    Cheesy Bacon Potato Bites

    I try to keep potatoes on hand for a variety of family recipes.  It is fun to try out some new recipes with the potatoes too.  The Cheesy Bacon Potato Bites is one we tried a few months ago and our family liked it so much we have added several variations to this recipe.  If we need to use up some potatoes or a simple side dish this is a good one for family meals.

    Part of this recipe is with regular dairy cheese and the another part using soy cheese (dairy free cheese).  If you have someone in your family that has a dairy allergy you could use this recipe to do the whole pan dairy free or part of it like we did for our family (depending on the intensity of the dairy reaction).  It is a simple recipe that you can alter to suit your family.

    Cheesy Baked Potatoes:

    • 4 Potatoes (we used red potatoes this time)
    • 2 tablespoons Olive Oil
    • 1 tablespoon Garlic Salt (we like Lawry’s)
    • 1/2 teaspoon Black Pepper
    • 1 cup Shredded Cheese (we used Colby Jack and the orange cheese the right of the picture is actually Soy Cheese)
    • 1/4 cup of Bacon Bits

    1.  Rinse the potatoes.

    2.  Slice the potatoes into 1/2 inch slices.

    3.  Preheat the oven to 400 degrees.

    4.  Spray the bottom of a 9×13 baking dish.

    5.  Place the potatoes in a single layer in your 9×13 dish.  Brush each potato with olive oil.

    6.  Sprinkle the tops of the potatoes with garlic salt and black pepper.  Bake at 400 degrees for 25 minutes.

    7.  Pull the potatoes out of the oven.  Add the cheese and bacon to the tops of the potatoes.  Bake for an additional 5 minutes.

     Cheese has been added and already melting because the potatoes are so hot!  Next comes a layer of bacon, five more minutes in the oven, and it’s ready!  As you can see from the picture you could make this a “dairy free” recipe if you use dairy free cheese such as soy.

  • Recipes: Bacon Wrapped Asparagus Bundles

     Bacon Wrapped Asparagus

    Our family enjoys fruits and vegetables.  We like our produce with breakfast, take it in our lunches, and have it at dinner too.  Asparagus is one we really like and we love finding new ways to cook it.  Whether it is baked or grilled these Bacon Wrapped Asparagus Bundles come out very tasty.  It is easy to assemble and the kids love eating this delicious vegetable.

    Bacon Wrapped Asparagus Bundles Recipe:

    • 1 Bundle of Fresh Asparagus
    • 12 oz package Bacon (we like the center cut with more meat)
    • Dash of Salt
    • Dash of Pepper
    • 1/4 cup Brown Sugar
    • 1 tablespoon Butter or Margarine, melted
    • Sesame Seeds, optional

    1. Preheat the oven to 400 degrees.

    2.  Rinse and trim the ends of the asparagus.  Remove any hard stems on the asparagus stalks too.  Generally, the smaller the asparagus stalk the better because it is more tender.

    3.  Divide your asparagus up into equal piles (3 to 8 stalks).  In these pictures we divided our asparagus up into 4 bundles (one for each family member).  We have done smaller bundles too.  Pick the number of bundles you want to do and divide it up as equal as possible.

    4.  Lay 1 asparagus bundle in the center of a slice of bacon.  Wrap the bacon around the asparagus bundle and place on a broiler pan.  Repeat this step until all your asparagus bundles are wrapped.  If you have extra bacon you can cook that on the pan beside the asparagus bundles if you want.

    5.  Sprinkle each bundle with a dash of salt and pepper.  Mix the brown sugar and melted butter or margarine together and pour over the asparagus bundles.  Top with sesame seeds.

    5.  Bake for about 20 to 25 minutes or until the bacon is cooked.*

    *GRILLINGYou can also place these Bacon Wrapped Asparagus Bundles on the grill at your next cookout!  Make sure not to put it too close to a really hot spot or open flame on the grill for a long period of time.  It will usually take less time on the grill to cook these bundles.  Once the asparagus looks like it is started to wilt a little and the bacon is cooked these will be done.

    Sometimes we make up a big tray of the Bacon Wrapped Asparagus Bundles because the kids love them re-heated as well.

  • Recipe: Beary Cute Cookies

    We were not able to make these on our Christmas Baking Day, however, the girls were excited to do them so we decided it would be a neat recipe to do with the girls.   I have had their recipe for a long time, you can either use this Sugar Cookie recipe or following the one below.  The basic idea is the same and the bear shape is a huge hit with adults and kids alike.  The following recipe is from Quick Cooking.

