dump onto a floured surface and knead dough for two to five minutes until smooth and no longer sticky.

    To freeze: Cut lump of dough in half and place each half in an airtight freezer bag. Freeze for up to 4-6 weeks.

    To bake: Place frozen dough in a greased bowl and thaw at room temperature for at least 3-4 hours. Roll out and shape onto a greased pizza pan.

    Add pizza toppings of your choice. Bake at 500 degrees for around 10 minutes (until the crust looks crispy and lightly browned).

    If you don’t want to mess with freezing the dough, take the kneaded dough and roll out and shape onto a greased pizza pan. Add pizza toppings and bake as directed above.

  • Kids in the Kitchen: Colorful Gingerbread Cookies

    The girls love helping out in the kitchen.  At some point over the Christmas Holidays we try to make cookies.  The girls really enjoy decorating the cookies.  We have done a variety of different cookies from sugar to gingerbread and more.

    We typically turn on some Christmas music, whip up a batch of cookies, and play a game or read a book while the first batch is cooking.  Once the first batch has cooled enough and others are baking in the oven we start decorating.  As you can see from the pictures we used a couple varieties of frosting and decorations.  The girls decorate them however they want and as many as they want (they stick to the decorating until the very last cookie is done).

    It has been really neat seeing their skills improve over the past few years.  You can actually tell what the shapes of most cookies are after they are done decorating nowadays.  Plus, they have learned not to “lick” the frosting or their fingers during the whole process, ha!  🙂

    Starting to fill the tray with colorful Gingerbread cookies.  I especially like the Betty Crocker writable frosting because their easy to use for kids, only a little bit comes out, and you can stack the cookies together once they have dried.

    Just looking at these make me smile!   Some as you can see from the tops of the Christmas trees broke in the decorating process.  Love seeing the girls creative juices get flowing.

    Next time I need to do better about taking pictures of the kids too.  I only have a couple of pictures of the girls just starting to make the cookies that didn’t really turn out.  Once we got into the cooking and decorating I got swept away with the fun that I didn’t pull the camera back out until all the cookies were done.  Hopefully, next time I will have more kid pictures to share.   • Family Recipe: Bierocks

    You can pack your bierocks with more meat less bread if you want! I usually do a mix of both (more bread and more meat) so people can choose what they want to eat. This one is a picture of a more bread.

    My Grandma taught me how to make this delicious recipe that is basically a dinner roll stuffed with hamburger, sauerkraut, and cheese called Bierocks (although the first half of the word is pronounced like the word “beer” it does not contain any actual beer).  Even though the combination sounds a little interesting it really tastes amazing!  I am not sure where the recipe actually originated from but I do have family from Czechoslovakia so maybe that area.  I remember as a kid helping my Grandma make this recipe and have great memories of spending time together talking while cooking for the harvest crew.

    Every once in awhile I like to make up a big batch of Bierocks so we can eat some right away and the rest I like to stick in the freezer to pull out on those busy days for a quick meal.  I have used a number of different bread recipes to make Bierocks and they all have turned out well.  Today I will share the latest bread version I made earlier this week using Money Saving Mom’s Freezer-Friendly Pizza Dough.  We have made this pizza dough so many times and love it, so we figured why not try using it to make Bierocks!

    Dinners ready…….Bierocks…..come and get it!

    Bierocks:

    • DOUGH
    • 2 cups warm water (105 to 115 degrees F.)
    • 2 Tablespoons active dry yeast
    • 2 teaspoons sugar
    • 2 teaspoons salt
    • 4 Tablespoons oil (vegetable, Canola, or olive oil)
    • 5 cups flour (can use all whole-wheat, half white/half whole-wheat, or all white)

    Pour the warm water into a bowl and sprinkle the yeast over it. Stir to dissolve.

    Add the remaining ingredients and mix.  Put onto a floured surface and knead dough for two to five minutes until smooth and no longer sticky.  Take the kneaded dough and roll out.  

