    Chocolate Fudge No Bake Cookies

A perfect combination of creamy chocolate and peanut butter.  These Chocolate Fudge No Bake Cookies are absolutely delicious when cooled or frozen.  I would take one of these over a Popsicle any hot day!  These are very similar to my No Bake Cookies with one minor change, which actually happen by mistake!

You get these creamy Chocolate Fudge No Bake Cookies when you cut back the boiling time of regular No Bake Cookie.  These creamy fudge like cookies that are amazing in the freezer or refrigerator.  While they don’t have to be refrigerated or frozen it is recommended.  The only “problem” with this cookie is that it is not stackable.  If you try to stack these cookies together you will end up with one giant cookie (yes, it happened at our house) which means you have to take a slice out of the giant whenever you want to eat a piece.  By not boiling it the cookie doesn’t set up, but gives you a great alternative to the traditional No Bake Cookies.

Chocolate Fudge No Bake Cookies Recipe:

    • 2 cups Sugar
    • 4 tablespoon Cocoa
    • 1 stick Butter
    • 1/2 cup Milk
    • 1 cup Peanut Butter
    • 1 tablespoon Vanilla
    • 3 cups Oatmeal

    1.  In a heavy saucepan bring the sugar, cocoa, butter, and milk to a boil.

    2.  Stir in peanut butter, vanilla, and oatmeal.

    3. Lay out the wax paper, drop mixture by the tablespoonful and allow the cookies to cool.

    4.  Once the cookies have cooled place in the freezer or refrigerator using wax paper to separate the layers.

  • Family Recipe: Grandma’s Six in One Oatmeal Cookies

Grandma Willa makes a delicious oatmeal cookie.  She calls it her Six in One Oatmeal Cookies because they are loaded with amazing ingredients and you can make 6 different types of cookies (or more) with the base cookie mix.   It has been nice having cookies to take with us on our various road trips.  The girls have enjoyed the sweet snack and it has been neat sharing the recipes with others along the way (although not all of the cookies made it to each destination).

Six in One Oatmeal Cookie Recipe:

    • 1 cup Shortening
    • 1 cup Brown Sugar
    • 1 cup Granulated Sugar
    • 2 Eggs
    • 1 teaspoon Vanilla
    • 1 teaspoon Baking Soda
    • 1/2 teaspoon Salt
    • 1 1/2 cup sifted Flour
    • 3 cups Quick Cooking Oats

Add in 1 or more of the Following Ingredient Options to the Cookies

    • 1/2 cup chopped Nuts
    • 1 package Semi-Sweet Chocolate Chips
    • 2 tablespoons grated Orange Peel
    • 1 cup Raisins
    • 1 cup cut up Gum Drops
    • 1 cup cut up Dates

Cream shortening and sugar thoroughly, add eggs and vanilla, beat well.  Sift together flour salt and soda.  Add to creamed mixture and blend well.  Add oats and one or two of the choices above.  If desired divide dough into several portions adding something different to each one.  Form dough into small and drop from teaspoon onto an ungreased cookie sheet.  Bake at 35o for 15 minutes or until lightly brown.  Remove from cookie sheet and place on wire rack to cool.  For a special treat, try adding both nuts and chocolate pieces.  Or combine dates and orange peel.  For a crackly glaze dip balls of dough first into milk then in sugar prior to baking on cookie sheet, bake sugar side up.

More Ingredient Options you can add to the Cookies (these are variations we have tried in our family):

    • 1 cup M&M’s
    • 1 cup Cranberries
    • 1 cup Butterscotch Chips
    • 1 cup White Chocolate Chips
    • Add another one of your favorite cookie ingredients!

    Makes 6 dozen.

  • Recipe: No Bake Cookies

I always loved it when my Mom made No Bake Cookies when I was a kid.  It has been fun making these cookies with my girls now.  I had some oatmeal and peanut butter I needed to use up recently so I made these cookies for one of our recent road trips and for a friend who had a baby.   These cookies are delicious and inexpensive to make.  The most important step of this entire recipe is making sure that once the first set ingredients is boiling to allow them to boil for 1 minute, if you do not let it boil for 1 minute the cookies will be runny and not set up well.  These cookies are a perfect combination of chocolate and peanut butter.

    No Bake Cookies:

    • 2 cups Sugar
    • 4 tablespoon Cocoa
    • 1 stick Butter
    • 1/2 cup Milk
    • 1 cup Peanut Butter
    • 1 tablespoon Vanilla
    • 3 cups Oatmeal

In a heavy saucepan bring the sugar, cocoa, butter, and milk to a boil.  Let them boil for 1 minute.  Stir in peanut butter, vanilla, and oatmeal.  Lay out the wax paper, drop mixture by the teaspoonful and the cookies have cooled.  The cookies will harden as they cool.
