• Steamed Fresh Vegetables

     There is just something about Spring and fresh garden vegetables!  Whether you get your vegetables from a garden or the store they are still delicious and a healthy part of the meal for your whole family.  We enjoy our vegetables raw (at meals, in lunches or just for a snack), on the grill (add touch of Italian salad dressing and they taste amazing), baked, or steamed (a perfect compliment to any meal).

    The pictures are some of the vegetables we ate recently.  Included in the steamer are cauliflower, broccoli, carrots, green beans, and purple beans.   Some were ones we had from our garden and the rest we got at our local grocery store.  I prefer to steam the vegetables over boiling them because I believe more of the nutrients remain in the vegetables plus they tend to stay more firm (not mushy, which happens if they are boiled too long).

    Our steamer has printed on it how long it takes to steam a variety of items.  Since there are several vegetables in this one I just average out the time for the items I put into the steamer and make sure to check it before dinner is served.  Although the purple beans are beautiful they do lose their purple color (they turn green) when cooked.  If you want the purple beans to retain their color you will need to serve them raw (on a salad, raw, or in any other cool dish that calls for green beans).  What is your favorite way to eat fresh vegetables?

  • Fresh Christmas Wreath

    I DID IT!!!!!  I made my first ever fresh Christmas Wreath and it actually looks……like a wreath!  A friend hosted a Christmas Wreath get together recently and a bunch of us put together wreaths.  At first I was not entirely sure why I was there….it seemed like all the women in attendance were crafty and have excellent decorating tastes and then me (the person who has been in the same house for 10 years and still doesn’t have curtains up, gulp).

    I am thankful that Dee took the time to show me how to get started because without her guidance it would have been interesting I am sure.  It was nice catching up with friends (some who I hadn’t seen in months) while I put together my wreath.  It only took me a few minutes to get the base completed but as I was talking I continued stuffing more greens into the wreath and by the end this is what it looked like.

    I am not really sure how or what I did but I was pleased that it at least turned out well enough to hang on the front door especially for a “not-so-crafty” person!  Don’t get me wrong, I love crafts, its just mine rarely turn out looking like the picture or something I would want to hang on the front door!

    It was a fun night of food, fellowship, and wreaths.  I was shocked when I looked a my watch and several hours had gone by!  Guess, its true “time flies when your having fun” or in this case catching up with friends and making wreaths.  I am thankful for an opportunity to get together with some amazing women and for all the greenery people brought to share.  There were piles of greens in the garage, kitchen, dining, etc….  I am not sure exactly where all my greens came from but they are beautiful and smell awesome.  The only thing not fresh on the wreath is the berries.  They did have fresh berries at the party, however, I was told they dry up and will drop on the floor so I decided to use the fake berries because they would not get tracked across the carpet.

    Thanks Dee for hosting and for giving me a gentle shove out of my comfort zone to try something new.  You’re a great teacher!  I love having the fresh wreath on our front door!  While I won’t be teaching professional wreath making classes any time soon I would be more comfortable putting together another one in the future after this experience.

  • Love It – Cuisinart CPB-300 Compact Portable Blender & Chopper

    My husband bought me a Cuisinart Blender a little over a year ago and I LOVE it!  He got me a Cuisinart CPB-300 SmartPower 15-Piece Compact Portable Blending/Chopping System and it has been a huge hit with the whole family.  The best part is it is compact and comes with four 16 ounce single smoothie cups as well as a bigger blender.  I will often whip up a quick smoothie for myself for breakfast or a snack as I am walking out the door.

    I have used this blender A LOT and it has held up very well (its still in great condition).  Before this one I went through 2 KitchenAid Blenders which were much bigger and I didn’t use them nearly as often because it was harder to clean.  I cannot say enough good things about this blender.

  • Fresh & Healthy: Community Supported Farms

    The past few weeks I have been reading about ways to eat healthier and along the way I discovered CSA’s (which stands for Community Supported Farms).  Although I have heard a little about them a couple times this was the first time I seriously considered joining one.  As I was researching more about the local farmers and various programs I decided to contact a couple in our area and find out more information.  It was interesting because some farms I never heard a word back from and others I have had several emails back and forth.  After much thought and research we decided as a family to try a CSA program this year and see how it goes.  I am VERY excited to participate and learn even more.  The girls are thrilled they get to go spend some time on a local farm and eat fresh veggies.  I am still growing some veggies in our garden at home, but I am really looking forward to getting fresh local produce from an area farm.

