• Intentional Living: Weekly Goals

    There is so much to be thankful for in my life.  These last couple of months have been challenging for me, but my family and friends have been a huge source of encouragement with their help and prayers.  I continue to heal, but seem to be making progress slowly in the right direction which is great.

    I was able to do more activities this week as well as celebrate another birthday.  Praying that this new year is full of great fun!  There are still items I was not able to complete on my ever growing list, but at least I am moving forward.

    With this week being Thanksgiving it will be a little different for me.  I will plan on spending more quality time with my family.  It will be week of celebrating various events with my extended family, including Thanksgiving and my brother’s wedding, so I am very excited!

    3. Do at least one “Make 1 & Freeze 1″ Meal Prep (make a main dish to eat that day and one to freeze for later) – we had appointments / activities during the days AND every night after school this week so I was not able to get it done this week
    4. Clean House (Focus – Bathrooms) – got started….
    5. Organize Chaos (Focus – Storage Room) – going to have to put this one on hold for a week
    6. Yard Cleanup (Focus – Pool taken down and put away) – it was a rainy weekend and needed my hubby’s help on this one
    7. Pet Care (Focus – Refill Dog & Goat Food Bin)

    1. Work on ideas for upcoming blog posts
    2. Respond to Inquiry – Business Relation Emails – got some progress made, but need to do more soon
    3. Keep up with the day to day items that need my attention – it was a wild week with extra activities that took priority
    4. Work completed for clients – got a good bit done, but need to put in some more time

    I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

    Why Share My Goals?

    • To keep me accountable
    • To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
    • To have my goals consistently written down so I can gauge progress more accurately
    • Create healthy habits in my life
    • To encourage you to share your goals with me as you continue to grown and learn

  • Intentional Living: Weekly Goals

    It was a little better this week.  Still healing, but continue to have pain, numbness, and my stomach hasn’t reset itself yet.  Had another doctors appointment and hoping to have a better report soon.  I was able to get up and move around more this week, but still haven’t been able to get to all of the items on my lists.  At least some progress is being made.

  • Intentional Living: Weekly Goals

    It was a challenging week and it didn’t go exactly as I planned.  Early in the week I had to go into the hospital for an epidural steroid shot for the herniated disc in my neck that has been giving me problems.  I happen to be one of those “rare” people who reacted uniquely to the epidural steroid shot with nausea and vomiting.  Thankfully, we got that under control and now just waiting for about two plus weeks to see if this shot worked.  Although, the doctor did mention that it at times takes more than one shot to get the body to repair the disc, but it is better then the more evasive solution of surgery that would remove the disc and fuse the bones together with metal plates.  Needless to say I spent more time recovering this week than I initially planned.  I did get some things accomplished and praying for a much better week coming up even if it means trying to tackle the same items that were on my list last week!

    2. Weekly Dinner Menu planned out for the week – dinner was planned but do to Doctors orders we could not eat what I had on the menu, my husband was super sweet and pitched in to make our family meals.  Plus my sister-in-law delivered a meal one night this past week too.  Thankful for family!

  • Intentional Living: Weekly Goals

    Last week was busy week full of many extra appointments that were added into the schedule, some of them last minute, like doctor’s appointments.  The hot water heater decided to pick this week to stop working too.  Thankfully, it stopped on an evening when Jake was home, not traveling for work.  Jake and my brother Lee were able to get a new one back up and working in one evening!

    I was finally able to get an MRI and figure out specifically what is going on to cause all the pain and numbness.  It has been over three weeks since I have been able to sleep in my own bed, the recliner has been the only comfortable spot to sleep lately!  The doctors have found out that I have a severely herniated disc in my neck which is also clamping down on nerves causing the shooting pains down my neck, back, arm, and causing numbness in my fingers.  The doctors are going to try and do a steroid shot directly into that specific disc this week and if that does not work than they want to do surgery.  Praying that the shot will work because the surgery is much more evasive and permanent.  Surgery would require a hospital stay not to mention recovery and effects on my future with mobility, movement, and other issues (obviously not my first choice).

    It is getting old not sleeping well, taking medicines that me feel foggy and not myself, the pain is at times very intense and has limited me in a lot of areas, and numbness in my fingers can eventually lead to permanent damage if we don’t get that fixed as well.  It hurts getting older!  I am ready to be back to my normal self soon.  Praying that they can fix it with the simple solution and without surgery.  There are some areas I did okay with this week on my goals and others not so well.  Either way I plan on proceeding forward with all my goals, activities, and tasks as much as possible!

