  • Living on a Budget: Groceries $40 for 4

    It was a busy week which started with traveling from a conference (we went to Nebraska and Kansas with a brief stop in Texas).   Here is my weekly update on our Groceries $40 for 4.

    Groceries from Ingles and Walgreens

    Ingles Groceries:

    • $18.02 at Ingles for 2 loaves Laura Lynn Bread, 3 containers Fresh Strawberries (on clearance for $0.99), 1 bag Bananas (on clearance for $1.49), 1 bag mixed Fresh Fruit (5 pounds oranges, red delicious apples, granny smith apples on clearance for $1.49), 2 containers Fresh Raspberries (on clearance for $0.99), 1 half gallon Pomengranate Tea (on clearance for $0.99), 1 bag Fresh Organic Cucumbers (on clearance for $0.99), and 3 bacon wrapped Steak Filets (they are normally over $9 each regularly but got them on clearance for $1.99). (Everything I bought this week at Ingles was on sale, marked down, or on clearance.  The fresh fruit, veggies, tea and steaks will come in handy with the upcoming Valentine Holiday.   I don’t usually pick up fancy steak even with it on clearance for $1.99 but since Valentines Day is right around the corner and we are going to do a special dinner!)

    Walgreens Groceries:

    • $7.54 at Walgreens for 2 gallons Milk and 2 two liters Mountain Dew (They had their milk marked down to $2.79 each and their Pepsi products marked down to $0.98.  The soda is great for upcoming events).

    I think my body was worn out by the time I got home from the conference that it crashed and I ended up getting sick.  Thankfully after a couple days of rest, extra fluids, and lower activities I was able to bounce back.  I appreciate my husband and kids for stepping up and helping out around the house.  Somehow they managed to stay healthy, yay!  I didn’t have around to doing a regular grocery shopping run until Friday with all the travel and sickness.

    This week I spent $25.56 on groceries.  I was under on my budgeted amount for the week because of the busy week with the conference and traveling so thankfully I have a little extra to use towards groceries another week.  I was happy to find fresh produce and steak on sale for the upcoming Valentine celebration.  I hope that next week is better week, back to normal, and we can come under budget!

    It is my goal to give you regular updates on this budget section so you can celebrate the good weeks with me and thump me on the bad weeks!  As always you are welcomed to join the journey with me.  I would love to hear your story and how you are doing too.  The purpose of our family doing this it to watch our grocery spending while allowing us to feed our family, enjoy life, share with others, and yet stay on track with our budget.

    Living on a Budget is a series of ways our family uses a budget to help keep us accountable with our finances.  Life doesn’t always go as planned.  We have used some of the ideas I will be sharing for years while others are ones we are just starting to implement as we continue finding ways to be creative and have fun with what we have been given.  Having a plan in place allows us the freedom to be smart with what we have been given, get more creative when it is a tight (week, month, year or a season) and when necessary live a much more simplified life.  A budget helps us stay on track so we have more opportunities to enjoy the many blessings we have been given as well as share what we have with others.  There is so much more to life than having all the stuff.  We may not have the newest or greatest items in our house, we drive used cars, and wear hand-me-down clothing…..however, if our family is taken care of and have love for each other and others we have more than all the riches in the world.

  • Be My Valentine: “Heart to Heart” Cookies

    Heart to Heart Cookies

    We made these cookies by using cookie cutters.  The girls had fun taking these cookies to school for their lunches.
     “Heart to Heart” Cookies:
    • 3/4 cup Butter
    • 3/4 cup Brown Sugar
    • 1/4 cup Sugar
    • 1 package instant White Chocolate Pudding
    • 3/4 cup Cake Mix (any flavor)
    • 2 Eggs
    • 1 teaspoon Vanilla
    • 1 teaspoon Baking Soda
    • 2 1/4 cups Flour
    • 1/2 teaspoon salt
    • Sprinkles
     Preheat oven to 350 degrees.  Grease a baking sheet and cookie cutters.  Mix flour, salt and baking soda together and set aside.  Cream butter, brown sugar, and sugar together.  Stir in the pudding and cake mix until well blended.  Mix in the eggs, vanilla, and mix until smooth.  Add flour 1/2 cup at a time until mixed well.  Stir in the sprinkles.  Use an ice cream scoop to place the dough inside the cookie cutters.  Bake for 8 to 10 minutes.

  • Be My Valentine: “I Love Everything You Dew” Love Note

    I LOVE everything you dew!

    A few weeks ago I discovered these cute “pop” love notes from Darling Doodles and have been enjoying adding these love notes to my stash of ones to give to Jake!  🙂  He enjoys drinking Mountain Dew so when it goes on sale I try to get a little for him.  This particular love note was a great one to give to my man!

    When Jake is coming home after being away with work for several days or if he has had a tough day I try to do something special to cheer him up.  I will put the surprises in various visible places throughout the house (his side of the garage, kitchen, his desk, our dresser, on his plate at the table, etc…) where I know he will be.  Although, he never knows when I am doing it or where I will put it he always finds it.  On this particular day he was stressed with a lot on his plate with work, travel arrangements, family and everything else.  I decided it was a good day to put out a special surprise for him to say “I love you”!   The Mountain Dew and sweet note sitting on the dresser downstairs in our family room was the first thing he saw walking into the house and it did bring a smile which made it worth it for me!

    Sometimes taking just a few minutes out of your day to show your spouse you are thinking about them and that you care can make all the difference.  It doesn’t have to take a lot of time, money or effect but the benefits will go a long way.  Doing something special for them could mean packing their lunch for work the next day, laying out their clothes the night before, or even leaving a love note on their pillow.  Investing time and energy into your marriage is always good for the entire family.  How do you cheer your spouse up or make them feel appreciated?

  • Be My Valentine: “Steal My Heart” Cookies

    “Steal My Heart” Valentine Cookies

    Last year I picked up this Valentine Heart pan on clearance after Valentine’s Day.  The girls were very excited to try it out this year.  We made these fun “Steal My Heart” Cookies together.  The girls had a blast mixing up the cookie dough and they thought the cookies tasted pretty yummy too.  You can use a variety  of cookie mixes with this cookie sheet.  Below is your basic sugar cookie mix, you can add in a few sprinkles for an extra special touch.

    Sugar Cookies

    • 1/3 cup Butter or Margarine
    • 1/3 cup Shortening
    • 3/4 cup Sugar
    • 1 teaspoon Baking Powder
    • 1 Egg
    • 1 teaspoon Vanilla
    • 2 cups All Purpose Flour
    • Sprinkles (optional)
    • Icing (optional)

    1.  Beat butter and shortening on medium to high speed for 30 seconds.  Add sugar, baking powder, and a dash of salt.  Beat till combined, scraping the bowl so everything is well blended.  Beat in egg and vanilla.  Gradually add the flour into the mixture.

    2.  Cover and chill dough for 1 to 3 hours to make it easier to handle when making cookies or cutouts.

    3.  Lay down wax paper and lightly flour.  Roll the dough to 1/8 inch thickness.  Use a variety of cookie cutters to make the shapes you want.  Place on lightly greased cookie sheet.

    4.  Cut out a heart shape in the middle of the cookies.  Fill the hole with a crushed hard candy.  The candy will melt during baking creating the glass window pane hearts in the middle of the cookies. *We tried using up extra candy canes but they didn’t melt well (they tasted good) but I would stick to the one color hard candies like life savers!

    5.  Bake at 375° for 7 to 9 minutes or until the edges of the cookies are firm and light brown.  Cool until the middle window are set then transfer to a platter.

  • Intentional Living: Weekly Goals

    Last week we made a quick trip out to the midwest, Nebraska & Kansas, to attend a Pro Ag conference with my family.  The girls had a blast with Grandma while Jake and I (along with other family and friends) attended the conference.  We learned a lot of great information (still processing all of it) they covered a lot in a short period of time.  We were also able to squeeze in some time to spend with extended family during the trip too.  It was a quick and busy trip but we were able to fit in some fun along the way! 🙂  Now that I am back home I have a pretty big week planned out, praying I will be able to tackle the majority of the items on the list for the week!

