  • Living on a Budget: You CAN Walk Away with Empty Hands

    You can walk out of a store without buying anything…..really it’s okay!  Earlier this month I went into Walmart with the intention of purchasing an item.  I had received a $5 coupon for a particular item in the mail and a few weeks earlier I noticed that item for $6.  When I went in they no longer had it at the same price and the least expensive item of that brand was over $10 so I decided it just wasn’t worth it.

    Walmart is one of those stores it is hard to walk out of empty handed, but since the item I went in for wasn’t within my budget and I didn’t need anything else I left without purchasing anything.  The store was on my way home so I didn’t waste any extra gas in going to the store.  In some ways it was empowering to walk out of the store without anything except my purse in my hand.  There was a time in my life it would have been a lot harder to do that.  I am thankful for a husband who helps me stay accountable with the budget so we can have the opportunity to share with others.

  • Travel & Vacation: Great Parks in the Charleston, SC Area

    We found a cute little park on Daniel’s Island, SC with a lot of shade and water fountains (thankfully since it was over 107 and humid that day) only a couple miles down the road from where Jake was working.  This was the most entertaining part on the whole jungle gym!  It was a moving bridge!  You could get on it at one location of the jungle gym and either have someone push you across or you could stand at other side and spin a wheel that pulls you across to the other side of the jungle gym.  The girls (and Mommy) where fascinated by this cool moving bridge and it provided quite a bit of entertainment for all of us!

    Karlie thought this wall in the park was awesome!  She would climb up, sit for a few minutes watching everyone and talk anyone nearby then get down.  I think she liked being up higher and over looking the park!

    She thought it was hilarious going through the random tunnels and would giggle when she “caught” me watching at her!  So sneaky!

    These bubble blowers were such a HUGE hit!  It was so cute seeing Brina just checking out it’s face, it really was a bug friend to her!

    I tried to find these again this year but they must have sold out.  When you blow through the tail of the dragon fly the silver wings spin and a lot of bubbles come out of the dragon fly’s mouth.

    This was shortly before a wave of bubbles came my way.  Brina thought it was awesome blowing dragonfly bubbles my direction!

    The Waterfront Park under the Arthur Ravenel Bridge is one of our favorite parks to hang out at in Charleston.  It always has shade from the bridge and has very clean restrooms and a cold water fountain.

    The Waterfront park is a great place to hang out before going into Downtown Charleston.  You can play in the park, walk on the pier, enjoy ice cream from the snack shop or watch free movies in the evenings during the summer months.

    Karlie content to relax for a few moments against the boat’s railing.  This little park is in front of the Information Center for Daniel’s Island right next to a pier.  The girls really liked this park even though it did not have a lot of shade, a restroom or water fountain they still requested to go to this park to walk the pier and “pet” their turtle friends.

    An inside shot of the boat.  The girls and Daddy were having a fun decision about boats by the time I got their.  Jake had to be melting that day, it was well over 100 degrees and he was in pants and a long sleeved shirt.  Thankfully he was okay going to the “turtle park” to have a picnic with his girls over lunch despite the heat.

    Karlie and Brina on the top for the jungle gym at a park across from one of the Daniel Island schools.  I was thankful for the higher railings at the top since they one was a good distance up.  They thought it was so funny how little Mommy looked from WAY up high!  It was over 108 degrees that day and no one else was brave enough to play on the jungle gym (or maybe they were smart enough to stay inside).  This park had really nice restaurants but the water fountain was broken.

    This is the Mt. Pleasant Palmetto Islands County Park.  It has a wide area with the rubber padding.  The girls loved playing at this park.  You could also rent paddle boats, go to a Water Park or go on a hike.

    The girls loved being “big” enough to climb up to the top of the tallest jungle gym and go down the long slide.  It took them several tries to work up enough courage to get up the climbing wall or pole but it was well worth it!

    The girls liked spinning and spinning in the yellow tire swing.  It made me sick just spinning and watching them after a few minutes.  They thought it was hilarious to jump off and run across the playground after spinning for several minutes!

    She could spin herself but her preference was to have me stand beside her and spin until she said that was good.