    8. Yard Cleanup (Focus – Pool taken down and put away) – thanks to my brother letting us borrow his mower Jake was able to get the yard mowed, but we still need to get the pool put away
    9. Pet Care (Focus – Refill Goat Food Bin & Make Homemade Treats with the kids for Skipper) – we made homemade treats for the dog, but still need to refill the goat food bin

    It was a crazy week.  I spent some time in Kansas with my family helping Fall Harvest last week, however, I continued to have difficulties and pain with my back, neck, arm, and numbness in my hand so I came back home earlier than expected.  Jake picked me up from the airport and took me directly to the doctor.  After a couple more doctors visits they “think” it is a bulging, dislocated, or chipped disc in my neck along with strained/pulled muscles in my shoulder, and a pinched nerve.  They are hoping I will feel better with the current treatment soon otherwise the next step is a MRI and possible surgery.

    While away I did learn a lot.  My time in the Midwest made me appreciate my parents and many of my extended family members who are in the farming industry even more for all the hard work they do on the farm.  During Fall Harvest the days are long, very busy, and a lot of activities are going on simultaneously (harvest, drilling, hauling, prepping fields and meals, and so much more).   It takes a lot of coordination, communication, and skill to keep everything and everybody moving forward smoothly.  Plus, you have the weather that effects your days and activities too.

    I am thankful that I was able to pitch in a small way and learn a few new things as well.  I did manage to drive the tractor and grain cart a little bit and the track tractor for a few hours which is something I have never done before.  Thankfully, I managed to make some progress forward and didn’t break anything (when operating such big equipment like the tractors, trucks, combines, vehicles, and equipment during harvest it is one of my fears that I will break something which could be costly in time and finances).  I was super excited about helping my family with Fall Harvest, my biggest disappointment was that I had to come home early due to my health.  For some reason God wants me home during this time, but I continue to pray for safety for all my family members still working the long hours out in the fields, prepping meals, and traveling to deliver the crops during this very busy time.  I love my family dearly and truly wanted to be a blessing to them during this time.

    Praying that I heal quickly because after over two weeks of sleeping restlessly in a recliner, being in pain, and having the side effects from the medicines I am ready to be myself again (I think my family would really like that too).  With all that being said I have made adjustments with my schedule and hope to still accomplish many of my goals this week, but I want to be realistic as well with everything that is going on right now.

    I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

  • The Fast Metabolism Diet by Haylie Pomroy

     

    A few weeks ago I got a book from SheSpeaks called The Fast Metabolism Diet by Haylie Pomroy.  Haylie Pomroy is a celebrity nutritionist and wellness consultant.  She has Grammy and Academy Awards winners to Super Bowl champions and Olympic athletic clients that she has helped, including Jennifer Lopez, Reese Witherspoon, Cher, Raquel Welch, Robert Downey Jr., and more.  Her nickname is the “metabolism whisperer” because she has helped numerous clients lose weight, enhance their health, and meet their personal goals.   She currently has integrative healthcare clinics in Beverly Hills, Burbank, Irvine, and Fort Collins.

    The  book came during a very busy time with our family so it took me a little longer to read the book and get prepared so I could start the plan.  After reading the book I wrote out my meal plans for the entire week and went shopping.  I have to admit the planning and shopping took me a lot longer, especially the first week.   I am about done with my first full week and the recipes overall have been really good.  I did find a couple here and there that were not my favorite so I picked another one to try out the next day and saved a few new ones for next week. I really like that she gives a lot of variety in her recipes.  She also does a great job explaining the science behind it in her book.

    A little more about the Fast Metabolism Diet:

    • It is four weeks (28 days) of fat-burning meal plans with more than fifty recipes (includes vegetarian, organic, and gluten-free options too).
    • No need to count a single calorie or fat gram.
    • Rotate what you’re eating to induce precise physiological changes that set your metabolism on fire.
    • Haylie Pomroy has over seventeen years experience helping people lose weight, improve fertility, overcome health challenges, and reach optimal health while still enjoying real food and not going hungry

    There are three phases you will go through every week.  She recommends you start on Monday, but you can do whatever day of the week works best for your schedule.

    • PHASE ONE (Monday-Tuesday): Lots of carbs and fruits (Phase 1 is for the carb lovers, fruits, pasta, rice, bread, crackers and pretzels, and includes a cardio workout).
    • PHASE TWO (Wednesday-Thursday): Lots of proteins and veggies (Phase 2 is focuses more on muscle building, giving you foods that include lean proteins and targeted vegetables and includes a weight lifting workout).
    • PHASE THREE (Friday-Saturday-Sunday): Some of the food from phases 1 & 2 plus healthy fats and oils (In phase 3 your your body is ready to enable the “thermogenic three – hormones, heart, and heat”  I like the the workout for this phase, it includes yoga or relaxing massage or deep breathing exercises)
    • Repeat for four weeks!

