Thanksgiving Recipe: Hugs & Kisses Cheesecake
The best for last…..yes dessert! I love dessert, pretty much any type of sweet is good with me! I started making this chocolate chip cheesecake about 10 years ago. Not sure where we got the recipe from but it has been a hit at many events. If you are looking for something delicious but different for the Thanksgiving dessert try this one out.
Hugs & Kisses Cheesecake:
- 2 – (3 ounce) packages of Cream Cheese, softened
- 1 (14 ounce) can of Sweetened Condensed Milk
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 cup mini Chocolate Chips
- 1 teaspoon Flour
- 1 prepared Chocolate Graham Cracker Crust (8 or 9 inch) OR make your own with 2 cups of Oreo Cookies and a tablespoon of melted butter.
- Hershey’s Hugs & Kisses (optional on top as decorations)
Preheat oven to 350 degrees. Mix cream cheese until fluffy; slowly beat in the Sweetened Condensed Milk until smooth. Add egg and vanilla and mix well.
Toss chocolate chips with flour and stir into cream cheese mixture. Pour into the crust.
Bake for 35 minutes or until the center springs back when lightly touched. Cool completely.
Optional – Chocolate Glaze: Heat 1/2 cup of mini chocolate chips and 1/4 cup whipping cream in a saucepan over low heat. Stir until thickened and smooth. Immediately spread over cooled cheesecake.
Optional – Decorate the edges of the cheesecake with chocolate shavings and / or Hershey’s Hugs & Kisses.
Once complete refrigerate until ready to serve. Serve chilled.

Gift Giving: Twice as Nice
Buying used toys that are in good shape works well for those of us who are on a tight budget. My girls love books and we rarely buy them new. Same goes for toys. If you can find good quality toys and books for an inexpensive price used why not get them as a gift for your kids.
Recently, Goodwill did a 50% off day on everything in the store and if you got the red tag you received an additional discount. I picked up a whole stack of books for $0.25 and some clothes (shirts, pants, skirts, dresses) for as low as $0.50. I was thrilled because the books and clothes will make great Christmas gifts for the kids. That day the following two purchases were the most fun:
Princess Baby Doll Bed
I know a little girl who will LOVE this bed for her babies! It is in excellent condition and it only cost me $4.
Lizard CD Holder
The Lizard CD Holder was a lot of fun. I have been looking for a place to put their CDs so they can access them without making a mess. It is going to be hilarious seeing their faces when they unwrap this one. The best part is I paid $3 for it.
Both the Princess Baby Doll Bed and the Lizard CD Holder were a hit with several other people at the store that day too. I was beginning to wonder if I would to make it out of the store with the two items. I was asked how much they were numerous times, one person took them out of my basket to look at, another person told me that she needs them more then I do, and a guy tried to take them from me while I was paying. Guess my excitement for finding the treasures made everyone else think they really were special, ha.
If you are on a tight budget this year, check out some of the local secondhand stores. You might just find a treasure with a bargain price tag on it that’s the perfect gift for your kids.
Thanksgiving Recipe: Mandarin Avocado Tossed Salad
We all have a recipe for the Green Bean Casserole and other family favorites. I am going to share a Salad Recipe for a side dish at Thanksgiving dinner. We adopted this recipe several years ago thanks to Taste of Home! It has a mix of colors, shapes and textures that the everyone enjoys. The whole family, including the kids, love this delicious salad. Sometimes with add in halved grapes for an extra touch to the salad.Mandarin Avocado Tossed Salad:
- 1/2 cup Sunflower Kernels
- 1/2 cup slivered Almonds
- 2 tablespoons Butter or Margarine
- 1/2 cup Vegetable Oil
- 3 tablespoons Cider or Red Wine Vinegar
- 1 tablespoon Lemon Juice
- 2 teaspoons Sugar
- 1/2 teaspoon Salt
- 1/2 teaspoon ground Mustard
- 1 Garlic Clove, minced
- 4 cups torn Leaf Lettuce
- 1 can (11 ounces) Mandarin Oranges, drained
- 1 ripe Avocado, peeled & cubed
- 1 to 2 Green Onions, chopped
Directions: in a small skillet, saute sunflower kernels and almonds in butter. Cool. Meanwhile, in a jar with tight-fitting lid, combine the oil, vinegar, lemon juice, sugar, salt, mustard and garlic; shake well. In a large salad bowl, toss the lettuce, oranges, avocado, onions and sunflower kernel mixture. Drizzle with dressing. Serve immediately. Makes 6 to 8 servings.