    What is a CSA? It stands for Community Supported Agriculture and has been around for about 20 years.  CSA allows consumers to buy local, seasonal and fresh produce directly from the farmer.  The farmer gives “shares” to the public (ie box, bag, or basket of vegetables, fruit, eggs, and a variety of other farm products).  Consumers prepays for shares or a partial shares for that years crops.  The consumers then receive a box of seasonal produce weekly throughout the season (usually around 20 weeks for the summer and 10 weeks for the winter season in our area).

    Why is it beneficial?

    • Fresh locally grown produce for your family
    • An adventure in trying new produce and recipes
    • The seasonal produce you receive will be fresh and ripe
    • The opportunity to visit the farm where you produce is grown
    • Fresh and healthy produce for your family to enjoy
    • Organic farming (if this is important to you please confirm with the farm you chose before committing, each farm is different)
    • Educational for the kids to see the produce being grown
    • Direct connection with a local farmer
    • More variety of produce on the menu and at the family table
    • Farmers can market and sell their crops before production
    • Increases the cash flow for the farm during planting season
    • Some farms include eggs, bread, meat, cheese, flowers, local honey, and more.
    • Most farms allow you the opportunity to pick what size of share you want (Whole Share, Half Share, Quarter Share, etc…)
    • Many farms have multiple drop off locations and times as well.
    • And more great benefits!

    The benefits really are mutual between the farmer and the consumer.  I hope to share more of the benefits of being involved in a CSA as we have the opportunity to experience more.  Right now our farm has several items planted and we are just waiting for them to grow so we can enjoy the delicious food!  One of the reasons we made the decision to join a CSA is we looked over a budget and realized that some weeks we were spending more than half of our grocery money on fruits and vegetables since we are trying to eat healthier.  When we spread the cost of a CSA over a season we would actually be saving money as a family.  This is our first year so we haven’t discovered exactly how everything works but we hope to share our experience with you!

    Are there any risks? It wouldn’t be fair to share the benefits without warning you of the risks as well.

    • Shared Risk – you are investing in a crop prior to the farmer raising it so there is a possibility that they could have drought, flood, hailstorm, or insect issues during the season, however, most farms plant a variety of crops so you’ll most likely just get more of another produce, but there is no “guarantees”  At the same time they could have a bountiful production year!
    • The farm will probably not raise every produce your family eats (ie. if your family likes mushrooms but the farm doesn’t grow mushrooms you’ll still have to purchase those items in the store)
    • Most farms are family run so if there is something unexpected in the family it could affect you as well.
    • Some of the produce may be “unique” or unlike the items you buy in the grocery store.  If you like trying new items this is a benefit but if you only like 5 different kinds of veggies or are really picky it may not be the best fit for you
    • When you get different types of produce you’ll have the opportunity to try out new recipes, this could be a huge benefit for some people but if you are not comfortable cooking or trying new recipes make sure to consider that as well.

  • Recipe: Broccoli Rice Hot Dish

    I made a new recipe this past weekend from one of  Taste of Home’s “Guilt Free Cooking” Cookbooks and the entire family loved it.  I received thumbs up from everyone, several please make this again, and the kids even asked for seconds.  What was leftover of the casserole was eaten the next day so it didn’t go to waste either.  The best part is it was a “healthier” dish and was easy to make. I am not a huge egg person so I had a little hesitation in trying it because I didn’t want something that had a heavy egg flavor.  In the end I was super happy I tried it because I couldn’t even taste the eggs because it had so much flavor in the dish.  As I am trying to eat healthier and cook better food for my family (not that we don’t have a couple of pizza nights a month) I am looking for new, easy, inexpensive and tasty recipes to try.  I bought this cookbook when it was on clearance for $2.50 before Christmas and this weekend as I was sitting on the front porch glider leafing through it while watching the kids play in the yard this recipe jump off the page begging for me to try it out, glad I did too.  It was a hit with the family and it included ingredients that I can easily have on hand.  I used it as our main meal but since it is meatless you could have it as a side as well.

