Life Simplified: No Grocery Shopping
Every new year we set goals, challenge ourselves to reach new heights, and to focus on what’s really important in life. The picture above is a handful of receipts where I bought grocery items over the last few weeks. Back in 2011 I made it a goal to simplify my life more by enjoying the blessings and not wasting what God has given me. One of the ways I did this was by going through several No Grocery Shopping weeks, picking up only necessities while trying to use the items we already had in our fridge, freezer, and pantry.
When I did it in 2011 it was my intention to go 1 month, but I made it 8 weeks (with only a few hiccups). It is my plan to do this again with the hope of making it at least through the month of January. I will be sharing with you the successes and challenges on those specific areas in my life as I go through them.
Life Simplified Goal:
- No Grocery Shopping (except for necessities) in the month of January.
Explanation of the Goal: My goal during the month of January is to not shop for groceries other than necessities (milk, eggs, bread). Our freezer is full and our pantry is overflowing with all the great deals that we have picked up over the past few months. One of the reason for the goal is that I want to use the items I have and not waste them. Stockpiling is wonderful but there may come a point when we need to eat through that stockpile before it expires, save the extra money to work on a financial goal, and be creative with what we have at home. I have been thinking about this challenge for several weeks over the Holidays. Over the past few months (including our experience traveling to India) it has really hit me that we have been really blessed yet there are children and families that content with a lot less. Menu planning may take a little extra creative thinking on my part but I think I can do it. If I do purchase something it needs to meet one of the following criteria:
- FREE – I don’t want to waste free grocery coupons that my family will use while doing this goal
- Necessity – Milk, Eggs, Bread, etc…
- For Someone Else outside of my household. For example I make meals for new Moms in our church and if I need to pick up an item for them on the way to deliver a meal that will be an exception.
I have already started this goal. The only things I purchased this first week has been a loaf of bread and 1 gallon of milk. Last week we ate a bunch of leftovers for several days since our fridge was full and we don’t want to waste the food we have. Plus a sweet friend brought us a meal after my daughters surgery which was amazing and got us through more than two meals. It takes a little more time and focus to come up with a menu but everyone seems to be doing pretty well. The real challenge will come at the end of the month when we are getting low in the pantry and when we host guests!
I will share with you the challenges, successes and what I had to purchase so you can keep me accountable or even go through the journey with me by participating and sharing your story. I would love to extend this goal into February if I can make our pantry stretch!

Family Recipe: Grandma’s Stuffed Pork Chops
Jake’s Grandma Marge is a wonderful cook and she has an amazing recipe for pork chops & stuffing. I am not a huge pork chops fan but these are really delicious. She is a great cook and the pork chops are awesome.
Grandma’s Pork Chops & Stuffing:
- 4 Pork Chops (about 1 lb)
- 3 cups Bread Crumbs
- 2 Tablespoon chopped Onion
- 1/4 cup melted Butter or Margarine
- 1/4 cup Water
- 1/4 teaspoon Poultry Seasoning
- 1 can (10 1/2 oz) condensed Cream of Mushroom Soup
- 1/3 cup Water
Brown chops on both side, place in a shallow baking dish. Lightly mix together bread cubes, onion, butter, 1/4 cup water, and poultry seasoning. Place a mound of stuffing on each pork chop. Blend soup and 1/3 cup water; pour over. Bake in the oven at 350 degrees for 1 hour or until tender.

Family Recipes: Grandma’s Western Meatloaf
Grandma Willa has an amazing recipe for Meatloaf. I am so thankful for the many opportunities to spend time cooking with my Grandma’s. If you are looking for a great meatloaf recipe, you should try it out! Please note: this recipe does make a large amount (for several loaf pans). Adjust the amount if you are wanting to make a smaller amount. Although, it does freeze well for all of you meatloaf lovers who like to prep meals in advance!
Grandma’s Western Meatloaf