    Beary Cute Cookies

    • 3/4 cup Shortening
    • 1/2 Sugar
    • 1/2 cup packed Brown Sugar
    • 1 Egg
    • 1 teaspoon Vanilla Extract
    • 2 cups All-Purpose Flour
    • 1 teaspoon Salt
    • 1/2 teaspoon Baking Soda
    • Additional Sugar
    • 30 miniature Chocolate Kisses
    • 60 miniature M&M Baking Bits

    1. Preheat oven to 375° F.

    2.  In a mixing bowl, cream shortening and sugars.  Beat in egg and vanilla; mix well.  Combine the flour, salt, and baking soda; gradually add to creamed mixture and mix well (dough will be crumbly).  Set aside 1/2 cup of dough for the ears.  Shape remaining dough into 1 inch balls; roll in additional sugar.

    3.  Place 3 inches apart on ungreased baking sheets.  Flatten to about 1/2 inch thickness.  Roll reserved dough into 1/2 inch balls; roll in sugar.  Place two smaller balls about 1 inch apart touching each flattened ball (do not flatten smaller balls).

    4.  Bake for 10 to 12 minutes or until set and edges are lightly browned.  Remove from oven, immediately press one kiss and two baking bits into each cookie for nose and eyes.  Cool 5 minutes before removing from pans to wire racks to cool completely.  Makes about 30 cookies.

  • Recipe: Berry Shortbread Dreams

    I made these after our Christmas Baking Day for another event.  They are a super delicious treat for those looking for a fruity shortbread cookie to share this Holiday season.  I got this recipe originally from 2002 Taste of Home Annual Recipes and have done it several times with different flavors of jams, all of the ones I have tried have been awesome.  Chose a flavor that you enjoy for this recipe, we picked raspberry because it is one of our favorites.

    Berry Shortbread Dreams

    • 1 cup Butter, softened
    • 2/3 cup Sugar
    • 1/2 teaspoon Almond Extract
    • 2 cups All-Purpose Flour
    • 1/3 to 1/2 cup Seedless Raspberry Jam

    1.  In a mixing bowl, cream butter and sugar.  Beat in extract; gradually add flour until dough forms a ball.  Cover and refrigerate for 1 hour or until easy to handle.

    2.  Preheat oven to 350° F.

    3.  Roll into 1 inch balls.  Place 1 inch apart on ungreased baking sheets.  Using the end of a wooden spoon handle, make an indentation in the center.  Fill the center with jam.

    4.  Bake for 14 to 18 minutes or until edges are lightly browned.  Remove and cool on wire racks.  Spoon additional jam into the cookies if you want.

    GLAZE

    • 1 cup Confectioner’s Sugar
    • 2 to 3 teaspoons of Water
    • 1/2 teaspoon Almond Extract

    Mix ingredients and drizzle over cookies slightly cooled cookies.  This recipe makes about 40 cookies.

  • Recipe: Orange Dreamsicle Cookies

    Our family enjoys baking special goodies for family, friends and neighbors.  The Orange Dreamsicle Cookies are from The Ultimate Cookie Kit by Scholastic.  It is a great cookbook for kids and comes with a rolling pin, wooden spoon, measuring spoons, cookie cutters, frosting bag, and tips.  If you like orange creamsicles you’ll enjoy these cookies.

    Orange Dreamsicle Cookies

    • 1/2 cup Orange Flavored Powdered Drink Mix
    • 3/4 cup White Sugar
    • 1 1/2 cups Vanilla Baking Chips
    • 1 3/4 cups All-Purpose Flour
    • 1/2 teaspoon Baking Soda
    • 1/2 teaspoon Baking Powder
    • 1/2 cup Butter
    • 1 Egg
    • 1 teaspoon Vanilla Extract

    1.  Preheat oven to 350° F.

    2.  Combine all the dry ingredients in a large mixing bowl.  In a separate bowl, mix the butter, egg, and vanilla.  Pour into the dry ingredients and blend completely.

    3.  Roll heaping tablespoons into balls.  Place 2 inches a part on a lightly greased cookie sheet.

    4.  Bake the cookies for 12 to 14 minutes or until tops are very lightly browned.  Cool for 5 minutes on the cookie sheet then remove to a wire rack to cool completely.

    Makes about 24 cookies.