    Broccoli Rice Hot Dish

    • 2 cups hot cooked Rice
    • 3/4 cup shredded reduced fat Cheddar Cheese
    • 1/2 cup Egg Substitute OR (1 egg)
    • 3/4 teaspoon Garlic Salt

    Filling

    • 1 pkg (10 oz) frozen chopped Broccoli, thawed
    • 4 oz chopped fresh Mushrooms
    • 1/2 cup chopped sweet red pepper (we choose to not add the red pepper)
    • 1/2 medium Onion, chopped
    • 1 cup Egg Substitute OR (2 Eggs)
    • 1/2 cup Fat Free Milk
    • 1/2 teaspoon Onion Salt
    • 1/2 teaspoon Pepper
    • 1 cup (4 oz) shredded reduced fat Cheddar Cheese

    In a large bowl, combine the rice, cheese, egg, and garlic salt.  Press firmly into a 2 quart baking dish coated with nonstick cooking spray.  Bake at 375 degrees for 10 minutes.

    Meanwhile, place the broccoli, mushrooms, red pepper, onion in a steamer basket over 1 inch of boiling water in a saucepan.  Bring to a boil, cover and steam for 5 minutes or until crisp-tender.

    In a large bowl, combine eggs, milk, onion salt, and pepper; stir in vegetables.  Pour over crust.  Sprinkle with cheese.  Bake, uncovered, at 375 for 25 to 30 minutes or until a knife inserted near the center comes out clean.

  • Vacation: The Beautiful Island of Dominica (Part 2, Pictures)

    We recently had the opportunity to go to the Caribbean Island of Dominica.

    Here are some of the pictures from our adventures throughout that day!

    Per their request we took a picture of Jerm and Amber reaching through the bars on the end of the pier.  It was a pretty funny sight to see as we were walking down the pier, they crack me up.  If you notice to the left you’ll see the barb wire on the outside of the bars.  Always an adventure.

    Dominica had several beautiful churches on their island.  This one was the oldest and largest.  It had a lot neat flowers around, an iron fence with crosses on top along with several other neat features.

    Dominica is well known for their schools, some of the surrounding islands will send students to Dominica to study.  All the kids wear school uniforms to school.  Above is a group of girls from school blowing us kisses as we drove by.  Cute kids!

    Above is a large tree we saw in the park.  The tree was so big you could walk through part of the tree at the openings.  We noticed a lot of neat trees during our time in Dominica.

    This large tree dropped onto a school bus (and flatten it) during a hurricane. Thankfully, no one was injured!

    A few years ago during a hurricane this tree fell onto the parked school bus.  Thankfully the kids were in a safe shelter during the storm not riding on the bus.

    In the middle of a park they had a “tree house” literally.  It was a spot with a lot of dense trees and vines that they made into a hut.  It was pretty neat.  The black hole in the middle is the doorway.  If you are looking to have an “on the ground” tree house this is a great idea, no more falling out of the tree house!

    A large volcanic rock on a railing as we were hiking through the rain forest.  Dominica has active volcanoes although it has been many years since an eruption on the island.  Thankfully!

    I honestly did not know that there were fresh water land crabs!  We saw a couple on our hike but this guy was pretty courageous, he came right out in front of us.  He didn’t run and hide when he saw us either, he just moved to the side.   I would say he was about a 4 inch land crab which from the couple we saw was pretty big.

    Dominica's rain forest had a lot of huge beautiful trees, vines, and flowers.

    There were parts of the rain forest that was more dense.  Here is one area that we could see up to the clouds.  The line across the middle is a vine, the vines were so think you could swing from them and everywhere.  They had amazing foliage, trees, flowers, ferns, plants, etc….and everything was big due to all the rain they receive.

    One of the Trafalgar waterfalls at the end of our part of the hike.  You could actually bring your swimsuit and towels up to go swimming at the pool at the bottom of the waterfall.  It was gorgeous!

    This is the second waterfall, they call the two falls “twin waterfalls” because they come out of the mountain almost side by side.  There is only a little bit of greenery from the rain forest and lava rock between the two waterfalls.

    Here is our crew that went on this excursion.  We had fun hiking, looking at the amazing creation, and learning a lot of interesting facts about the Dominica rain forest.

    Trafalgar Falls

    A picture of the twin falls.  It was  hard to get a good angle to take a picture of the falls and it was raining.  The picture is pretty but the look, sound and everything was even more amazing.

    It was not uncommon to see fresh fruit hanging from the trees in the rain forest and all over the island.  Some of the fruits I recognized while others I did not.

    The sulphur springs hike was pretty quick and we didn’t spend a lot of time hanging out once we arrived.  If you don’t know anything about Sulphur Springs then you will be surprised by the smell.  It was neat to watch it bubbling for a few minutes but we were glad to get away from the stinky smell it creates.