We usually prep everything the night before and add the dressing when you are ready to serve. A wonderfully refreshing salad for any meal.
Thanksgiving Recipe: Hendrich & Kejr Family Dressing
My Grandma Willa gave me the family recipe for the Hendrich & Kejr Dressing for our first Thanksgiving together as a couple. You can do several steps the night before to save you some time on Thanksgiving day. We have enjoyed a lot of wonderful meals and created many memories at Grandpa and Grandma’s. Thankful for a family that celebrates together.- Cook Giblets with a little salt and pepper, 1/2 cup of onions, 1 stalk of celery in enough water to cover, until tender. (It works well if you do this piece the night before Thanksgiving).
- In a large bowl put 12 cups of crushed dry bread crumbs, 1 tablespoon of poultry seasoning, 1 teaspoon sage, 2 tablespoon of caraway seed, add 1/2 cup melted butter. Pour over the bread crumbs and stir. (This can be done the night before as well). If using seasoned bread cut back on seasoning all but the caraway seed.
- Add 1 to 2 cups of hot broth and stir together. (You can use giblets for gravy use water or canned broth) stir together all of the above and add 4 eggs beaten lightly with 1/2 cup milk and stir into the above. If dressing seems dry add more liquid. (You want it to be soft yet hold together slightly).
- Sprinkle turkey inside and out with caraway seed. Stuff bird and cook according to directions on the bird. (You can bake separately as well if you choose).
- A 10 to 13 pound young bird usually takes 3 1/2 to 4 hours to cook. For gravy use chicken broth and drippings or Giblet broth and pan drippings. I go either way.
The Exploding Spice Cabinet
It had become apparent over the last few weeks that our spice cabinet was overflowing with goods. We try to keep a stocked spice cabinet (buy ones we use when they go on sale) and haven’t had any problems until recently. When my husband went to get the garlic salt out of the cabinet and a whole mess of stuff came tumbling down I decided it was time for organizing.
Our regular spices have always been in alphabetical order on the first shelf. (It really does help when you are trying to find a spice for a special recipe, my husband loves it that way too). That shelf was in pretty good shape. The second shelf holds baking items, sprinkles and bigger containers. This shelf was a little crazy and appeared to where most of the items were falling from lately. The third or top shelf was where we stored the spices we buy in bulk or extra spices when they go on sale. I pulled everything out and found what was causing all the commotion.
The problem was that since having kids we have purchased more “sprinkles”! When I pulled all the sprinkles out of the cupboard it was amazing how much extra room we had for everything else. We had Princess Sprinkles, Cars Sprinkles, some for Halloween, Fall, Colored Sprinkles, Holiday Sprinkles, Balls, Shapes, and more sprinkles. We had different 19 containers of just SPRINKLES (and none of them the same so we couldn’t just consolidate)! The girls love to help me cook and a lot of their cookies or goodies they make have sprinkles on top so while they are necessary it had gotten out of control.
The Solution was to go through the sprinkles, find out which ones were almost gone and put them in smaller container or set them aside to use soon. After re-organizing the sprinkles I even had a little empty shelf space left in the cupboard.
Sprinkles make everything taste better! Have you ever tried them on pancakes and waffles? We love our girls and sprinkles!
Thanksgiving Recipe: White Cranberry Brined Turkey
The turkey is a great part of the Thanksgiving dinner. There are so many different ways to cook a turkey……smoke, bake, or fry. If you are looking for delicious new way to cook the turkey try this one out. We have tried several great recipes for the turkey. I found this several years ago in a Ocean Spray booklet.
