• What’s for Dinner: Our Weekly Menu Plan

    Grateful for a weekend together.  The kids were super excited to have some snow to play in this weekend too!   Thankful for a great time with the family.  With everything going on this week I want to keep our schedule as streamlined and simple as possible.  Here is our menu plan for the upcoming week:

    Our Weekly Menu Plan

    • Monday (Beef or Pasta Entree):  Crockpot Roast, Baked Potatoes
    • Tuesday (Seafood, Soup, Salad, or Sandwich Entree):  Tilapia, Steamed Asparagus
    • Wednesday (Chicken or Vegetarian Entree):   Chicken & Rice Casserole, Mixed Veggies
    • Thursday (Pork Entree or Kid‘s Night to Cook):  Pork Chops, Stuffing
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

    I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or pasta entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

    Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

    Thankful for a weekend with family and an opportunity to catch up on laundry as well as some other items around the house.  Our family celebrated Halloween over the weekend by carving pumpkins, eating a special meal, and hanging out together for a fun family night.  As we gear up for another busy week of school, work, appointments, and a multitude of other activities going on I want to keep the dinner menu easy and efficient for everyone.

    By the time we get home from work and school,  activities, do homework, pack lunches for the next day, prep for the next day, shower, and spend a little time together there is not much time for elaborate meals at home.  Thankfully we can have more fancy time consuming meals over the weekend when our schedule is a little bit more flexible.  As long as I prep the night before everything will be ready to go in the evening once the crew arrives home.  We try not to eat out very often and to make healthy meals at home, however, in order to do it we need to plan and prep ahead of time.  Grateful for my crockpot and other kitchen tools that assist in making home-cooked meals at home with the family possible even with a busy schedule.   Here is our menu plan for the upcoming week:

  • What Does Your Fortune Cookie Say?

    Our fortunes!

    Recently we had Chinese food and the following were our fortunes from the meal:

    • Jake – “You will be traveling to distant lands for business purposes” (He travels a lot of places for work!)
    • Bridgette – “You will travel to many exotic places in the next few years.” (I LOVE to travel.  I have already been to many amazing places over the years and I cannot wait to see more of the world.  Plus, sometimes I get to travel with Jake when he goes on work trips.  Maybe our fortunes were suppose to be together, sounds like more fun for me though! 🙂  Already looking forward to these exotic places we are going to together!)
    • Brina – “You have a flair for adding fanciful dimension to any story.” (She is definitely the more fancy of the two kids!)
    • Karlie – “You will soon be involved in many gatherings and parties.”  (I am curious about what she’s going to be doing!)

    It was a fun evening of relaxing with the family, eating Chinese food, and laughing about silly fortunes.  We have so much to be thankful for in our lives.  We are richly blessed and take many things for granted every day.  Let’s treasure the time with have with our friends, families, and those around us.  It is not impossible to run into people that you know even if you are across the world.  Our lives leave an imprint of each person we interact with whether it is only once or many times!  Make each moment count for good!

  • Recipes: Beef, Broccoli, and Bok Choy

    A main dish with beef and two green vegetables – broccoli and bok choy.  This dish is inspired from my Mom’s Beef & Broccoli recipe a few years ago.  We took her Beef and Broccoli recipe, adding more ingredients, and removed other ones.  The main dish includes both your meat and vegetables, yet the kids love it!  You can choose whatever meat you want to use with this recipe and whatever amount of broccoli.  We like this nice blend of meat and broccoli with a touch of bok choy for this recipe.

    Beef, Broccoli, and Bok Choy

    A main dish with beef and two green vegetables – broccoli and bok choy.  This dish is inspired from my Mom’s Beef & Broccoli recipe a few years ago.  The main dish includes both your meat and vegetables, yet the kids love it!

    Equipment

    • Wok

    Ingredients

    • 1 lb Lean Beef Steak Round, Sirloin, or Flank Steak work well
    • 1 head Fresh Broccoli
    • 1 head Fresh Bok Choy Small
    • 2 tbsp Low Sodium Soy Sauce
    • 1 clove Garlic, minced or pressed
    • 2 tbsp Olive Oil
    • 2 tbsp Water
    • 1 1/2 tbsp Corn Starch
    • 1/4 tsp Ground Ginger
    • 1 cup Beef Broth
    • 1 dash Red Pepper Flakes

    Instructions

    • Cut broccoli and bok choy into 1 inch pieces set aside.  Slice the beef along the grain into  1/2 inch wide strips.  In bowl mix beef, soy sauce and garlic.  Let marinate 10 minutes.  Mix together corn starch, ground ginger, dash of red pepper, and beef broth.
    • When wok is hot add 1 tablespoon of oil, add half of the meat mixture.  Stir fry until browned (about 2 to 3 minutes).  Repeat with second half of meat and 1 more tablespoon of oil. 
    • Stir in the broccoli for about 1 minute.   Add water cover and cook about 3 minutes. 
    • Add cooking sauce to meat and stir until the sauce has thickened.  Add the bok choy and cook for about another minute or until it starts to wilt.

    You can add in all kinds of other ingredients like onions, mushrooms, spinach, and more to your main dish.

    It was a rainy weekend, which was really good in some ways because we were able to tackle some more of the kids Science Fair projects.  I think we only have a couple little items to complete and it should be done, thankfully.  It has been a long process working with the kids on these projects.  They loved the experiments, but not so much the writing, journaling, putting everything together, etc… I am hoping that the last science project items will be completed early this week so I can get caught up on all the stuff around the house from these last three weeks crazy school items.  Here is our menu plan for the upcoming week:

    Everyone was able to get back into rhythm last week with work and school.  While it was a busy week we managed to squeeze in some fun activities too.  We took the girls to the Zoo for Member Night and went on Date Nights with the kids so that was fun.  On the weekend we worked for several hours on their Science Fair Projects (a new step for us).  This week will be another busy one so I am doing very simple and easy meals.  Also, we have leftover food that needs to be eaten up at the beginning of the week so we don’t waste it so the menu won’t be too exciting.   Here is our menu plan for the upcoming week:

    Our family spent last week in Orlando, Florida.  My husband had a work conference the first part of the week, the girls and I went along with him.  We had a blast exploring the area while Jake attended his work meetings.  The girls and I went to one of the Disney parks, Animal Kingdom as well the Boardwalk, Downtown Disney, Miniature Golf, swimming, and roaming around while Jake was in his conference.  We got pretty good at figuring out how to get around with the various transportation systems from the buses, boats, and monorails. We only saw Jake in the mornings while we were getting ready and at the end of the day as the girls were getting ready for bed.  He had long days at the conference, but it was nice to spend a little time with him each day.

    After Jake’s conference was out we spent the next 2 1/2 days exploring parks together as a family before heading home.  I am very thankful for a great opportunity to spend time together.  We were up by 6 am every morning and went strong until about midnight each day.  The girls were at the perfect age to carry their own backpacks and explore for a whole day.

    We ate breakfast at the hotel, packed sandwiches and snacks for our lunches out and about, and we made supper at the hotel once we arrived back later that night.  The girls would take their showers while we prepped dinner, prepped for the next day, and crashed in bed.  It was a great week and we saved a lot by bringing our own meals to make and eat.  We only purchased one meal the entire week and that was at Epcot.  Jake did have some of his meals covered while in the conference, but otherwise everything we ate was from the food we brought to eat.  We stuck mostly to our menu plan from last week, but we switched around the order based on how tired we were at the end of the day and the amount of prep required.  We are now back to our regular school and work schedule this week.  Here is our menu plan for the upcoming week:

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.