  • Recipe: Cheerios Christmas Trees

    We made these little Christmas Trees on our Christmas Baking Day.  These were super fun but a little more difficult than I first anticipated.  The trees were a little hard to make into the correct shapes and it took a little extra time to decorate.  I had to keep reforming the trees but they did end up pretty neat once we figured out what we were suppose to do.  I don’t think they looked as amazing as the ones from Betty Crocker but they looked cute and the kids thought they tasted great.

    Cheerios Christmas Trees

    • 6 cups Honey Nut Cheerios Cereal
    • 6 tablespoons Butter or Margarine
    • 4 1/2 cups Miniature Marshmallows
    • Green Food coloring
    • Red Cinnamon Candies, Decorative Pearls, Sprinkles, Icing, and String Licorice

    1. Line a cookie sheet with waxed paper. (May want to lightly grease because our stuck a little when pulling them off)

    2.  Pour the cereal into a 4 quart bowl.  Set the bowl aside,

    3.  Place the butter and marshmallows in a 3 quart saucepan (I used the microwave instead).  Heat over low heat, stirring constantly until mixture is smooth.  Remove the saucepan from the heat.

    4.  Stir in the food coloring until mixture is evenly colored.  Pour the marshmallow mixture over the cereal and stir until the cereal is evenly coated.

    5.  Lightly spray your hands with cooking spray.  For each tree, shape about 1/4 cup of the cereal mixture into a Christmas tree shape on the cookie sheet.

    6.  Press the candies into the trees to decorate.  Refrigerate until firm, about 1 hour.  Store the trees in a a loosely covered container.

    Makes about 18 trees.  I did the whole box of cereal which was about 1 1/2 of the recipe.  Our recipe made about 25 trees.  Thankfully I had someone around to keep spraying my hands with spray because it was really sticky and I had to keep reforming the trees.  They ended up looking pretty cute and seemed to be holding up okay but would probably be better if you ate it the same day.  The Honey Nut Cheerios flavor really comes out in this recipe so if you like the cereal you’ll probably enjoy this too.  You could do with any flavor of Cheerios, I think next time we’ll try the Multi-Grain Cheerios for different flavor and color.  It was fun to do something a little more unique!

  • Recipe: Sour Spiral Cookies

    Here was a fun recipe we made during our Christmas Baking Day on Saturday.  It was a good one to do in between recipes because several steps required some time in the refrigerator.  Although it does not take up a huge amount of room you’ll need space in your fridge and freezer to complete this recipe.  I doubled the batch so the cookies came out pretty big but they were a huge hit with everyone.  This was my favorite recipe that we made from Favorite Brand Name: Cooking for Kids, Kids’ Party Food on our Saturday baking day because it was unique and tasty.  I made my cookies with red and green spirals for the Christmas Holidays but you can do any two flavors of gelatin.  These are colorful, fun, and have a mix of sweet and sour all mixed into one delicious cookie.

    Sour Spiral Cookies

    • 1 package (18 ounces) refrigerated Sugar Cookie Dough (Here is our recipe for Sugar Cookie Dough if you need one)
    • 2 tablespoons plus 1 1/2 teaspoons Lime flavored Gelatin (original recipe called for Blue Raspberry, I did Lime for the Christmas Holiday, however you can do any flavor)
    • 1/4 teaspoon Gel Green Food Coloring (match the color your gelatin mixture)
    • 2 tablespoons plus 1 1/2 teaspoons Strawberry flavored Gelatin
    • 1/4 teaspoon Gel Red Food Coloring
    • All Purpose Flour

    1. Remove dough from wrapper; divide in half.  Reserve 1 dough half.  Place remaining dough half in large bowl.  Let dough stand about 10 minutes.  Add lime flavored gelatin and green food coloring to dough in bowl; beat at medium speed until well blended and evenly colored.  Wrap dough in plastic wrap and refrigerate for 1 hour.

    2.  Combine reserved dough half, strawberry flavored gelatin and red food coloring in large bowl.  Beat at medium speed until well blended and evenly colored.  Wrap dough in plastic wrap; refrigerate 1 hour.

    3.  Roll green dough to a 10×6 rectangle on lightly floured waxed paper using lightly floured rolling pin.  Repeat with red dough.  Refrigerate both dough rectangles 1o minutes.

    4.  Place green dough rectangle over red dough.  Remove waxed paper from green dough.  Starting at 10 inch side, roll up jelly-roll fashion into tight log. Wrap in plastic; freeze 30 minutes.