    Note:  I used this recipe but split the dough into thirds, two of the pieces I wrapped and put in the freezer for future pizzas or other recipes and used the remaining third to make the Bierocks.  I love that I get the base to 3 meals out of 1 pizza dough mixture! 🙂

    • FILLING:
    • 2 pounds Ground Beef
    • 1/3 Onion (diced)
    • 2 teaspoons Salt
    • 1 teaspoon Pepper
    • 2 cans Sauerkraut
    • 1 cup shredded Cheddar Cheese (or mixed cheese)

    Brown beef with onion and seasoned with salt and pepper.  Drain any excess oil off the meat.  Mix the sauerkraut into the meat and cook on medium for 2 to 4 minutes until the sauerkraut is mixed well.

    Cut the dough 3 to 6 inch circles (depending on the size you want it to be).   Place 1 ice cream scoop (or 1/4 to 1/2 cup) of meat filling onto each circle.  Sprinkle about a teaspoon of cheese over the top of the meat.   Bring the four corners up over the filling and pinch together to seal on the bottom.  Repeat with remaining dough and filling. Place seam down on greased baking sheets.  Sprinkle the remaining cheese over the top of the bierocks.

    Bake at 350 degrees for 12 minutes or until the dough starts turning a golden brown color.  You can rub a little bit of butter over the  tops of the bierocks immediately after taking them out of the oven for additional flavor and color if you want.  Makes approximately 24 Bierocks

    You can eat these plain or (my favorite) with a touch of ketchup.  Any leftover Bierocks after eating them for dinner are wrapped individually and put in a freezer ziplock so we can easily pull one, two or more out at a time, stick them in the microwave (or toaster oven) and have a meal ready in minutes.

    Cheese sprinkled over the top of some of the Bierocks (we like the cheese inside and out but it is optional).  I made some with cheese and some without since we have a family member who cannot have dairy.

  • Recipe: Broccoli Rice Hot Dish

    I made a new recipe this past weekend from one of  Taste of Home’s “Guilt Free Cooking” Cookbooks and the entire family loved it.  I received thumbs up from everyone, several please make this again, and the kids even asked for seconds.  What was leftover of the casserole was eaten the next day so it didn’t go to waste either.  The best part is it was a “healthier” dish and was easy to make. I am not a huge egg person so I had a little hesitation in trying it because I didn’t want something that had a heavy egg flavor.  In the end I was super happy I tried it because I couldn’t even taste the eggs because it had so much flavor in the dish.  As I am trying to eat healthier and cook better food for my family (not that we don’t have a couple of pizza nights a month) I am looking for new, easy, inexpensive and tasty recipes to try.  I bought this cookbook when it was on clearance for $2.50 before Christmas and this weekend as I was sitting on the front porch glider leafing through it while watching the kids play in the yard this recipe jump off the page begging for me to try it out, glad I did too.  It was a hit with the family and it included ingredients that I can easily have on hand.  I used it as our main meal but since it is meatless you could have it as a side as well.

    Broccoli Rice Hot Dish

    • 2 cups hot cooked Rice
    • 3/4 cup shredded reduced fat Cheddar Cheese
    • 1/2 cup Egg Substitute OR (1 egg)
    • 3/4 teaspoon Garlic Salt

    Filling

    • 1 pkg (10 oz) frozen chopped Broccoli, thawed
    • 4 oz chopped fresh Mushrooms
    • 1/2 cup chopped sweet red pepper (we choose to not add the red pepper)
    • 1/2 medium Onion, chopped
    • 1 cup Egg Substitute OR (2 Eggs)
    • 1/2 cup Fat Free Milk
    • 1/2 teaspoon Onion Salt
    • 1/2 teaspoon Pepper
    • 1 cup (4 oz) shredded reduced fat Cheddar Cheese

    In a large bowl, combine the rice, cheese, egg, and garlic salt.  Press firmly into a 2 quart baking dish coated with nonstick cooking spray.  Bake at 375 degrees for 10 minutes.