- 128 ounces of White Cranberry Juice
- 1 gallon of Water
- 2 cups of Kosher Salt
- 1 cup of Sugar
- 2 tablespoons Whole Black Peppercorns
- 8 cloves Garlic (crushed)
- 8 Bay Leaves
- 8 to 12 pound Whole Turkey
Mix together all ingredients (except turkey) in a 13 to 14 quart stockpot until the salt and sugar are dissolved. Place the turkey in the brine. Refrigerate turkey in the covered stockpot for 12 to 18 hours. Discard brine. Dry turkey with paper towels. Preheat oven to 325 degrees. Roast unstuffed turkey for 2 3/4 to 3 hours or until internal temperature of the thigh reaches 180 degrees.
Ouchy Toy Box
As our kids got bigger we began to notice a trend pop up. Their toys began to break, batteries died, books got torn and so forth. Almost daily (or at least it seemed) our girls were bringing “broken” toys to have us fix for them whether it was gluing a broken toy, taping a book, sewing, or replacing batteries it took time to get fix them. The girls would often hover around during the fix up process causing more delays in getting them fixed or shedding in tears when the toy truly was broken beyond repair.In our effort to streamline the toy repair in our house we created an “Ouchy Toy Box”. When a toy, book, or game broke, required repair, or was due for new batteries they would bring it to us like in the past but instead of fixing it on the spot or having it sit on our desk for days we would put the toy in the Ouchy Toy Box. Once a month or when the box was full we would set aside time to fix the toys in the Ouchy Toy Box. The best sight to see is an empty Ouchy Toy Box!
To create an Ouchy Toy Box find a cardboard box, crate, or any container that will hold a dozen or so toys. We use a small cardboard box with the words Ouchy Toy Box written on the outside. When a toy is broken the girls ask to put it in the box. Our box is up high on a shelf in the office so they cannot look into or dig through the box. The saying “Out of Sight Out of Mind” works well in this situation.
Here are our steps to repairing the toys (once a month or when the box was full):
- The night before, after the kids are in bed, we go through the Ouchy Toy Box and clean out all the toys that were broken beyond repair and throw them away. Many times they have been in the toy box for at least a couple weeks and the girls no longer remember them or ask about them. This helps us clean out the broken ones without the trauma and tears over the broken toy.
- The next day we set aside time in the evening to fix the broken ouchy toys, usually after dinner and baths. We begin the process while the girls are awake so they can see what we do to fix the toys. It gives us the opportunity to talk about why the toys are broken and how to take care of the things God gives us.
- We lay the toys out on the table or desk with a combination of tools such as glue, batteries, screwdrivers, tape, needles, thread, scissors, and anything else that we may need so we are ready to fix the toys. (This allows us to get all the repair tools out only once a month instead of getting them out and putting them away every day).
- We begin fixing the toys. As they are fixed the girls have an opportunity to play with them and then put them away in the toy box or book shelf. Depending how many toys you have to fix and the extent of the repairs we do several while they are watching us. We often start on the minor repairs first in case not all of them are fixable. (ie. taping a page in a book, sewing a button back on a stuffed animal, etc…)
- We tuck the girls in bed before finishing all of the toys. Typically, it is much quicker to repair once they are in bed especially if you need a steady hand, are using a drill or other sharp tools.
- Once the toys have been repaired we line them up on the table or fireplace for them to enjoy in the morning. It spreads the excitement and they have fun reunited with their toys. It helps teach them that it takes time to repair the toys, to trust us to fix their toys, and an appreciation for what they have.
- They will often play with the toys for hours after being fixed Which is another added bonus. Rarely do we have to fix the same toy multiple times.
One of the most interesting effects of this system, which we didn’t anticipate happening when we first started doing it, was that they have fewer and fewer toys that need to go into the Ouchy Toy Box. It could be that they have learned to take better care of their toys (turn them off after using so the batteries don’t wear down, be gentle with their books, pick up the toys so they are not stepped on), maybe they don’t like going without them for several weeks, or it could be something entirely different. Whatever the reason, it is has worked at extremely well with our kids.
