Family Recipe: Cheesy Spaghetti Bake
My cousin Jordan gave me this recipe several years ago and I love it. I still use it when I want to do something a little different with spaghetti. I like that it is easy yet delicious! There are several variations to this recipe that I use to mix it up a little bit too.
Cheesy Spaghetti Bake:
- 2 lb ground Hamburger
- 32 oz Spaghetti Sauce
- 12 to 14 oz Spaghetti Noodles
- 1/2 cup Milk
- 1/2 cup Onions
- 1 1/2 cup Velveeta Cheese
Brown the beef and onion in a skillet and drain. Stir in spaghetti sauce and simmer 10 minutes. Break spaghetti noodles into quarters and cook according to directions; drain. Add spaghetti noodles to the sauce mixture. Dice up and melt Velveeta cheese and milk together in a saucepan on low heat. Stir frequently until melted. Spread 1/2 of the spaghetti mixture in to a greased 9 x 13 inch pan. Top with 3/4 cheese sauce, then the remainder of the spaghetti mixture. Drip remaining 1/4 cup of melted cheese on top. Bake at 350 degrees for 20 to 30 minutes.
Variation 1: Sometime I will layer the spaghetti noodles on the bottom of the pan and slightly up the sides then add the sauce and meat on top followed by the cheese mixture.
Variation 2: Layer the spaghetti noodles on the bottom, then a thin layer of cheese, followed by the meat & sauce mixture and sprinkle the remaining cheese on the top
Variation 3: Cook in 2 pie dishes so I can share with others, for example, if someone just had a baby or surgery and I am bringing them a meal I will cook one for our family and one to give away.
Variation 4: Add Mushrooms and other veggies to the Spaghetti bake (you can put them in as a separate layer or mix them in with the meat and sauce mixture).

Giveaway: Book “Speaking Mom-ese” by Lisa Whelchel
I will be doing a giveaway for the month of April! The winner will receive the hardcover book called “Speaking Mom-ese: Moments of Peace & Inspiration in the Mother Tongue” by Lisa Whelchel! As Moms it is difficult finding a moment of “quiet” in our days and I liked how each chapter was short so I could fit it into even a busy day. A friend gave me the book when I was pregnant with the girls and I have read through at least it twice. Lisa shares insights and stories about her children as well as encourages you as a Mom. I think it is important even on the busy days to have even a few moments to relax.
All you have to do to enter this giveaway is sign up to follow my blog (if you haven’t done so already) and leave a comment below by 10 PM EST on April 30th telling us how you follow Blessings Multiplied. You can get a BONUS entry into the drawing if you leave a separate comment below telling us one of your tips for squeezing in a few moments of peace and quiet into your already busy day! We love our family but they have a way of keeping us running all day! On April 30th I will randomly draw a winner from those who have entered the giveaway.
Family Recipe: Green Bean Tator Tot Casserole
My Mom is a great cook and this is one of the recipes I remember her making when I was a kid. It is a great mix of flavors and the perfect casserole to take to someone for a meal or if you want to make two and freeze one for a busy day later that month. One thing I really love about this meal is that you can use what you have on hand in your pantry or freezer (you don’t have to buy a “special” type of green beans, hashbrowns, or cheese) to make it tasty!
Green Bean Casserole
- 2 lbs Hamburger, browned
- 1 can Mushrooms (optional)
- 1 pkg Shredded Cheese (Mozzarella or Cheddar or Mix)
- 2 to 3 cans Cream of Mushroom Soup
- 1 pkg frozen Hashbrowns or Tator Tots
- 3 cans Green Beans (any style)
Brown the hamburger then add the mushroom soup and canned mushrooms. Stir and place on the bottom of a casserole dish. Then layer the green beans on top of the meat mixture. Spread the hashbrowns over the top of the green beans. Sprinkle shredded cheese over the hashbrowns. Bake at 350 degrees for 45 minutes to an hour. Until cheese is golden.

As I was zipping along on the way to the girls school recently I came to a quick halt! There laying across the entire road was a huge tree. Thankfully I noticed it in time to stop. My first thought was this is strange…..glad I wasn’t driving by when it decided to fall since we take that road every day for school. My next thought was…….did someone cut it down but there literally was no one in sight and the tree roots were uprooted. The dilemma was I had to deliver goodies to the girls class in a matter of minutes, however, I had a road block. How was I going to get to their school (my options):
- Move it out of the road (I didn’t have a chainsaw or strength to do it by myself)
- There were no driveways behind me so I would have to back up the windy road about 1/2 mile, plus risk someone else coming down the road and us crashing
- Turn around in the road with narrow shoulders and risk someone coming around the bend and hitting me.