    5.  Preheat oven to 350° F.  Grease cookie sheets.  Cut log into 1/4 inch slices.  Place on prepared cookie sheets.  Bake 8 to 10 minutes or until cookies are firm.  (Do not let cookies brown.) Cool on cookie sheets 2 to 3 minutes.  Remove to wire racks; cool completely.

    Makes about 2 1/2 dozen cookies.  I doubled my batch of cookies since we were sharing them with family, friends, and neighbors.  It is a great cookie to make while you are doing other baking since it has time in the fridge and freezer.  The girls helped me make this one a little bit but with all the steps they will need to be older before doing this one on their own.  These cookies were a hit with my kids.

  • Gift Giving: Christmas Baking Day

    I spent several hours on Saturday, December 11th doing a Christmas Baking Day with Ashley from Reflecting on the Simple Things in Life making treats to give to family, friends, and neighbors.  We started about 3:30 PM and were finished around 10:30 PM that night with another hour added for cleaning and packing up the goodies.  Ashley was kind enough to open her home up so we could get the baking done. The house smelled amazing with all the delicious treats we made throughout the evening.

    Ashley was organized with several tables full of specific items which helped us keep the clutter off the counter tops and island as we were each working on recipes:

    • Baking Ingredients Table for the recipes we had a picked out
    • Cooking Pans, Bowls, and Utensil Table for easy access to items we need
    • Cooling and Packaging Goodies Table
    • Finished Products Table which was full of treats by the end of the evening

    We would pick out ingredients and utensils as we needed them from the necessary tables.  The goodies got bagged in between baking items.  It was a very efficient system and we were able to accomplish a lot in a relatively short amount of time plus we were able to talk, laugh and enjoy each others company in the kitchen.

    The kids popped in and out, occasionally helping with recipes that intrigued them.  Our husbands had fun hanging out too.  They were kind enough to pick up the pizza for us and an extra bag of powder (or confectioner’s) sugar for us at the grocery store.  Thankfully that was the only ingredient that we really seemed to go through more than expected.  We were both prepared with the ingredients and items for the day which allowed the event to go smoothly.

    Honestly, despite it being really busy and standing on our feet for a long period of time everything went pretty smoothly. Only one minor casualty, my small Christmas Tree cookie cutter managed to work it’s way down to the garbage disposal.  It made a loud noise when it was turned on so nothing was broken and the tree was able to be bent back into a tree like shape.  The only thing that would have made it a little more efficient would be to have two ovens but since neither of us have that we were able to work everything out fairly well.  Her oven was probably ready for a break by the end of the evening, but I am sure it felt very loved.

    It was our desire to accomplish as much as we could in the time table allotted and we did it.  We had up to 17 recipes prepared to make for the event.  We were able to complete 12 of the recipes which is pretty amazing especially since majority of the items were baking ones and we had only one oven. I will posting the recipes for the ones that we accomplished throughout our baking adventure throughout this week.

    It has been a busy week!  Tomorrow I am very excited to have the opportunity to get together with Ashley from Reflecting on the Simple Things in Life and cook up some yummy recipes to share with friends, family and neighbors.  It should be a lot of fun and I am sure we’ll have some funny stories to tell and pictures to share.   I have all my recipes marked and a table full of ingredients to pack.  The girls are licking their lips thinking about all the amazing goodies that are going to be created tomorrow.  They have been asking for two weeks if the “baking” day was here yet.

    Here is what we are looking forward to baking tomorrow:

    Several of the recipes I have never tried, however, they all appear to be fairly easy to make.  It will be interesting to see what we can accomplish in a few hours and if we have any hiccups along the way. No matter what happens it will be a day full of fun and memories.  Since the oven will be full of baking goodies we decided to give ourselves a break from cooking a meal for everyone and will be ordering pizza for dinner.

    While we are busy in the kitchen cooking the men will be helping entertain the kids, enjoying some time gaming together among other tasks I am sure they will be delegated to do.  They don’t get together as often now with all the busy family schedules so they are looking forward to some fun time too.   The kids are really excited about having some time to play together while we cook.  Although I have been told from my girls that they want to taste every recipe to make sure it is good before we give it to anyone else.   So now I am off to pack up the ingredients, sprinkles and all, so we can eat dinner at the table tonight.  I look forward to sharing our adventures with you next week!
