    Our last full day on the cruise! The week went by too quickly, but it was relaxing, packed full of great memories, and wonderful having extra time together! We need to do this more often Jake Hayes! 🙂 Thankful for an opportunity to celebrate our 15th Anniversary and looking forward to many more amazing years together with this handsome man! XOXO

  • Travel & Vacation: Beautiful Roatan, Honduras

    Visiting beautiful Roatan, Honduras! It was a sunny day in Roatan and we did probably one of my favorite ocean activities so far – Snuba! I LOVED it!!!! We were able to go down 25 feet and explore the bottom of the ocean. The ocean ecosystem was fascinating! All the sea grass, fish, coral, sand, and everything moving smoothly and peacefully in the ocean was simply AMAZING! I would do it again in a heartbeat! We were each hooked to an oxygen tank and could go down to 25 feet without needing to come up for air. Snuba is kind of a cross between snorkeling and scuba diving! If you have a chance to try it do it. It was much more gorgeous then even the pictures reflect!

  • Travel & Vacation: Visiting Belize City, Belize

    Visiting Belize City, Belize! We had a wonderful day learning about the country of Belize, seeing the area, going to Jaguar Park (thankfully we didn’t run into any real jaguars), going zip lining, and floating through massive caves on an inner-tube. Plus a great time that evening on the ship at dinner and the shows. It was a fun day!

    Exploring Cozumel, Mexico! We had a blast sight seeing, meeting people, shopping, and going Snorkeling at 3 different reefs during our day in Mexico. We even got to talk with the girls for a tiny bit because we got cell phone service while walking through the area!

    15 years and counting!

    We cruised the Gulf of Mexico on our 2nd day of our 15th Anniversary Celebration! We woke up to a beautiful sunrise, explored the ship, played card games on the balcony, tested our surf boarding skills, tried a round of Bingo, took a nap, ate amazing food, saw a gorgeous sunset, went to shows and more fun. Thankfully I married a man that not only loves me, but has a large amount of patience!!! It was our first formal diner night and I “attempted to do a new hairstyle” (let’s just say it didn’t turn out great after over an hour working on it so I went back to my usual style for that night).

    We enjoyed watching both the sunrises and sunsets from the balcony.  Gorgeous and peaceful!

  • What’s for Breakfast: Easy Breakfast Clowns

    On this particular morning I was already up early and decided to do a little extra surprise for breakfast.  Although, this doesn’t happen every morning in our house because some days it takes everything I have just to get through the necessary steps to get everyone out the door for work and school.    Each girl got two  blueberry pancakes,  two sausages cut into half, and fresh grapes and strawberries for their main breakfast.  They also got their normal milk, juice, and multivitamins.  The girls are always excited to see something different at the breakfast table.  Seriously, sometimes the silly and simple things like the Easy Breakfast Clowns are all it takes to brighten their day.  It never hurts when you get the day off to a good start!

    Tip:  I like to make up a large batch of blueberry pancakes whenever we have them and freeze a bunch for future breakfasts.  It is easy to pull out a few frozen pancakes and have breakfast ready in a few minutes (plus there’s less of a mess).

    We are pretty consistent with our week day breakfast menu.  For each day of the work and school week Monday to Friday we have the same main menu item from week to week the only thing that changes is the “extra item” we add each day such as an egg, sausage, fresh fruit, cottage cheese, bacon, smoothies, or other items that we have in the kitchen.  During the school week the girls always have their main breakfast, at least one side (usually fruit, sausage, egg, etc…), vitamins, milk (one has non-dairy milk due to allergies), and small glass of juice.  When I am ambitious, awake, and my creative juices are flowing I will add a little extra silliness to make breakfast more enjoyable for the kids.