    Meanwhile, place the broccoli, mushrooms, red pepper, onion in a steamer basket over 1 inch of boiling water in a saucepan.  Bring to a boil, cover and steam for 5 minutes or until crisp-tender.

    In a large bowl, combine eggs, milk, onion salt, and pepper; stir in vegetables.  Pour over crust.  Sprinkle with cheese.  Bake, uncovered, at 375 for 25 to 30 minutes or until a knife inserted near the center comes out clean.

  • Book: Better Homes and Gardens

    Grandma Willa gave me this cook book –  Better Homes and Gardens New Cook Book as a wedding gift and we use it all the time.  Grandma Willa is one of the most amazing cooks I know.  I am thankful for the times we had cooking together.  Grandma is still cooking a lot of meals for family and friends but due to distance I am not able to participate in her cooking adventures as often as I like.  Below is the note she put in my cook book, which I treasure even more then the cook book itself:

    My Aunt Zell Body, gave me a BETTER HOMES AND GARDENS cook book as a Wedding gift.  It was my first and faithful cook book, and I found it to have many helpful hints as well as great recipes.

    I and the girls wore one out, and almost the second one over the many years.  If I couldn’t find something, needed to substitute, know cuts of meat etc….. I’d go to old faithful BETTER HOMES AND GARDENS.  I hope this new version is as good or better than my old one was.

  • You know I do a lot of smiley faces for the girls when…..

    The girls start coming up with food smiles on their own.  I was baking the Beary Cute Cookies and asked Brina to help unwrap and sort the candies.  This is the plate of goodies she handed to me.  Yes, it made me smile.  I am thrilled to see her willingness to participate in the kitchen and love  the creative side coming out as well.  Thankful for some extra cooking time with my sweet Brina.  Everyone has been enjoying the goodies that we baked together this weekend.  Hope you are having a wonderful time celebrating the last day of 2010 too!!!!

  • Recipe: Beary Cute Cookies

    We were not able to make these on our Christmas Baking Day, however, the girls were excited to do them so we decided it would be a neat recipe to do with the girls.   I have had their recipe for a long time, you can either use this Sugar Cookie recipe or following the one below.  The basic idea is the same and the bear shape is a huge hit with adults and kids alike.  The following recipe is from Quick Cooking.

    Beary Cute Cookies

    • 3/4 cup Shortening
    • 1/2 Sugar
    • 1/2 cup packed Brown Sugar
    • 1 Egg
    • 1 teaspoon Vanilla Extract
    • 2 cups All-Purpose Flour
    • 1 teaspoon Salt
    • 1/2 teaspoon Baking Soda
    • Additional Sugar
    • 30 miniature Chocolate Kisses
    • 60 miniature M&M Baking Bits

    1. Preheat oven to 375° F.

    2.  In a mixing bowl, cream shortening and sugars.  Beat in egg and vanilla; mix well.  Combine the flour, salt, and baking soda; gradually add to creamed mixture and mix well (dough will be crumbly).  Set aside 1/2 cup of dough for the ears.  Shape remaining dough into 1 inch balls; roll in additional sugar.

    3.  Place 3 inches apart on ungreased baking sheets.  Flatten to about 1/2 inch thickness.  Roll reserved dough into 1/2 inch balls; roll in sugar.  Place two smaller balls about 1 inch apart touching each flattened ball (do not flatten smaller balls).

    4.  Bake for 10 to 12 minutes or until set and edges are lightly browned.  Remove from oven, immediately press one kiss and two baking bits into each cookie for nose and eyes.  Cool 5 minutes before removing from pans to wire racks to cool completely.  Makes about 30 cookies.

  • Recipe: Orange Dreamsicle Cookies

    Our family enjoys baking special goodies for family, friends and neighbors.  The Orange Dreamsicle Cookies are from The Ultimate Cookie Kit by Scholastic.  It is a great cookbook for kids and comes with a rolling pin, wooden spoon, measuring spoons, cookie cutters, frosting bag, and tips.  If you like orange creamsicles you’ll enjoy these cookies.