- Go around it (It had rained the day before and the tree covered the whole road, which doesn’t have a shoulder either)
What did I do? Surveyed the probability of going around the tree since the ditch wasn’t too deep or wet in that spot and braved it. I made it through, thankfully, otherwise Jake would have gotten another “help” call from me! The car on the other side of the tree had the same dilemma as I did but they decided to back up and turn around instead. I made it almost to the end of the road when I noticed a cop car heading the direction towards the tree I rolled down my window and waved to get his attention but he just flew on by me without hesitation. I figured he would realize why I was waving in matter of minutes. When I arrived at school I was able to let them know and they immediately called the bus barn to have them redirect the bus routes so they could get the kids home.
This event happened a couple weeks ago but has stuck in my head for several reasons. We often face road blocks in life. Even though the situation may catch you off guard or seem impossible to get past we all have to make a decision about what we are going to do about the various road blocks that appear. Are there areas in your life with road blocks? Here are some areas I have had road blocks pop up in my life (thankfully they haven’t come at once but sometimes I have to work on multiple ones at the same time):
- Health
- Financial
- Family
- Work
- Spiritual
- And More
I think the reason why this road block has stuck in my mind is I have come to the realization that there are several areas in my life and heart that I need to change. Taking time to change any area of my life takes time, energy and consistency. I want God to work in my life from the inside out. If I have walls put up around my heart how am I going to be an effective testimony for Him? If I don’t take the time to spend with Him how is He going to work in my life and in the lives of those people I touch. The choices I make today have a ripple effect on the people around me (family, friend, acquaintances, etc…) One other area that has come to my attention is my health. Growing up I didn’t have a routine exercise schedule because I got plenty on the farm and I never had to go on any diets but recently with my energy dropping I realized that I need to eat better and move more. The lack of energy is blocking me from doing more of the things I enjoy in my life. Another area I have been working on is making our family budget a priority. Thankfully my husband has always been very supportive because it really works better if both spouses are on board with it.
What will you do about the road blocks in your life? Will you allow yourself to discover ways to eat healthier and exercise? Will you get together with your spouse and work out a budget? Will you allow God to reveal your true heart so you can serve Him better? There are many areas in our lives that need cultivated. Every person is different. Examine your life and the areas you need to step up and go to bat for. Every day we have the opportunity to make choices in each area of our lives. Some days I do better than others while other days I seem to encounter one road block after another. The important part is that you pick yourself back up, dust off, refocus, and remember that you can get past this little bump in the road.
How will you react to a friends warning? Sometimes it takes another person tapping you on the shoulder you to get your attention. You could be the like the cop in the story above that just flew on by and ignored me as I tried to wave him down to warn him about the danger ahead. OR You could be like the secretary at the girls school who immediately called the bus barn to alert them of the road block in their routes so they can correct their route before hitting a road block. It is important to have close family and friends in your life that are kind enough to speak graciously with you if they see an area in your life where you are struggling. Those same people can also provide a lot of accountability, prayer, and encouragement as you journey through that road block.
It is amazing how much that tree across the road captivated my attention! Even though it was an inconvenience at the time I am thankful for a very visual representation of a road block because it has stuck in my mind. Take the time this week to identify and start removing the road blocks in your life so you can focus more on those areas that really are important to you.
“Heart Reflections” is a series of thoughts and encouragement that come directly from my heart. Life has a way of throwing us extra challenges and when our focus is pulled away from what is truly important we tend to feel the pressure of stress in our lives. This series is created to remind us that we are part of something so much bigger than ourselves. We don’t have to face the pressure of life on our own. We can trust that our prayers are being heard. He alone knows what’s best for us and gives us the appropriate strength to get through each day as it is set before us.
Family Celebrations: Happy Birthday Skipper!
The fifth member of our family is full of energy, a loyal friend, loves to play outside and adds a lot of laughter to our family…….Skipper! She is our sweet black lab who the girls absolutely adore! Our little Puddle Skipper Hayes was born on March 14, 2010 and she had fun celebrating her 1st birthday with us! It was a busy day full of a lot of activities but ended it with a little celebration for our furry family member. The girls were so excited to celebrate Skipper’s birthday.
Here are a few pictures from our fun together!
The girls wrapped Skipper’s gifts in newspaper and A LOT of tape! They even had tape on the floor when they were done (you can see a pile in between them on the carpet). They were so excited and had a blast doing the wrapping for their furry sister!
The girls thought it was hilarious putting Skipper’s candle in her special meal. They thought it was funny she would rather have a special birthday meal with “bacon” then a birthday cake. The girls were worried that Skipper was going to burn her nose so she barely got close to the bowl until the candle was blown out, glad they were looking out for her. It was great watching them trying to keep her away from the candle while we sang Happy Birthday!
The best puppy birthday meal you can ask for – Meaty and Moist, simply delicious! Plus she got to eat her special birthday treat all by herself (no one was wanting to share it with her).
Skipper was very excited to get new bones and a toy! She immediately took one bone into the yard, then realized the other one was still on the porch so went back for that one. I really think she stayed up all night playing and eating her bones!
Happy Birthday Skipper! Hope you enjoyed your play time with the family, your feast, bones, and toy! The girls had fun picking them out, wrapping and celebrating with you!!!