    Here is what our breakfast menu looks like this week (the items in parenthesis are examples of the extra items we will add and change from week to week):

    • Monday – English Muffins (Egg)
    • Tuesday – Toast (Cottage Cheese)
    • Wednesday – Cereal (Smoothie)
    • Thursday – Pancakes, Poptarts, or Oatmeal (Fresh Fruit)
    • Friday – Bagel (Bacon)
    • Saturday – Family Brunch (a lot of times we make Saturday breakfast together and it is whatever sounds good that morning or a new dish we want to try out.  It is not always planned in advance and could be an egg or breakfast casserole, omelets, hashbrowns, waffles, pancakes, etc… this is our big family meal of the day since Saturdays are often spent with extended family, friends, or doing other afternoon and evening activities)  Since we make more complicated breakfasts on Saturdays it is usually between 8 to 10 before we sit down to eat therefore they have become our Family Brunch.
    • Sunday – Make Your Own Breakfast (everyone makes their own breakfast before church which is usually something easy like cereal, toast, poptarts, oatmeal, smoothie, etc….)

    We first started doing a different main breakfast item everyday a few years ago because I have one child who if she eats the same thing too many times in a row she stops eating.  Adding a little variety from day to day was enough to keep her motivated to eat breakfast.  It wasn’t until several months later when the girls pointed it out that I realized that we do the same main item on the same day every week.  “Mom, Tuesday is Toast Day…..”  So now it has become our rotating breakfast menu which helps keep us on track because we know exactly what we need to prepare for the next breakfast.  Plus the girls are sometimes still waking up when they come to breakfast and the morning menu helps them figure out the day of the week as well as prepares them for the upcoming activities they have that day.

    There are times I will mix it up (just for fun) or Jake will get up first and make breakfast!  The girls don’t hesitate to let him know if he makes a main food item on the wrong day….ha!  Our breakfasts are not fancy, but it gets us up and started for the day.  What do you make for your family breakfasts?

  • Travel & Vacation: Food & Fun in Hyderabad, India (Part 2)

    Anyone want some fresh fish for dinner?  This is the display of fresh whole fish in the market, you could smell it long before you could see it!

    Whole green curry chicken in the bakery ready to take home for dinner.  It looks a little interesting but their curries were pretty good, however, I did not try this one.

    This one in the meat section kind of made me sick looking at it……goat mutton.  You could by goat brains to cook up for dinner (from what I hear it is a real treat).  Not sure if I could muscle through this one and pretty sure the girls would have a hard time too because goats are “pets not food” in their little world.

    What a great place to eat, the kids seem to LOVE it!  Very neat idea for a restaurant…..an auto-rig shaw with a table and booths for families.  The kids can play and drive it too!

    The shark mouths (see the teeth) have “digustive” salts in the bowls.  I didn’t try these because I noticed several people just using their hands to dip into the bowl instead of using the bowl to scoop it.  Love the table too, the stand is a stack of tires!

    The receipt for the dinner litteraly came in a tin “bill box”.

    And the best is for last……dessert!  Carrot cake and vanilla ice cream.  The ice cream tasted different from what we get in the USA, it almost had a creamier texture.  The carrot cake was good but not quite like my Mom’s homemade carrot cake! 🙂

    Really neat Dadu Maluj Sandwiches with cool outer decorations on the outside that looked like alumimum fool and paint but it was edible.

    Large waterfall outside another one of the Ohri’s restaurant buildings on the other side of town.  Most of the Ohri’s buildings had several different types of restaurants in one building.  You could choose to eat Indian, Chinese, American and once you get into the building.  Some of them you had to book a reservation in advanced to get into they were so popular.

    We went to one of Ohri’s really popular restaurants an India buffet.  On this plate is a variety of meat cooked with Indian spices to try.

    AMAZING Indian dish (I wish I could remember the name of it)!  It makes my stomach growl just looking at it.  It was a mix of sweet and crunchy, but it was a beans and meat mixture….so delicious!

    One thing I didn’t realize until going over to India was they enjoy what we call “crunchy chicken”!  It is normal to be eating a chicken dish and find a bone.  I think they do it to add more flavor to the meal but it surprises you the first few times.  You are just more careful when you eat chicken!