    The first week has been crazy busy, but I have managed to stay on track.  I have been prepping the breakfast, snacks, and lunch the night before so that it will help during the busy days.  So far on Monday, Wednesday, and Friday I have made dinner those nights and saved the leftovers for the next night to cut down on all the cooking.  Any leftovers for each phase I have been freezing for another night later in the month.

    I did have a small headache at the end of the first two days, but I am not sure if that was allergies or my body adjusting to the new foods.  I was really hoping that I would feel awesome with a ton of energy within the first a couple of days, instead I think I was actually a little more tired (but it was a really busy week with Jake out of town and starting a new meal plan).

    I have been keeping the book on the kitchen counter for reference to the recipes and made myself a little chart to remind me what food groups I need to eat on which days and what to pick for each meal and snack.  Also, the night before when I am prepping for the next day I will write what I am planning on eating for the next day on a sticky note as a quick reminder.  It has gone pretty smoothly and since I have been cooking the main meal for the entire family it has been neat to hear their reactions, they have enjoyed all the recipes (one night the girls had 2 bowls of soup)! 🙂

    Most of my shopping has been done at Trader Joe’s, Aldi’s and some at Whole Foods.  Finding some of the foods took awhile at first and I noticed a difference in prices from store to store, but it is worth it if it means I am healthy and have more energy in the long run.  At least for our area I found that Trader Joe’s and Aldi’s had the best prices (I think they are part of the same parent company too).

    I have already planned out my menu for next week, went shopping, and am looking forward to seeing what it brings.   Hopefully, I can stay on track and complete the full four week plan.  I already have several meals in the deep freezer for upcoming weeks so that should help with those busier days.  If I continue to plan ahead and prep the night before I think it could be very beneficial.  So far the food has been delicious and the bonus is its healthy for me too.

  • Honey & Lemon Sore Throat Remedy

    When you have a sore throat this is a great recipe to try.  The girls love it and makes them feel better.   A little bit of water, honey, and lemon helps coat the throat and soothes the pain.

    Honey & Lemon Sore Throat Remedy:

    • Hot Water
    • 1 teaspoon Lemon Juice (or fresh squeezed lemons)
    • 1 teaspoon Honey

    Fill a mug 3/4 full of hot water. Add equal amounts of lemon and honey.  Stir the lemon and honey until dissolved.

    The warm water, honey, lemon are soothing for the throat.  You can add a little more lemon and honey if you prefer.

  • Guest “Welcome” Basket

    Occasionally we have missionaries, family, or friends staying with us that have been or will be traveling.  When they stop by for a few days or weeks we try to make sure to have a “welcome” letter and basket full of goodies for them to use.  They can go through the basket and pick out any items that their family can use or take with them.  If there are some items that they won’t use they can give them away or leave them.

    One of the best parts about shopping the sales and using coupons is you have an opportunity to be a blessing to people that you meet.  I love being able to pack a basket full of products for our guests to pick out what they want or need.  It saves them a little cash plus they don’t need to make that extra trip to the store.

    Our family doesn’t have everything money can buy, but we have been richly blessed with many items so it is a real treat being able to share what we have with others.  If there is something specific I know a guest enjoys (food, products, or other items) I do my best to make sure it is available for them when they arrive.  I don’t always remember (or get it right) but I think it helps make your guests feel welcome when you have something to welcome them into your home.  If I don’t have a basket ready for them I try to put out a note or something little on the bed or in the guest bathroom for them.  How do you make your guests feel welcome when they come to stay in your home?

  • Living on a Budget: Sav-Mor Sidewalk Box Sale

    Stock Up Your Pantry with Sav-Mor's Sidewalk Box Sale!

    Sav Mor has been doing their Box Sale for several years now.  They will occasionally offer additional discounts as well.   For example, at the last sale you could get a case of Tortilla Chips for $2.00 which meant you were getting the chips for 25 cents per bag.  The above picture is from one our are recent trips to their sale (further description of what all is in the picture is given at the end of the post after the information section).

