  • Make 1 & Freeze 1 Meal: Taco Lasagna Recipe

    P1300360c

Make 1 & Froze 2 Taco Lasagna Meals!  Yay!

I have been trying to do at least one Make 1 and Freeze 1 meal a week for dinner.   The idea is we can eat the one meal that night for dinner and the other one will go into the freezer to eat at a later date when we are a little more pushed for time.  I started doing this a couple months ago as I was preparing for my two weeks away on a work trip.  I wanted to make sure there was plenty in the freezer for my husband to pull out the night before and either put in the crockpot or oven after picking the kids up from school.

This particular recipe is a favorite with our family.  I was able to Make 1 and Freeze 2 Taco Lasagnas for a later dinner!  Since I was already making up a big batch I was able to do more which will be a blessing later when we pull them out of the freezer.  I like being prepared and having a back up plan.  Whether it is a crazy week or busy weekend we have some options if we need them!

Another solution that I had to come up with regarding our meals is how to keep some food ingredients separate because we have one family member that cannot have regular refried beans or dairy.  Once I use up the refried beans that I have in the pantry I am going to try making my own from black beans or other beans that can be eaten, but for now though I have come up with a simple solution that seems to work well for our family.  I put a barrier between the refried beans and dairy side which keeps the items separate when cooking and eating.

Eat 1 Freeze One, Make 1 Freeze 1

I cut one small soft flour tortilla in half to use a barrier between the two sides.  As you can see the side with refried beans is larger than the side without it because 3 of us eat from that side and only one from the non-refried bean and non-cheese side of the Taco Lasagna.  PLEASE NOTE  that the person in our family that has the food allergy will not go into shock or needs hospitalized if they encounter or happen to eat the food so while this option works for our family it may not be the perfect solution if you have someone with severe food allergies because there still is a chance of the food cross over (usually when serving).  The food allergy is real and we have seen the side effects to veering even a little off her diet, but thankfully we have come up with a solution where everyone can share the same meal with very little adjustments.  The person with the food allergy gets a lot of extra meat for protein instead of the cheese and refried beans.

    P1300348c

Taco Lasagna still divided this time with a layer of meat and cheese.  The side without the cheese gets extra of the meat mixture!  I have shared our Taco Lasagna recipe in the past, but will post it below again so it is easier to locate.

    Taco Lasagna:

    • 1 pound ground Beef or Turkey
    • 1/2 cup chopped Green Pepper (optional)
    • 1/2 cup chopped Onions
    • 2/3 cup Water
    • 1 package of Taco Seasoning
    • 1 (15 oz) can Black Beans, rinsed and drained
    • 1 (14.5 oz ) can Mexican Tomatoes, undrained
    • 1 (16 oz) can Refried Beans
    • 6 (8 inch) Flour Tortillas
    • 3 cups shredded Mexican Cheese

In a large skillet, cook the meat, green pepper, and onion over medium heat until done.  Add water and taco seasoning; bring to a boil.  Reduce heat and simmer uncovered 2 minutes.  Stir in black beans and tomatoes.  Simmer uncovered 10 minutes.  Place 2 flour tortillas in a greased 13 x 9 pan.  Spread half of the refried beans then half of the beef mixture.  Sprinkle with 1 cup Mexican cheese.  Repeat layers.  Top with remaining tortillas and cheese (I try to add a little extra cheese if I have it and sliced olives if we have them in the pantry or fridge).  Cover and bake at 350 degrees for 25 to 30 minutes or until heated through and the cheese is melted.  I usually take the foil off the last few minutes to let the cheese on top get a little crispy since our family likes it that way.

The top of our split Taco Lasagna!  Everyone’s happy (those who want cheese and those who do not) and this is now ready to be put in the freezer for us to eat at a later time!