    They literally wore out their flip-flops on this Charleston trip.  Since we were staying in a different location we were able to visit several parks and they girls played hard.  We tried to meet Daddy over lunch most days to take him on a picnic to one of the cool parks the girls have discovered, if we didn’t get a chance to go with him over lunch they would insist he check out the parks after dinner in the evening.  The girls were very good despite the heat during our visit to Charleston that week!  Although they would crash by the time we got back to the hotel at night, they were ready to head back out at the break of dawn!  What amazing memories we made during our park explorations in Charleston!  We are already looking forward to our next trip together!

  • Living on a Budget: Creative Cash (September Update)

    September is my eighth month tracking my Creative Cash.  What is Creative Cash?  Creative Cash is finding ways to come up with extra cash to share with others as well as work on our current goal.  I am working part time, a stay at home Mom, and wear many other hats from day to day, however, I feel that it is important to save money for our family by using coupons and buying items on sale but to earn a little money to help with the extra expenses and to share with others.  The extra amount I bring in on top of the work is what I call “Creative Cash” which means finding ways to make money creatively or with items and talents I have already.  I plan to continue this goal for the remaining months of the year.  Despite the many financial obstacles that we have faced as a family we have been blessed with so much.  My husband and I believe it is important to be accountable with our finances and give to others.

    Explanation: The creative cash will be made throughout the entire month through various endeavors.  As it comes in the money is placed into our savings account and withdrawn at the end of the month so it can be split.  It is my goal to make at least $100 extra a month to help with our goals as well as share with others.  At the end of the month the money will be split 50 / 50 with half going towards our current goal we are working on (which at the moment is paying down debt) and the other half going to charity.

    To be honest September was not a great month, however, it was better then August.  In August I wasn’t able to do any extra activities to generate creative cash; our family had several out of town trips, guests, events, and a lot of other activities in August that took up the extra time I had available.   I am thankful that we have had the opportunity to travel together as a family and create many great new memories, however, the creative cash has been effected by it.  Although life is still busy we are at least home more now giving me the flexibility to focus on this goal as well as other ones.  I anticipate October being another busy month but now that the girls are back in school life will once again return our new “normal” and I hope to come closer to meeting this goal.  Thankfully I was able to save some extra cash even though I did not reach my my goal of $100.  I want to share with you the ways we did it so if you are looking for ways to make a little extra creative cash for your family hopefully we can be an inspiration in getting your creative juices flowing:

    • $7.97 – Items sold on Ebay (after fees):   The all the items sold were coupons.  I encourage you to look around at some of the coupons you get the mail, newspapers, magazines, in your stockpile, or other places and if you will not have the opportunity to use them then consider selling them for a little extra creative cash.
    • $39.00 – Other miscellaneous amounts earned  (rebates, returns, cash back,  extra money, etc…) that was added to my stash for the month.  Most of the cash this month was from a rebate check I received.

    It was a harder month to set the extra aside because it was very busy and I was not able to participate in as many extra creative cash activities.  The good news is despite the crazy schedule I was able to get a few dollars of creative cash.  September’s “Creative Cash” total was $46.97 which means $23.48 extra that goes towards our current goal (saving for 3 to 6 month Emergency Fund) and $23.49 goes towards charity.  I didn’t hit my $100 goal this month.  It has been really busy with school being out part of the month and traveling with the family.  I am happy that I was able to contribute something this month and every little bit helps us get a little closer to our goals as well as helps others along the way.  I have a plan of action on ways to earn creative cash in October so stayed tuned, hopefully, it will be another month where we can get closer to our goal and share with others.  Each month I do a variety activities to accomplish this goal, the items above are just the ones I did specifically in September.  I look forward to sharing more of the things that work well for our family as I do them in the upcoming months.

    I will share with you the challenges, successes, and updates as I go through this journey so you can keep me accountable or even go through it with me by participating  and sharing your story. Taking the extra time to find ways to help our family as well as invest in the lives of others is important to us.  I hope that we have been able to encourage you to find ways to come up with some creative cash for your household as well.  Obviously, each situation and family is unique so decide what works for you and go for it!  Do you know of another way to earn creative cash?   I would love to hear your idea!

  • What’s for Dinner: Our Weekly Menu Plan

    Last week our menu plan went well.  I think the entire family enjoyed having dinner on the table at a specific time and it was a lot easier for me to prep as well as pull the meal together because I know exactly what we are eating each day.

    Our Weekly Menu Plan

    • Monday (Beef Entree):  “Back to School” Night at the girls school (dinner is part of the event)
    • Tuesday (Seafood or Pork Entree):  Peppercorn Pork Tenderloin, Mash Potatoes, Pearsauce
    • Wednesday (Chicken Entree):  Honey Mustard Chicken, Whole Grain Rice Pilaf, Mixed Fresh Fruit Salad
    • Thursday (Pasta or Vegetarian Entree):  Vegetarian Chili, Easy Summer Vegetables, Cornbread & Crackers
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

    I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef entree, Tuesday a seafood or pork entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

    Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.

    I am starting to get into a new rhythm for the month of September now that school is going full swing.  It has been been a couple weeks of  adjusting to new schedules and activities, but thankfully everyone seems to be doing really well.  As I was looking over the schedule and trying to come up with ways to make it more efficient I realized that it was necessary to make my dinner menu official.  I have always had a general patterned I followed and backup meals prepared just in case it was “one of those days” but recently I caught myself standing in front of my open pantry at 5:34 PM trying to decide what to make for dinner.  As I reviewed my week I decided in order to make the  evening go smoothly for the entire family I must plan our dinner ahead of time.

    Our Weekly Menu Plan

    • Monday (Beef Entree):  Lasagna, Salad (Lettuce from Garden & using Hidden Valley Ranch Salad Kit for toppings), Garlic Bread
    • Tuesday (Seafood or Pork Entree):  Garlic Butter Grouper Fillets, Steamed Cauliflower, Broccoli & Rice Au Gratin
    • Wednesday (Chicken Entree):  Italian Herb Chicken, Roasted Parmesan Potatoes, Broccoli Coleslaw
    • Thursday (Pasta or Vegetarian Entree):  Garden Vegetable Pasta, Fruit Salad
    • Friday, Saturday, & Sunday:  Leftovers, Work Party, and Hosting

  • Summer Activities – A Hammock Full of Memories

    A few months ago for Mother’s Day Jake gave me a hammock!  It wasn’t until this Summer that I realized how much the gift meant to me.  As a family we have spent some wonderful time together talking, laughing, reading, and just relaxing together in the hammock.  Jake hung the hammock in the shady part of our yard near the jungle gym, swimming pool, and where I can see the majority of the yard, house and driveway.

    Once Karlie was done swimming she ran inside the house to change so she could have some relaxing time on the hammock with Mom and Dad.  I cannot count the number of times she has fallen asleep on the hammock as we enjoy time together.

    The girls love getting a chance to swing on the hammock with Mom and Dad.  They have a blast talking about anything and everything.  It is a great location to have some heart to heart as well as reminisce about all the fun memories we have together as a family.

    After Skipper has made a complete loop around the entire property she will settle down at a spot right next to the hammock.  She occasionally will look at us but for the most part she is checking out all the activity in the woods and creek area.  Although she has never been on the hammock she seems to enjoy it when the entire family is outside nearby.

    Every once in awhile when we are on the hammock the girls will fall asleep.  It is such a great place to spend a few moments together.  Life has a way of getting so busy that we need some time to stop, focus on each family member, enjoy being outside and relax.

    This is the view looking up from the hammock.  You can enjoy the beautiful trees, baby blue sky, and white puffy clouds floating by.  Just looking up and watching the leaves rustle in the breeze and the clouds drifting by makes the time relaxing even better.

    I have gone out many times over the last few months to relax, read, think, pray, do my devotions, write, brain storm, or hang out with Jake and / or the girls.  I am thankful for a thoughtful husband who gave me a gift that not only helps me relax but to slow down and enjoy a few precious moments with him and the girls.  Our hammock is so much more then just a hammock it is full of relaxing moments sharing memories together as a family.  Sometimes it is the simple things in life that make the most treasured memories for our children.  I am already looking forward to watching the leaves change colors as we move closer to the Fall season.

  • Living on a Budget: Groceries $40 for 4

    We were back to traveling again for part of the week so it was more of a challenge getting the grocery shopping trip into the schedule.  It was our last family trip before the kids go back to school which included some work, exploring the area and going to the beach.  Here is my weekly update on our Groceries $40 for 4.