Book: “The Millionaire Mind” by Thomas Stanley
As I was thinking about the various books I have read over the past few years “The Millionaire Mind” by Thomas Stanley came to mind. In this book Stanley explains the research he did on how America’s wealthy got there. You don’t need to make a substantial amount to be smart with your money. Living a flashy and fancy lifestyle isn’t what it takes to be wise with your finances. I found it fascinating learning more regarding the millionaire “mindset” and the questions he asked in his research.
Our family has been trying to stick to our budget and be more responsible with the blessings we have been given. We are by no means millionaires but we feel it is important to always continue to learn and grow. My husband and I listened to the audiobook version of this book together. If you are trying to wrap your mind around finances this is fun book to read or listen to as you work through the process as a family. I encourage you to communicate and pray as a family as you go on this journey together. When we were first married it became very clear that Jake and I had different patterns and views on finances. Taking the time to listen or read these types of books together helps encourage and strengthen your relationship while providing a positive outlook on finances. What works for one family may not be doable for the next family, however, we all have been giving many blessings in life. We still continue to make mistakes, pick ourselves back up, and learn from the lessons God continues to teach us. We want to purposely chose to be wise with what we have been given so we have more opportunities to share with those around us.
Recipe: Broccoli Rice Hot Dish
I made a new recipe this past weekend from one of Taste of Home’s “Guilt Free Cooking” Cookbooks and the entire family loved it. I received thumbs up from everyone, several please make this again, and the kids even asked for seconds. What was leftover of the casserole was eaten the next day so it didn’t go to waste either. The best part is it was a “healthier” dish and was easy to make. I am not a huge egg person so I had a little hesitation in trying it because I didn’t want something that had a heavy egg flavor. In the end I was super happy I tried it because I couldn’t even taste the eggs because it had so much flavor in the dish. As I am trying to eat healthier and cook better food for my family (not that we don’t have a couple of pizza nights a month) I am looking for new, easy, inexpensive and tasty recipes to try. I bought this cookbook when it was on clearance for $2.50 before Christmas and this weekend as I was sitting on the front porch glider leafing through it while watching the kids play in the yard this recipe jump off the page begging for me to try it out, glad I did too. It was a hit with the family and it included ingredients that I can easily have on hand. I used it as our main meal but since it is meatless you could have it as a side as well.
Broccoli Rice Hot Dish
- 2 cups hot cooked Rice
- 3/4 cup shredded reduced fat Cheddar Cheese
- 1/2 cup Egg Substitute OR (1 egg)
- 3/4 teaspoon Garlic Salt
Filling
- 1 pkg (10 oz) frozen chopped Broccoli, thawed
- 4 oz chopped fresh Mushrooms
- 1/2 cup chopped sweet red pepper (we choose to not add the red pepper)
- 1/2 medium Onion, chopped
- 1 cup Egg Substitute OR (2 Eggs)
- 1/2 cup Fat Free Milk
- 1/2 teaspoon Onion Salt
- 1/2 teaspoon Pepper
- 1 cup (4 oz) shredded reduced fat Cheddar Cheese
In a large bowl, combine the rice, cheese, egg, and garlic salt. Press firmly into a 2 quart baking dish coated with nonstick cooking spray. Bake at 375 degrees for 10 minutes.
Meanwhile, place the broccoli, mushrooms, red pepper, onion in a steamer basket over 1 inch of boiling water in a saucepan. Bring to a boil, cover and steam for 5 minutes or until crisp-tender.
In a large bowl, combine eggs, milk, onion salt, and pepper; stir in vegetables. Pour over crust. Sprinkle with cheese. Bake, uncovered, at 375 for 25 to 30 minutes or until a knife inserted near the center comes out clean.
Do you have easy, inexpensive and tasty recipes to try? Send me an email and I may post it on my blog or put a link to your blog in your comment. As a family of 4 with a busy schedule having a stash of great healthy recipes on hand is very beneficial!

Curious Kids: Triangular Vacuums
The neat part about having kids is that they notice the small things, the stuff we take for granted as adults. A few months ago one of my girls wanted to know “Why does the vacuum leave triangles on the carpet?” It perplexed them when they were watching me because the vacuum itself is a rectangle yet somehow it manages to spit out triangles onto the carpet when I vacuum the floor. Although the triangles are not necessary I let them know that seeing the triangles indicates to Mommy that the carpet has recently been cleaned and makes the room look nice.
They had been learning about patterns at school and this strange occurrence at home captivated their attention one day. The triangles are created in a pattern by the way I steer the vacuum cleaner over the carpet. It helps me know that I have cleaned the entire floor and adds an extra reward at the end. It is the little things that you do that the kids pick up on and want to learn more about. I don’t know for sure if they will do the same things once they are grown but at least they know why Mommy creates triangles on the floor and how to do it with a rectangle shaped vacuum. I am thankful for kids who have the desire to learn, explore, and try to figure out how things work. Their curiosity keeps me on my toes and allows me to continue finding ways to teach them about life. As a Mom love this day to day education opportunity with my girls.