  • Orange Crockpot Chicken Recipe

    P1290181c

I enjoy trying out new recipes!  The ones that are easy to prep, include ingredients that are already in the kitchen, simple to cook, and receive a big thumbs up from our family are always my favorite!  One of the recent ones we tried was adapted from New Leaf Wellness’ Orange Ginger Chicken Recipe.  The girls and I loved it!  Jake liked it too, but he isn’t as big on the sweet main dish recipes.  This is a great recipe for the crockpot which means you could easily make one for dinner that night and freeze one for a later meal.

    Orange Crockpot Chicken Recipe:

    • 1 pound Chicken, cubed
    • ½ cup Orange Juice (with pulp)
    • ½ teaspoon Ground Ginger
    • 2 tablespoons Honey
    • 2 tablespoons Coconut Oil
    • 2 teaspoons Red Pepper Flakes

Place all the ingredients in the crockpot and cook on low for 3 to 6 hours or until chicken is cooked through.  Serve over rice.  Compliment with orange slices!

For a healthier version you can cook the chicken for an hour and drain the excess chicken juices than add the rest of the ingredients and cook for the remaining time.  Also, tastes great with brown rice!

  • 3/4 with Dairy + 1/4 Non-Dairy = 1 Whole Family Pizza

    Pizza Recipe

We have a member of our household who does not eat dairy.  It is not a go-to-the-hospital-or-stop-breathing-dairy-allergy, but it is one that we try to be careful with because it does have noticeable effects when dairy is eaten.  Over the past few months we have experimented with ways we can make only one family pizza with both dairy and non-dairy toppings.  Our dairy-free eater is not a big fan of the soy or vegan cheeses either so after several attempts to “get it right” we have come up with a pizza solution that makes the whole family happy (both those who want cheese and those who do not).

We make one whole pizza crust that is non-dairy (see recipe below), add the sauce, and put two lines of pepperoni’s separating about 1/4  of the pizza from the non-dairy part of the pizza.  Approximately 3/4 of the pizza gets cheese and toppings while the remaining 1/4 of the pizza gets sauce and extra toppings.  When we cut the pizza we cut the non-dairy part of the pizza first (being careful to stay within the pepperoni lines).  Everyone is happy with their special type of pizza, the dairy is avoided for the family member who doesn’t eat it, and we still only have to make one family pizza for our evening meal.  It may be hard to make out the exact pepperoni lines in the picture above, but you can see the part that has cheese and the section that is noticeably more red in color with extra toppings which is the non-dairy part of the pizza.

We have done this multiple times over the past few months and it has worked so well.  The only thing that may change in the future as the kids get older is one pizza may not be big enough for our family of four.  For now it is a simple solution to accommodate all family members diets yet still be able to enjoy the pizza together.  The one who doesn’t eat dairy thinks it’s awesome she has her own special section of the pizza and has fun choosing her extra toppings!  While some of the other family members who think it’s not really pizza without a good helping of cheese are happy to eat their section of the pizza.

    Homemade Pizza Dough

    • 1 cups warm water (105 to 115 degrees F.)
    • 1 Tablespoons active dry yeast
    • 1 teaspoons sugar
    • 1 teaspoons salt
    • 2 Tablespoons oil (vegetable, Canola, or olive oil)
    • 2 1/2 cups flour (can use all whole-wheat, half white/half whole-wheat, or all white)

Pour the warm water into a bowl and sprinkle the yeast over it. Stir to dissolve.

Add the remaining ingredients and mix.

Dump onto a floured surface and knead dough for two to five minutes until smooth and no longer sticky.

Roll out and shape onto a greased pizza pan.

Add pizza toppings of your choice. Bake at 500 degrees for around 10 minutes (until the crust looks crispy and lightly browned).

    Makes one pizza!

Most of the time I will double this pizza dough recipe.  Once the dough is made split it in half.  Roll out one half of the dough for your pizza meal that night and put the other half in a Ziploc bag in the freezer for a meal later when you don’t have as much time to prep for dinner.