    More information about the Box Sale for those in the Greenville / Upstate Area:

    • What is it? Sav Mor does a Sidewalk Box Sale every couple of weeks where you can purchase a box full of food, health, household, baby items for a set price.  The parking lot beside Sav Mor has rows of banana boxes filled with overstock, dented, expired, or unwanted items from local grocery stores (Ingles, Whole Foods, Bi-Lo, and more) in the Greenville area.
    • Where is it located / Contact Information? The parking lot at Sav-Mor, 2117 Wade Hampton Blvd, Greenville, SC 29615.  Phone:  864-244-6128
    • How Does It Work?
    1. The day of the sale customers pick which aisle they want to go down (based on what you need, for example, if you need cereal you choose an aisle that has a lot of cereal boxes in it) and everyone lines up around the perimeter of the banana boxes.  It is good to ask the person (or people) in front of you which box they are going for prior to starting to avoid going after the exact same box.  A lot of the boxes within that aisle will contain similar items.
    2. Approximately 5 to 10 minutes before the sale “starts” a Sav-Mor representative will Welcome everyone, explain the rules, tell about any extra deals (for example, the case of chips for $2.00) followed by the store manager announcing a few of the current deals they offer at their store.
    3. Right at 9:00 AM they will blow the horn and / or say “GO” and you go as quickly as you can and fill up your banana box with as much food, health, household, and baby items that you can find.  You can fill as many boxes as you want (we typically consolidate down to 2 boxes at $7 each).  Your boxes must be level prior to paying, I have heard that they will stop you if it is too full although we have never had them stop us so I guess we are what they consider to be level (a potato chip bag may be sticking up a little bit, you should be able to get plenty in the box)
    4. They will have a different variety of groceries and other items each time.  It is common to see Cereals, Crackers, Pasta, Can Goods, Baby Items, Salad Dressing, Sauces, Gravies, etc… every time.
    5. You can fill your banana box a couple different ways.  Some people take an empty banana box and fill it with the items they want.  What has worked for us in the past is to grab an already packed banana box, pull it to the side and once we have found 3 or 4 boxes that have items that we want in them we’ll go through the boxes and consolidate the 3 to 4 boxes down to 1 or 2.  The items that you don’t want you put back into the middle and someone else can come take them for their box.  (For example, we had visitors coming and we wanted to get some snacks and juice boxes, Jake grabbed a box that looked like it was full of juice boxes, however, underneath the top layer of juice boxes was kitty litter which wasn’t something we need.)
    6. Once you have sorted, consolidated, and packed your box you can check out.  They will have shopping carts for you to use or you can carry the boxes (we just carry them).  You pay the store representative cash as you walk out of the area and to your car.
    • When Is It? The Box Sale is typically every other Saturday morning at 9:00 AM.  Call to confirm the week of to make sure they are doing it that week, they will know by Wednesday and can confirm.  Although, it starts at 9:00 AM you will want to arrive early because you will have the opportunity to pick which aisle you want to go down.  If you arrive late and the horn has already blown it will be a lot harder to get a great deal or there may not be much left.  The entire sale is over in less then 30 minutes.
    • How Much Does It Cost? The banana boxes are provided and each full box is $7.00.  Note – they take cash or check only!
    • Useful Information! You have to watch some of the items as they may be expired or close to expiring.  The items come from local stores who have overstock or for whatever reason no longer want the items.  Although a couple items we picked up this week were already expire, a few were expiring later in 2011 but the majority of the items were not expiring until 2012 to 2013 or later.  A few items every time in the rush get opened or broken so make sure to check the items before packing them into your box.
    • Tip On Packing Your Box: We typically get the items we are looking for then check for smaller items to squeeze in between the cracks.  For example, one time we got can goods, pasta, cereal, and snacks in a box.  Once we filled it with the regular stuff we stuck packs of gum, gravy / sauce packs around the edges and in the small spaces (I think we ended up with about 100 packs of gum which we distributed among our family and friends).
    • Team Work: We often go as a family because it helps to have someone watching the boxes while you are gathering the items.  Thankfully we have never (or at least not to my knowledge) had someone take items from our boxes but an honest mistake can happen with that many people trying to get their items at the same time.
    • Additional Information: It is outside so dress appropriately for the weather.  If it looks like rain they may cancel or start the event early, if you are driving a distance make sure to call the store to confirm.  Be polite, it is only food and not worth fighting over.  We have always had a pleasant experience but I know some people can get a little “pushy” so be respectful.
    • Is It Worth It?  How Much Do I Save? We typically get between $100 to $300 worth of items into each box, some days you get more others you get less.  For example, one time we got a half a box full of vitamins (ranging from $5 to $20 a piece).   Bigger items will take up more space, but if it is something you will use it may be worth it for your family.

    We bought 107 items and paid $16.00 total which means we spent less than $0.15 per item (see the picture at the beginning of the article)!!!  You can often get some excellent deals at Sav Mor’s Box Sale.  I was hoping to stock up on snack items for our family since I will be traveling a little I wanted to make sure there were plenty of easy snacks to take as well as  meals that could be made quickly for our family.  Our dining table was full once we unpacked the boxes!  We even got some Organic / Whole Wheat food items for the family.  We purchased two boxes at $7.00 each and the case of chips was $2.00 giving us our total of $16.00.  Here is what we got on Saturday:
