    Heading to the Children’s Museum of the Lowcountry

    While we were in Charleston over Spring Break we made a trip to the Children’s Museum of the Lowcountry.  We haven’t been there before so the girls were very excited.  We headed out first thing Wednesday morning to downtown Charleston so we could be there when it opened to go exploring. The girls had a blast playing in all the rooms from being creative in the art room to checking out all the nooks and crannies in the castle, splashing around in the water wise room, experimenting with golf balls using Newton’s Laws, steering the pirate ship, shopping for groceries, and all the neat games outside too.

    We had only been there for a little while and McCown Bridges came to welcome us as well as let us know about the upcoming events.   If you are in the Charleston area and want a fun place to take the kids you should check out the Children’s Museum of the Lowcountry!  Here are some of the highlights of our trip to the Children’s Museum of the Lowcountry.

  • Travel & Vacation: Rides & Celebrate A Dream Come True Parade (Orlando, FL)

    We went on several rides at Disney with the kids and had a lot of fun!  We were thankful for friends who guided us in the right direction and recommended certain rides for the kids.  There were some hilarious shows we went to as well.  A few rides the kids loved so much we went on them several times! 🙂  You can read more about our trip in the Walt Disney World post.

  • Intentional Living: Weekly Goals

    We had a BLAST last week spending some extra time with Jake’s cousins kids.  They were great kids and we had fun reading, playing, and exploring together.  It was neat having a 1 year and 2 year in the house in addition to 2 – eight year olds! 🙂    Hoping to get caught up on a lot of projects this week!

    1. Read Imagination Station: Peril in the Palace by Marianne Hering and Paul McCusker (Book 3) finished reading and started on the next one! 🙂  I love that the chapters are short so it is easy to read one right before devotions and bed.
    2. Plan one special Activity with the Family
    3. Play a board game – played a couple little kids games (the favorite this week with the younger ones was “Don’t Break the Ice”)
    4. Lunch Boxes & Book Bags packed the night before – we had a couple field trips, special events, and a busy schedule with little ones running around this week so we didn’t get our lunches packed every night this week
    5. Daily School Activities & Homework Completed
    6. Attend After School Activities
    7. Take care of, play, and enjoy extra time with the little ones staying with us this week – it was a lot of FUN!!! 🙂 

    Personal Goals

    1. Exercise at least 5 days this week – Ummm…..I didn’t do my official exercises (does it count lifting little ones all week)?
    2. Drink 8 glasses of water each day – was pretty busy and notice I got behind on my water a couple days last week
    3. Continue my YouVersion plan(s) – hoping to catch up this week
    4. Finish reading One Thousand Gifts by Ann Voskamp – was catching up on a book that I needed to read for an upcoming meeting
    5. Finish reading Overcoming Dyslexia by M.D. Sally Shaywitz (someone gave me this to read) – made a little progress in the evenings but not as much as I hoped

    I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

    Why Share My Goals?

    • To keep me accountable
    • To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
    • To have my goals consistently written down so I can gauge progress more accurately
    • Create healthy habits in my life

  • What’s for Dinner: Our Weekly Menu Plan

    This past weekend we got to spend some time with my parents who were in town, celebrate my nephews birthday, and spend some time with our family and two cute kids.  The week is packed full of activities, it should be fun being a family of 6 for awhile too.  The menu plan is especially important with everything that is going on this week.  Here is our menu plan for the upcoming week:

    Our Weekly Menu Plan

    • Monday (Beef or Seafood Entree): Green Bean Tator Tot Casserole, Fruit Salad
    • Tuesday (Kid’s Night to Cook): Homemade Pizza, Steamed Vegetables
    • Wednesday (Chicken or Vegetarian Entree): Chicken Calzone, Fresh Fruit
    • Thursday (Pasta or Pork Entree):  Roasted Pork Loin, Vegetable Bake
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

    I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or seafood entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

    Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.

  • Intentional Living: Weekly Goals

    We had a wonderful Spring Break with the girls.  Last week Jake had to work for a few days in the Charleston so we went with him.  It was nice to hang out together with family and create new memories.  This week we are back to the normal schedule with school back in full swing.

  • Starting to Plan the Kids Summer Break

    Even though we have only just hit the Spring Season and entered into the month of April we are already making plans for this summer.  I was looking back through our schedule last year.  It was packed full of fun, adventures, and a lot of great memories.

    As I get ready to plan for this summer I am remembering all the good stuff we were able to do last year.  Although, I cannot know for sure what this summer may bring I am moving forward with the planning.  The picture above shows the girls brief version of our calendar for July 2012.  The calendar was simple but it helped them keep track of the big events and activities that were coming up.  We kept it on the fridge so they could see it whenever they wanted, typically they would cross out the days as they ended.

    What we would like to do:

    • Travel – last summer we visited Charleston, Florida, Kansas, and Colorado.  We are not entirely sure what it will look like this summer but we are hoping to go to at least Charleston and Kansas again.  Thankful that the girls travel well! 🙂
    • VBS – the girls love VBS and have a great time.  It also provides great opportunities for learning too.  We would like to attend at least one VBS program this summer.
    • Camp – last summer the girls attended Swim Camp as well as Horse Camp.  We would like for them to go to at least one camp this summer.  They are currently signed up for WeDo Robotics Lego Camp at Roper Mountain Science Center and Swim Camp.
    • Participate in the Library Summer Reading Program – the past 3 years the girls have participated in the Summer Reading program and have enjoyed it (as a bonus they usually earn rewards & free tickets to special events which help motivate them even more).  We plan to participate in the program again this summer!
    • Learn & Explore – we went to several educational places over the summer like Roper Mountain Science Center, Battery Park, took a Historical Carriage ride in Charleston and more.  We plan to do more educational adventures this summer, some may be the same or similar, but we are hoping to branch out and try some new activities too!
    • Relax – all the activities above are important but it is also valuable to have some time built in to rest, free time, play, and relax whether that means swinging, playing in the yard, drawing with chalk, hanging out with family, friends (and pets), riding bikes, roller skating, riding scooters, etc…

    It doesn’t seem like a lot of activities but if you figure in the traveling and the fact that we only had two months of summer vacation we really did pack a lot into it.  We hope to make the most of our summer break this year by planning some of our adventures in advance.  It will be nice to catch up with some family, spend time learning, and make some great memories.  What are your summer plans?

    I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us.  I want to live intentionally not just hope all my dreams and goals come true.  When I focus on small steps of improvement I am able to see results as I get closer to my goals.  Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick).  Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

    Why Share My Goals?

    • To keep me accountable
    • To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
    • To have my goals consistently written down so I can gauge progress more accurately
    • Create healthy habits in my life
    • To encourage you to share your goals with me as you continue to grown and learn

  • What’s for Dinner: Our Weekly Menu Plan

    Looking forward toward a normal week with the family.  We are finally get back into a more normal routine again.  Hoping the menu plan will help keep us on track so our evenings will go smoothly.  Here is our menu plan for the upcoming week:

    • Monday (Beef or Seafood Entree):  Beef Taco Calzone, Corn
    • Tuesday (Kid’s Night to Cook):  Pasta Dogs, Fresh Fruit
    • Wednesday (Chicken or Vegetarian Entree): Curry Chicken, Jasmine Rice
    • Thursday (Pasta or Pork Entree): Grilled Seasoned Pork, Steamed Vegetables
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

    I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or seafood entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

    Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.