  • What’s for Dinner: Our Weekly Menu Plan

    https://blessingsmultiplied.com//wp-content/uploads/2011/09/4088699532_ae44f04b7dc.jpg

Last week was busy with all the extra doctors appointment, but thanks to the help of my family we got through all the activities that needed to be accomplished.  I have quite of few appointments and other after school activities again this week as well.  Although the girls have both Monday and Tuesday off of school so I am looking forward to spending some extra time with them.  I plan on doing at least one “Make 1 & Freeze 1 Meal” (make one to eat that night and freeze one to eat at a later date) this week.  Here is our menu plan for the upcoming week:

    Our Weekly Menu Plan

    • Monday (Beef or Pork Entree): Shepherds Pie, Fresh Salad (Make 1 & Freeze 1 Meal)
    • Tuesday (Kid’s Night to Cook):  Homemade Pizza, Fruit Salad
    • Wednesday (Chicken or Vegetarian Entree):  Chicken Curry, Naan, Steamed Rice
    • Thursday (Pasta or Seafood Entree):  Baked Tilapia, Steamed Vegetables
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or seafood entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.

  • Intentional Living: Weekly Goals

Last week was busy week full of many extra appointments that were added into the schedule, some of them last minute, like doctor’s appointments.  The hot water heater decided to pick this week to stop working too.  Thankfully, it stopped on an evening when Jake was home, not traveling for work.  Jake and my brother Lee were able to get a new one back up and working in one evening!

I was finally able to get an MRI and figure out specifically what is going on to cause all the pain and numbness.  It has been over three weeks since I have been able to sleep in my own bed, the recliner has been the only comfortable spot to sleep lately!  The doctors have found out that I have a severely herniated disc in my neck which is also clamping down on nerves causing the shooting pains down my neck, back, arm, and causing numbness in my fingers.  The doctors are going to try and do a steroid shot directly into that specific disc this week and if that does not work than they want to do surgery.  Praying that the shot will work because the surgery is much more evasive and permanent.  Surgery would require a hospital stay not to mention recovery and effects on my future with mobility, movement, and other issues (obviously not my first choice).

It is getting old not sleeping well, taking medicines that me feel foggy and not myself, the pain is at times very intense and has limited me in a lot of areas, and numbness in my fingers can eventually lead to permanent damage if we don’t get that fixed as well.  It hurts getting older!  I am ready to be back to my normal self soon.  Praying that they can fix it with the simple solution and without surgery.  There are some areas I did okay with this week on my goals and others not so well.  Either way I plan on proceeding forward with all my goals, activities, and tasks as much as possible!

I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

    Why Share My Goals?

    • To keep me accountable
    • To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
    • To have my goals consistently written down so I can gauge progress more accurately
    • Create healthy habits in my life
    • To encourage you to share your goals with me as you continue to grown and learn

How did you do this week on your goals?  Feel free to share or link to your list of weekly goals.

The picture above is one that I created for my own purposes, however, The “SMART” acronym was originally coined 30 years ago by Peter Drucker in his classic work, Management by Results.

  • Family Brunch: Easy Breakfast Casserole Recipe

    P1280274c

This Easy Breakfast Casserole contains – Ham, Eggs, Broccoli, Potatoes, & Cheese

A couple weeks ago I had a few potatoes, ham, and broccoli that needed to be used up so I came up with an Easy Breakfast Casserole that was a big hit with the family. This casserole was a created as a way to utilize items in our fridge and pantry, but received big thumbs up.  Hope you enjoy it too.  It is one that would be good for a family brunch or you could even prep it the night before and stick it in the oven in the morning.  Or better yet put it in the crockpot and cook on low before going to bed.  When you wake up breakfast is ready!

    Easy Breakfast Casserole Recipe:

    • 4 medium Potatoes (peeled and cubed)
    • 2 cups Milk
    • 2 cups Ham (cubed)
    • 2 cups shredded Cheddar Cheese
    • 2 cups Broccoli
    • 8 Eggs
    • 1 teaspoon Pepper
    • 1/2 Onion (diced)
    • 2 tablespoons Butter

Melt 1 tablespoon of butter in a frying pan and add diced onions stirring  occasionally.  Saute on low for several minutes until the onions appear clear.  Grease a 9×13 pan.  Preheat the oven to 350 degrees.  While the onions are sauteing, peel and cube the potatoes and put them into the grease pan.  Add the saute onions over the potatoes.  Beat the eggs in a bowl, add pepper, milk, remaining tablespoon of melted butter, and stir until mixed well.  Pour the liquid mixture over the potatoes.  Sprinkle 1 1/2 cups of cheese over the potatoes and egg layers followed by the layer of broccoli and ham.   Sprinkle the remaining 1/2 cup of cheese on top.  Bake covered at 350 degrees for 30 minutes and 15 minutes uncovered.