    Orange Dreamsicle Cookies

    • 1/2 cup Orange Flavored Powdered Drink Mix
    • 3/4 cup White Sugar
    • 1 1/2 cups Vanilla Baking Chips
    • 1 3/4 cups All-Purpose Flour
    • 1/2 teaspoon Baking Soda
    • 1/2 teaspoon Baking Powder
    • 1/2 cup Butter
    • 1 Egg
    • 1 teaspoon Vanilla Extract

    1.  Preheat oven to 350° F.

    2.  Combine all the dry ingredients in a large mixing bowl.  In a separate bowl, mix the butter, egg, and vanilla.  Pour into the dry ingredients and blend completely.

    3.  Roll heaping tablespoons into balls.  Place 2 inches a part on a lightly greased cookie sheet.

    4.  Bake the cookies for 12 to 14 minutes or until tops are very lightly browned.  Cool for 5 minutes on the cookie sheet then remove to a wire rack to cool completely.

    Makes about 24 cookies.

  • Book: “Cooking for Kids, Kids’ Party Food”

    My Mom gave me this book for Christmas 2005 Favorite Brand Name: Cooking for Kids, Kids’ Party Food.  The girls were still small then but it has been a great book that all of us have enjoyed over the past few years.  We love looking through it and have tried many of the recipes; several have become family favorites.  It has creative recipes that the girls love helping me with and some they can do almost on their own with a little adult supervision.  Once they start reading it will be even easier for them.  There are are pictures along with creative ideas for cooking and parties. If you are looking for a great gift for a young child or Mom and they like to cook this may be an awesome book for them.

  • Recipe: Cheerios Christmas Trees

    We made these little Christmas Trees on our Christmas Baking Day.  These were super fun but a little more difficult than I first anticipated.  The trees were a little hard to make into the correct shapes and it took a little extra time to decorate.  I had to keep reforming the trees but they did end up pretty neat once we figured out what we were suppose to do.  I don’t think they looked as amazing as the ones from Betty Crocker but they looked cute and the kids thought they tasted great.

    Cheerios Christmas Trees

    • 6 cups Honey Nut Cheerios Cereal
    • 6 tablespoons Butter or Margarine
    • 4 1/2 cups Miniature Marshmallows
    • Green Food coloring
    • Red Cinnamon Candies, Decorative Pearls, Sprinkles, Icing, and String Licorice

    1. Line a cookie sheet with waxed paper. (May want to lightly grease because our stuck a little when pulling them off)

    2.  Pour the cereal into a 4 quart bowl.  Set the bowl aside,

    3.  Place the butter and marshmallows in a 3 quart saucepan (I used the microwave instead).  Heat over low heat, stirring constantly until mixture is smooth.  Remove the saucepan from the heat.

    4.  Stir in the food coloring until mixture is evenly colored.  Pour the marshmallow mixture over the cereal and stir until the cereal is evenly coated.

    5.  Lightly spray your hands with cooking spray.  For each tree, shape about 1/4 cup of the cereal mixture into a Christmas tree shape on the cookie sheet.

    6.  Press the candies into the trees to decorate.  Refrigerate until firm, about 1 hour.  Store the trees in a a loosely covered container.

    Makes about 18 trees.  I did the whole box of cereal which was about 1 1/2 of the recipe.  Our recipe made about 25 trees.  Thankfully I had someone around to keep spraying my hands with spray because it was really sticky and I had to keep reforming the trees.  They ended up looking pretty cute and seemed to be holding up okay but would probably be better if you ate it the same day.  The Honey Nut Cheerios flavor really comes out in this recipe so if you like the cereal you’ll probably enjoy this too.  You could do with any flavor of Cheerios, I think next time we’ll try the Multi-Grain Cheerios for different flavor and color.  It was fun to do something a little more unique!