    On the way back down from our hike to the Sulphur Springs we noticed several sugar cane patches.  This patch had been picked and some of the stocks were laying down in the water.

    Here is a picture of the water from the Sulphur Springs running through the island.  It was a beautiful sight with the springs bubbling down through all the rain forest greenery.

    Dominica had a clean coast line.  This location had a sidewalk next to the road with some green grass and palm trees.  It was close to the port as you can see from the cargo crates in the background.

    Here is a picture of one of the villages on Dominica.  This one was built into the mountain where other villages closer to the heart of the rain forest were actually built in the valleys due to all the rain.

    Dominica has a lot of private and family fisherman.  The small boats in the picture above go out daily and catch fish and seafood right off the coast.  The ones not on the water are placed under a tin roof as shown in the picture above.

    There were several signs on Dominica (and other islands) that made me laugh.  In case you cannot read it says “Management is not responsible for drugs sold to visitors. – by Vendors  They are not part of management.”  I think they maybe had some problems with this issue in the past.  Kind of sad they have to put out a big sign.

    Amber and Jeremy swimming at Mero Beach in Dominica!  Amber, Jeremy, Jake and I swim for a couple hours while Mom and Dad relaxed on the beach.  It was fun hanging out, swimming, and relaxing for a little bit.  Although Amber never did get her dreadlocks done.

    We stopped at Mero Beach for a couple hours to relax and swim after we took our hikes to the waterfalls, rain forest, and Sulphur springs.  The water wasn’t as turquoise as some of the other islands because of all the volcanic rock and black sand beaches.  The was a little less salty here due to the all the rain forest water that dilutes the salt in the ocean.

    It is hard to see from the picture but Dominica had beautiful black sandy beaches.  The sand really sparkled in the sunlight.  It was neat to see and I had a couple cups worth of sand still on me when we got back on the ship, seriously, ask Jake, Amber or my room attendant!     I had a little stash of black sand that came out of my sandals once I made it back to our room!!!  I had a lot fun exploring Dominica, it is a beautiful island!

    A Vacation To Remember series is a reflection on our recent trip and ways we relaxed.  Life is short and we were thrilled to have the opportunity to build memories with family and explore of of the most amazing places during our time away.  Go with a good attitude and looking for fun and it will be an awesome trip jammed packed with positive memories.  It is refreshing having some time away from the regular routine.  Make it a once in a lifetime opportunity to meet new people and learn.  You just might see or try something new that takes your breath away!

  • Celebrating Valentine’s Day!

    We love Holidays at our house!  It is a wonderful time to celebrate with those you love and making more wonderful memories together!  We started our weekend of fun on Friday.  Jake and I had the opportunity, through swapping babysitting with friends, to go out for our Valentine’s celebration on Friday, February 11th.  I will be sharing a little more about our adventure throughout the week.   It was amazing time with my man and many great new memories were made.  On Sunday we made blueberry heart pancakes with strawberry sauce and had the left overs this morning for breakfast!

    Brina helped get the blueberries out for the batter.  She got them out of the freezer, measured the blueberries, and mixed them into the batter before cooking the pancakes.  Even better is we talked about the memories behind the blueberries we were using.  We picked the blueberries fresh from a friends yard during a fun evening together.  Thankful for friends, fellowship, memories, and the opportunity to enjoy such amazing fruit during the winter season.

    The blueberries are so delicious!  The girls always love it when we add them to their pancakes and I like that they are getting extra fruit!

    We purchased the heart shaped pancake form at Dollar Tree several years ago and still use them regularly (it came with a star and bear shape as well).  The girls enjoy getting super special shaped blueberry pancakes.

    We pulled our flash frozen whole strawberries out.  The girls and I had a great time picking them at a local farm and froze the ones we didn’t eat right away.  One of our favorite ways to eat pancakes is with frozen pureed strawberries instead of syrup, healthier and delicious!

    Once the strawberries had thawed for awhile I pureed the strawberries to use as sauce to dip the pancakes into.  The family loves it and tastes amazing. We typically just puree the strawberries, if you want it a little sweeter you can add a little bit of sugar or honey.

    The fresh blueberry pancakes are ready to eat.  For an extra bonus we have hugs and kisses sprinkles as well as strawberry sauce for dipping!  Delicious!  What a fun way to start off the Valentine’s Day celebrations as a family!