Options:  You could add peppers, tomatoes, mushrooms or any number of other vegetables to this dish.  Use what your family has on hand and what you enjoy eating.

We do have a family member that doesn’t eat eggs or dairy so I made another version for her with everything the same except I made substitutions on the eggs and dairy (I plan on sharing that version with you in a later post).  Bon Appetite!

    https://blessingsmultiplied.com//wp-content/uploads/2011/09/4088699532_ae44f04b7dc.jpg

It has been a wild month.  I am back in town earlier than expected so decided I need to get our dinner menu planned for the busy week ahead.  It is my goal to start doing at least one “Make 1 & Freeze 1 Meal” every week (make one to eat that night and freeze one to eat at a later date).  Here is our menu plan for the upcoming week:

    Our Weekly Menu Plan

    • Monday (Beef or Seafood Entree): Taco Lasagna, Fresh Fruit (Make 1 & Freeze 1 Meal)
    • Tuesday (Kid’s Night to Cook):  Hot Dogs, Baked Beans

  • Intentional Living: Weekly Goals

It was a crazy week.  I spent some time in Kansas with my family helping Fall Harvest last week, however, I continued to have difficulties and pain with my back, neck, arm, and numbness in my hand so I came back home earlier than expected.  Jake picked me up from the airport and took me directly to the doctor.  After a couple more doctors visits they “think” it is a bulging, dislocated, or chipped disc in my neck along with strained/pulled muscles in my shoulder, and a pinched nerve.  They are hoping I will feel better with the current treatment soon otherwise the next step is a MRI and possible surgery.

While away I did learn a lot.  My time in the Midwest made me appreciate my parents and many of my extended family members who are in the farming industry even more for all the hard work they do on the farm.  During Fall Harvest the days are long, very busy, and a lot of activities are going on simultaneously (harvest, drilling, hauling, prepping fields and meals, and so much more).   It takes a lot of coordination, communication, and skill to keep everything and everybody moving forward smoothly.  Plus, you have the weather that effects your days and activities too.

I am thankful that I was able to pitch in a small way and learn a few new things as well.  I did manage to drive the tractor and grain cart a little bit and the track tractor for a few hours which is something I have never done before.  Thankfully, I managed to make some progress forward and didn’t break anything (when operating such big equipment like the tractors, trucks, combines, vehicles, and equipment during harvest it is one of my fears that I will break something which could be costly in time and finances).  I was super excited about helping my family with Fall Harvest, my biggest disappointment was that I had to come home early due to my health.  For some reason God wants me home during this time, but I continue to pray for safety for all my family members still working the long hours out in the fields, prepping meals, and traveling to deliver the crops during this very busy time.  I love my family dearly and truly wanted to be a blessing to them during this time.

Praying that I heal quickly because after over two weeks of sleeping restlessly in a recliner, being in pain, and having the side effects from the medicines I am ready to be myself again (I think my family would really like that too).  With all that being said I have made adjustments with my schedule and hope to still accomplish many of my goals this week, but I want to be realistic as well with everything that is going on right now.

  • What’s for Breakfast: Easy Breakfast Clowns

    Easy Breakfast and Breakfast Note

On this particular morning I was already up early and decided to do a little extra surprise for breakfast.  Although, this doesn’t happen every morning in our house because some days it takes everything I have just to get through the necessary steps to get everyone out the door for work and school.    Each girl got two  blueberry pancakes,  two sausages cut into half, and fresh grapes and strawberries for their main breakfast.  They also got their normal milk, juice, and multivitamins.  The girls are always excited to see something different at the breakfast table.  Seriously, sometimes the silly and simple things like the Easy Breakfast Clowns are all it takes to brighten their day.  It never hurts when you get the day off to a good start!