- 3 4x9 Loaf Pans
Ingredients
Meatloaf
- 5 lbs Ground Beef
- 2 1/4 cups Rolled Oats
- 2 Onions (diced)
- 3 tsp Salt
- 3/4 tsp Pepper
- 3 Eggs
- 6 slices Bread (broken into fine pieces)
Sauce
- 6 tbsp Worcestershire Sauce
- 6 tbsp Vinegar
- 4 cups Ketchup
- 1 cup Water
- 12 tbsp Brown Sugar
Instructions
- Preheat oven to 350 degrees.
- Mix the meatloaf ingredients together in a large bowl.
- Split into 3 to 4 large loaf pans.
- Mix the sauce in a bowl, then pour evenly over the loaves.
- Bake at 350 for one hour or until the meet is cooked throughout.
- Broil an additional 5 to 10 minutes until the top is carnalized.
Notes
This is a large batch meal. Once the loaves have cooled, they can be removed from the loaf pans and wrapped in foil to be frozen. To reheat, thaw in refrigerator overnight, then bake at 350 degrees for 20 minutes. The refrigerated meatloaf can also be sliced for great meatloaf sandwiches. Living on a Budget: Groceries $40 for 4
It was my fifth full week of doing my new cash budget system – Groceries $40 for 4. This week I was super busy so for the most part we ate from what we had in the fridge, freezer and the pantry. I think it is important to have these weeks where we utilize our food stockpile. Although, it is nice to stock up during the weeks it is equally rewarding having the opportunity to be more creative with the food we have on hand. I even made and delivered a meal for someone in our church this week with the food on hand without making a run to the grocery store for extra ingredients. It felt great saving some of the grocery shopping cash this week too especially since I had a couple higher weeks in the past. Below are my grocery shopping adventures for the week!
Grcoeries from Bi-Lo:
- $7.02 at Bi-Lo for 1 gallon of Skim Milk, 1 gallon of 2% Milk, and 1 loaf of bread.
In our fifth week of the challenge – Groceries $40 for 4 we spent $7.02 so it was a pretty good week regarding saving extra grocery cash. We did better this week because I didn’t have the extra time to go grocery shopping and we ate from our pantry. Although I wasn’t able to stock up on a few extra items this week it was wonderful being able to eat some of the items we already had in our fridge and pantry! Last week we stocked up on milk and I froze it, however, I didn’t pull it out in time for it to thaw enough to drink otherwise we wouldn’t have even purchased the milk this week. Oh well….you win some and lose some! I was thrilled to see Bi-Lo still had their milk under $3 so everything went well. I am still trying to work out all the details of how to make the budget most effective for our family and I think we need some weeks have been easier than others. We’ll see how I do next week and yes it’s another busy week!

A budget helps us stay on track so we have more opportunities to enjoy the many blessings we have been given as well as share what we have with others. There is so much more to life than having all the stuff. We may not have the newest or greatest items in our house, we drive used cars, and wear hand-me-down clothing…..however, if our family is taken care of and have love for each other and others we have more than all the riches in the world.
Family Recipe: Mom’s Beef & Broccoli
In honor of my Mom’s birthday this week I picked one of my favorite recipes that she makes. My Mom is a great cook and I actually made Beef & Broccoli last weekend so thought I would share it with you as well. I love this recipe and it is delicious!
Mom’s Beef & Broccoli:
- 3/4 lb fresh Broccoli
- 1 lb lean boneless Beef Steak (top round, flank, or sirloin work well)
- 2 tablespoon Soy Sauce (I used low sodium soy sauce)
- 1 clove of Garlic, minced or pressed
- 1/4 cup Salad Oil (or olive oil)
- 2 tablespoon of Water
- 1 1/2 tablespoon Corn Starch
- 1/4 teaspoon ground Ginger
- 2 tablespoon cooking Sherry
- 1 1/4 cup regular strength Beef Broth
- Dash of Red Pepper
Cut broccoli and set aside. Cut beef with the grain into 1 1/2 inch wide strips then across the grain in 1/4 inch slices. In bowl mix beef, soy sauce and garlic. Let marinate 15 minutes. Prepare cooking sauce corn starch, ground ginger, dash of red pepper, cooking sherry, and beef broth. When wok is hot add 1 tablespoon of oil, add half of the meat mixture. Stir fry until browned (about 2 to 3 minutes). Repeat with second half of meat and 1 more tablespoon of oil. Add the remaining 2 tablespoons of oil and stir in the broccoli for about 1 minute. Add water cover and cook about 3 minutes. Add cooking sauce to meat and stir until the sauce has thickened.
When I made this dish last weekend I added in some mushrooms and onions that I needed to use up. I cut back on the oil and didn’t have the Sherry so that was eliminated however since I added the additional juicy vegetables it was still tasty. This recipe is amazing as is but feel free to add in extra items that your family enjoys eating.