    Here is the update on last weeks goals:

    Family Goals

    1. Spend 1-on-1 time with each child everyday – I was not able to do this with the conference last week
    2. Read a book to the girls everyday- during the conference they were with Grandma so they probably had books read to them but I didn’t read them
    3. Spend some time with extended family

    Personal Goals

    1. Exercise – walk at least 5 days this week – did well until all the traveling
    2. Read and listen to the next section of  Desiring God: Finding Complete Satisfaction and Joy in God by John Piper (our church Community Group is going through this book together).

    Home Management Goals

    1. All laundry for the week washed, folded, and put away in one day
    2. Weekly Dinner Menu planned and written by Monday

    Business Goals

    1. Attend the Pro Ag Conference
    2. Pay all bills that come in the mail this week

    Ministry Goals

    1. Email our weekly Community Group update including upcoming events on the calendar, praises, and prayer requests
    2. Meet a friend or family member for Breakfast or Lunch

    Financial Goals

    1. Stay within Budget on Groceries $40 for 4
    2. Emergency Fund – save 3 months worth of living expenses – still working on this one

    Here are my goals for the upcoming week:

    Family Goals

    1. Spend 1-on-1 time with each child everyday
    2. Read a book to the girls everyday
    3. Have each girl read 1 book to myself or Jake 5 days this week
    4. Schedule a Date Night with the Girls & Re-Schedule My Date Night with Jake
    5. Finalize the Girls Birthday Party Items
    6. Set up a dentist appointment for the girls
    7. Pick up the girls new glasses

    Personal Goals

    1. Exercise – walk at least 5 days this week
    2. Go to bed by 10:30 pm or earlier Monday to Thursday
    3. Finish reading Crush It by Gary Vaynerchuk
    4. Read and listen to the next section of  Desiring God: Finding Complete Satisfaction and Joy in God by John Piper (our church Community Group is going through this book together).
    5. Set up an appointment to get updated on shots / vaccinations
    6. Finalize Upcoming Travel Plans – dates set / plane tickets purchased / visa

    Home Management Goals

    1. All laundry for the week washed, folded, and put away in one day
    2. Weekly Dinner Menu planned and written by Monday
    3. Spend 30 minutes every day picking up / cleaning the house
    4. Dinner ready by 5:30 PM (Monday through Thursday)
    5. Spend time re-organizing and de-cluttering the Master Bedroom & Bathroom
    6. Get the majority of our 2011 Personal Taxes completed

    Business Goals

    1. Pay all bills that come in the mail this week
    2. Work on ideas for upcoming blog posts
    3. Spend 10 minutes a day cleaning and organizing my desk
    4. Write a Guest Blog Post
    5. Schedule Meeting with Accountant for Business Taxes

    Ministry Goals

    1. Email our weekly Community Group update including upcoming events on the calendar, praises, and prayer requests
    2. Meet a friend or family member for Breakfast or Lunch
    3. Email Alms & Legs Ministry Team regarding our upcoming meeting
    4. Put together the Alms & Legs Meeting Agenda

    Financial Goals

    1. Stay within Budget on Groceries $40 for 4
    2. Emergency Fund – save 3 months worth of living expenses
    3. Start working on our personal 2011 taxes
    4. Put money aside for upcoming trips

    I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

    Why Share My Goals?

    • To keep me accountable
    • To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
    • To have my goals consistently written down so I can gauge progress more accurately
    • Create healthy habits in my life
    • To encourage you to share your goals with me as you continue to grown and learn

  • Recipe: Cinnamon Tortilla Chips & Fruit Salsa

    I recently made Cinnamon Tortilla Chips & Fruit Salsa to bring to a friends house.   The sweet chips and fruit salsa are a wonderful combination.  I received my inspiration for this recipe from The Girl Who Ate Everything.   My Fruit Salsa had a different blend of fruit in it (mainly because I used what I had on hand) and I cut the recipe in half.  The recipe was a hit!
    Cinnamon Tortilla Chips & Fruit Salsa:

    Fruit Salsa

    • 2 diced Red Delicious Apples
    • 1 peeled and diced Orange
    • 1 cup diced Strawberries
    • 1/2 cup halved Cranberries
    • 1/2 cup Pomegranate Seeds
    • 1 tablespoon White Sugar
    • 1/2 tablespoon Brown Sugar
    • 1 1/2 tablespoons Fruit Preserves (I used half Peach-Raspberry Jam and half Pear Honey made by my cousin Renelle)

    Cinnamon Tortilla Chips

    • 10 (10 inch) Flour Tortillas
    • Melted Butter or Cooking Spray
    • 1 cup Sugar
    • 2 tablespoons Cinnamon

    1. Preheat the oven to 350 degrees.  Mix 1 cup of granulated sugar and cinnamon in a bowl and set aside.  Coat both sides of a flour tortilla with melted butter or butter flavored cooking spray.  Dip the buttered tortilla into the sugar and cinnamon mixture (or sprinkle the sugar / cinnamon mixture over the buttered tortilla).  Use cooking scissors to cut the tortilla into wedges and place in a single layer onto a baking sheet.  Spray the top of the tortilla wedges with cooking spray and bake for 8 to 10 minutes.  Repeat until you have finished the tortillas.
    2. Wash, peel and dice all the fresh fruit.  Place the fruit in a bowl and mix.  Add the white sugar, brown sugar, and fruit preserves and stir thoroughly.  Cover the fruit and chill for 15 minutes in the refrigerator.
    3. Serve the Cinnamon Tortilla Chips with chilled fruit mixture. You can use this salsa with cinnamon graham crackers, cinnamon pita chips, or any type of cinnamon chips.

    I made some progress last week on my goals!  Thankful for the opportunity move forward on my goals despite a busy 2012 first quarter.  Since I have a conference for part of the week the list will be shorter.

    Family Goals

    1. Spend 1-on-1 time with each child everyday
    2. Read a book to the girls everyday
    3. Have each girl read 1 book to myself or Jake 5 days this week – the girls were sick this week
    4. Go on my Date Night with Jake (we got free movie tickets so excited to enjoy some time away together) – We gave away our free movie tickets because we had to cancel our Date Night, the kiddos got sick.  🙁 I am hoping to get it rescheduled soon.
    5. Get the girls Birthday Party Details Started

    Personal Goals

    1. Exercise – walk at least 5 days this weekI did it again (victory dance).  It has helped give me more energy throughout my days too!
    2. Go to bed by 10:30 pm or earlier Monday to Thursday – was bad about this one, it was after 1 am one night
    3. Finish reading Crush It by Gary Vaynerchuk – still working on it
    4. Read and listen to the next section of  Desiring God: Finding Complete Satisfaction and Joy in God by John Piper (our church Community Group is going through this book together).
    5. Get my Travel Visa Application Sent

    Home Management Goals

    1. All laundry for the week washed, folded, and put away in one day
    2. Weekly Dinner Menu planned and written by Monday
    3. Spend 30 minutes every day picking up / cleaning the house
    4. Dinner ready by 5:30 PM (Monday through Thursday) – it was closer to 6 pm a couple of days
    5. Spend time re-organizing and de-cluttering the office
    6. Update Family & Friends Contact Information – glad to have this information updated 🙂

    Business Goals

    1. Pay all bills that come in the mail this week
    2. Work on ideas for upcoming blog posts
    3. Spend 10 minutes a day cleaning and organizing my desk
    4. Plan new implementations for blog
    5. Start working on 2011 business taxes – gathered the information and paperwork but nothing more yet

  • Game: Wits & Wagers by North Star Games

    In an earlier post I mentioned the Wits and Wagers by North Star Games that we received as a gift.   On the box it says “The Most Award Winning Party Game in History.”   This game quickly became a family favorite.  We have played this game many times since receiving it and have shared it with several other family and friends as well.  The game is based on facts, however, you don’t need to know all the answers in order to enjoy, participate, or even win the game.

    Our family enjoys having games nights and are excited about finding great games we can play together.  If you are looking for a fun family game you should check this one out or better yet come on over and play a round with us.  The rounds go pretty quickly and you will be surprised at how much you’ll learn.  You may just have a little fun along the way! 🙂