Tip:  I like to make up a large batch of blueberry pancakes whenever we have them and freeze a bunch for future breakfasts.  It is easy to pull out a few frozen pancakes and have breakfast ready in a few minutes (plus there’s less of a mess).

We are pretty consistent with our week day breakfast menu.  For each day of the work and school week Monday to Friday we have the same main menu item from week to week the only thing that changes is the “extra item” we add each day such as an egg, sausage, fresh fruit, cottage cheese, bacon, smoothies, or other items that we have in the kitchen.  During the school week the girls always have their main breakfast, at least one side (usually fruit, sausage, egg, etc…), vitamins, milk (one has non-dairy milk due to allergies), and small glass of juice.  When I am ambitious, awake, and my creative juices are flowing I will add a little extra silliness to make breakfast more enjoyable for the kids.

Here is what our breakfast menu looks like this week (the items in parenthesis are examples of the extra items we will add and change from week to week):

    • Monday – English Muffins (Egg)
    • Tuesday – Toast (Cottage Cheese)
    • Wednesday – Cereal (Smoothie)
    • Thursday – Pancakes, Poptarts, or Oatmeal (Fresh Fruit)
    • Friday – Bagel (Bacon)
    • Saturday – Family Brunch (a lot of times we make Saturday breakfast together and it is whatever sounds good that morning or a new dish we want to try out.  It is not always planned in advance and could be an egg or breakfast casserole, omelets, hashbrowns, waffles, pancakes, etc… this is our big family meal of the day since Saturdays are often spent with extended family, friends, or doing other afternoon and evening activities)  Since we make more complicated breakfasts on Saturdays it is usually between 8 to 10 before we sit down to eat therefore they have become our Family Brunch.
    • Sunday – Make Your Own Breakfast (everyone makes their own breakfast before church which is usually something easy like cereal, toast, poptarts, oatmeal, smoothie, etc….)

We first started doing a different main breakfast item everyday a few years ago because I have one child who if she eats the same thing too many times in a row she stops eating.  Adding a little variety from day to day was enough to keep her motivated to eat breakfast.  It wasn’t until several months later when the girls pointed it out that I realized that we do the same main item on the same day every week.  “Mom, Tuesday is Toast Day…..”  So now it has become our rotating breakfast menu which helps keep us on track because we know exactly what we need to prepare for the next breakfast.  Plus the girls are sometimes still waking up when they come to breakfast and the morning menu helps them figure out the day of the week as well as prepares them for the upcoming activities they have that day.

There are times I will mix it up (just for fun) or Jake will get up first and make breakfast!  The girls don’t hesitate to let him know if he makes a main food item on the wrong day….ha!  Our breakfasts are not fancy, but it gets us up and started for the day.  What do you make for your family breakfasts?

  • What’s for Dinner: Our Weekly Menu Plan

    https://blessingsmultiplied.com//wp-content/uploads/2011/09/4088699532_ae44f04b7dc.jpg

There is a lot going on this week.  I am hoping to keep the dinner menu simple and easy.  Also, there are a couple meals this week I want to duplicate so we can stock up the freezer for those nights in the future when we will not be able to spend a lot of time in the kitchen.  I call it my “make 1 – freeze 1” meals.  Here is our menu plan for the upcoming week:

    Our Weekly Menu Plan

    • Monday (Beef or Seafood Entree): Roast, Mash Potatoes
    • Tuesday (Kid’s Night to Cook):  Pizza, Salad (Make 1 Pizza Dough & Freeze 1)
    • Wednesday (Chicken or Vegetarian Entree):  Chicken Pot Pie, Fresh Fruit (Make 1 Chicken Pot Pie & Freeze 1)
    • Thursday (Pasta or Pork Entree): Pork Chops, Steamed Vegetables