Although it has been a learning process the last few weeks this one went pretty well. It is always a learning and growing progress for our family. We are continuing to utilize the food we already have in our pantry and freezer. Below are my grocery shopping adventures for the week!
Grcoeries from RiteAid:
- $2.16 at RiteAid for Cake Mix (25 cents), Hamburger Dinner (25 cents), Onion Spices, Ground Cinnamon, 2 Tomato Juices (25 cents each), Individual peanut packs, Combos, and two free Easter Candies. Plus I used an UP Reward towards the purchase.
Groceries from Walgreens:
- $0.00 (FREE) at Walgreens for 4 cans of Geisha Mushrooms (used the Walgreens Coupon Insert and Register Reward to pay for the mushrooms! Can’t beat free!
Groceries from Bi-Lo:
- $36.52 at Bi-Lo for 4 gallons of milk (froze 2 gallons), 1 pack of Cheese Crackers, 2 Slow Cooker Packs, 2 Applesauce Packs, 1 Loaf of Bread, 1 box of Uncle Bens Rice (on closeout), 4 bags of Individually Wrapped Chocolate Covered Raisins (on clearance for 75 cents each), 1 bag of Chickpeas, 2 packs of Pasta, 2 packs of Cheese Sauce Mix, 1 jar Raspberry BBQ Sauce (on closeout), 4 bags shredded cheese, 2 bags sliced cheese, 1 package of fresh Chicken (99 cents / pound). I used several store and manufacturer’s coupons plus I had a coupon from Bi-Lo for $5 off the entire purchase which helped bring the amount down below $40.

I was able to stock up on some great dairy items this week – Milk (even froze 2 gallons), Cheese (which freezes well too), Chicken (enough for 2 to 3 meals for our family) and snacks for after school! I am still trying to work out all the details of how to make the budget most effective for our family and I think some weeks have been easier than others. I used some coupons, bought clearance items, and utilized weekly ad discounts to help save us a little extra on our grocery budget. I hope to do better next week! We’ll see how I do!

Family Recipe: Cheesy Spaghetti Bake
My cousin Jordan gave me this recipe several years ago and I love it. I still use it when I want to do something a little different with spaghetti. I like that it is easy yet delicious! There are several variations to this recipe that I use to mix it up a little bit too.
Cheesy Spaghetti Bake:
- 2 lb ground Hamburger
- 32 oz Spaghetti Sauce
- 12 to 14 oz Spaghetti Noodles
- 1/2 cup Milk
- 1/2 cup Onions
- 1 1/2 cup Velveeta Cheese
Brown the beef and onion in a skillet and drain. Stir in spaghetti sauce and simmer 10 minutes. Break spaghetti noodles into quarters and cook according to directions; drain. Add spaghetti noodles to the sauce mixture. Dice up and melt Velveeta cheese and milk together in a saucepan on low heat. Stir frequently until melted. Spread 1/2 of the spaghetti mixture in to a greased 9 x 13 inch pan. Top with 3/4 cheese sauce, then the remainder of the spaghetti mixture. Drip remaining 1/4 cup of melted cheese on top. Bake at 350 degrees for 20 to 30 minutes.
Variation 1: Sometime I will layer the spaghetti noodles on the bottom of the pan and slightly up the sides then add the sauce and meat on top followed by the cheese mixture.
Variation 2: Layer the spaghetti noodles on the bottom, then a thin layer of cheese, followed by the meat & sauce mixture and sprinkle the remaining cheese on the top
Variation 3: Cook in 2 pie dishes so I can share with others, for example, if someone just had a baby or surgery and I am bringing them a meal I will cook one for our family and one to give away.
Variation 4: Add Mushrooms and other veggies to the Spaghetti bake (you can put them in as a separate layer or mix them in with the meat and sauce mixture).