    Groceries from Ingles and BiLo

    Ingles Groceries:

    • $13.37 at Ingles for 4 boxes Fiber One Strawberry Yogurt (4 count each), 4 boxes Danimals Yogurt Strawberry / Vanilla / Peach (6 count each), 1 Broccoflower (part Broccoli and part Cauliflower), 2 bags of Sugar Snow Peas, 1 container of Grapefruit Juice, 2 bags Broccoli Coleslaw and 2 chunky mild Guacamole Dips.  (all the items were marked down on clearance for $0.50 to $0.99 or on sale plus I used a couple coupons from the yogurt boxes)

    BiLo Groceries:

    • $3.52 at BiLo for 1 gallon of Milk.  (BiLo has the best prices in our area for milk, plus if you bring your own bag they will give you 5 cents off per bag you use, of course I forgot my bag in the van when I ran into get the milk real quick).

    This week I spent $16.89 on groceries.  Even though I was under my budgeted amount for the week I was able to stock up on several items on clearance plus I will have a little extra left over for upcoming weeks.    I hope that next week is an even better week and we can come under budget for the week even though we will have out of town guests staying with us for a few days.

    It is my goal to give you regular updates on this budget section so you can celebrate the good weeks with me and thump me on the bad weeks!  As always you are welcomed to join the journey with me.  I would love to hear your story and how you are doing too.  The purpose of our family doing this it to watch our grocery spending while allowing us to feed our family, enjoy life, share with others, and yet stay on track with our budget.

  • Craft Activities: Silly Yard Animals

    During the summer I came up with a variety of fun activities for the girls to enjoy.  As I was going through the craft cabinet I pulled out google eyes, fuzzy sticks, pom poms, and glue!  A lot of fun crafty ideas can happen with all these great items but I had a specific purpose in mind – Rock Animals!  Rock Animals are always a huge hit and can occupy the girls for hours.  Here is how to much Rock and other Nature Animals!

    Step 1

    Items for the craft – Google Eyes, Fuzzy Sticks, Pom Poms, Scissors and Glue

    We are ready to get creative with Fuzzy Sticks, Glue, Google Eyes, and Pom Poms!

    Step 2

    Have each child gather a pile of rocks, sticks, leaves, sea shells and other items from the yard.  The kids are usually so excited to get started this step only takes a few minutes!

    Karlie gathered some rocks, sticks and leaves to make into fun animals!

    Step 3

    Once they have a pile of goodies from the yard help get them started on making their “animals”.  I make sure the glue is ready to go, the craft is going smoothly, and answer any last minute questions before giving them the freedom to be creative!

    Let the kids imaginations go wild creating their own animals!  Here are a few of the creations our girls came up with during their craft time!

     I was thrilled to see them come up with “glasses” for their animals especially since our entire family (including the kids) wear glasses!

    Brina found several sticks and had a blast creating animals out of them!

    She started out making the three eyed alien from “Toy Story” but decided it looked more like a shark, one of her favorite animals (she has been fascinated by sharks since she was 3 years old).

    Brina found a brick in the rock garden and made a happy brick animal out of it (with glasses as well).

    I was excited to see them find and create a variety of different yard objects.

    They found the various objects and were able to create the animals on their own.  Although we went through A LOT of glue, so make sure to have plenty on hand!   The rock animal craft kept our girls entertained for hours!  It was so much fun checking out all their neat animals and hearing their stories behind each one.  They left several of their treasures on the front porch to show their friends, family and neighbors.   Skipper decided the pom poms were too irresistible and managed to remove a few from their animals so the girls spent the next day patching a few of their rock animals.  The girls had a blast and it only cost me a couple dollars for all the supplies!

  • Recipe: Creamy Cucumbers

    The fresh Green & Yellow cucumbers from our garden are now Creamy Cucumbers.

    Growing up my Mom and Grandma made this delicious creamy cucumber recipe from the fresh garden cucumbers.  I always looked forward to eating it every summer.  Now that we have a garden of our own we enjoy making this for our family and sharing it with others. If you need to use up some of those garden cucumbers and are looking to try a sweet, creamy and refreshing recipe try this one!

    Creamy Cucumbers:

    • 1 cup Mayonnaise
    • 1/4 cup Sugar
    • 1/4 cup Vinegar (white or apple)
    • 1/4 teaspoon Salt
    • 4 cups sliced Cucumbers

    In a bowl combine mayonnaise, sugar, vinegar, and salt.  Add cucumbers and stir to coat.  Cover and refrigerate for 2 hours.

    I will often make a half of recipe and it is still plenty for our family.  It is a great cool side dish for summer meals!