Doing this monthly or regularly once the box is full streamlines the process especially if you have all the tools ready to complete the task at hand. It prevents the tear shed of toys that have to be thrown away and it allows an opportunity to teach a lesson about taking care of the toys. You are not pressured to fix it now since you have a system in place. Many people that have come into our home office have laughed initially at seeing a box labeled Ouchy Toy Box, however, several of them have since adopted the system for their own families. It works, try it!

Let us take the opportunity today to “thank” the Veterans in our lives. Also, make it a point to thank any veteran you meet today. Today provides a great venue for teaching our children who veterans are and why we have a special day set aside to honor them. We are grateful for those who serve.

Our girls have enjoyed many of the Twin Sisters Productions CDs and products from the ABCs, relaxing, fun, learning languages (German & Italian) and more. Since we have fraternal twin daughters of our own we are thrilled to support a wonderful business started by fraternal twin sisters. To get an idea of what their songs are like you can listen to them prior to purchasing. Sing & Learn (Multipacks) by Twin Sisters Productions is a good mix that of songs that the girls have been listening to for several years even though they know their Alphabet, Numbers, and so forth. Date Night on a Budget – Dinner
Going on a Date Night with your spouse can be just what the whole family needs. It is important to take time to relax and be a couple, whether you have little ones or not. Your kids may enjoy a night away too. One way to open the door of communication is by having a quiet meal together.Here are a few ways to save on the cost of eating out so you can relax when you go on your date:
1. Free Dinner Options
- Gift Certificates – if you have a gift certificate to a restaurant use it when you go on your date. Occasionally we get gift certificates for our anniversary so we save them for Date Nights. It may be something you want to ask for your birthday or anniversary as well. You can earn gift certificates by doing surveys or through accumulating points too.
- Coupons – use a coupon to a restaurant that you and your spouse are wanting to go to. If you plan ahead you can often find discounts or coupons online prior to going to a restaurant. We have even shared a free dinner at a nice restaurant by using a coupon. Sometimes you have to pay but if you look you can often get a meal for free.
- Join the Club – many of the large chain restaurants offer special discounts if you sign up for their emails or newsletters. You may get free food when they introduce a new menu item. Even your local family owned restaurants give you special offers when you join their club. Many restaurants offer free meal if you visit them around your birthday. If you have a favorite restaurant check and see they have a club you can join for extra savings.
2. Discount Dinner Options
- Restaurant.com – you can get discount restaurant certificates. We have tried many new restaurants using Restaurant.com that have since become our favorite. You can often get the certificates at a discount. The best is when you can get them at 80% to 90% off. We stock up when they are at a deep discount and it allows us to have plenty of options to chose from for Date Night. The certificates last for one year so you have plenty of time to use them. Try it out and see how you like it!
- Barter – there are many barter programs available such as Tradebank or you can work something out with the owner of a restaurant or chain. If you have services or products that they can use. We have friends that provide a service for a restaurant and they get coupons for free meals. It is worth checking out.
- Groupon – has daily deals that you can get between 40% to 90% off. Many times Groupon will offer great discounts on restaurants. When you purchase a certificate you have up to a year to use it. Select the area closest to you to find out the deals in your area.
- Pack a picnic for a nice dinner at a park together. You can pack a really wonderful romantic picnic for a great price. Pick out a favorite food you know your spouse will like for an extra special treat. It shows your love. Some of our best Date Nights have been relaxing over a picnic at a park.
You can have a wonderful dinner with your spouse without breaking your budget. It is important to take time to talk, relax, and enjoy each other. Take turns planning where you are going. One month you plan the meal the next month your husband plans, it allows for some great surprises and extra romance!
Jake and I try to have at least one date night a month because it is important to us to maintain and grow our marriage. Communication around the typical family meal is more about the kids and the events of the day then on us as a couple. Although we may be in a season when the finances are tight we can still have a terrific date night together. The laughter, deep conversations, and a time of relaxation is worth finding ways to make it work logistically and financially.
