    Brina's Christmas Cookies

    A plate full of yummy egg and dairy free sugar cookies to enjoy!

    I love having my kids home for the Christmas Break!  It is always nice having extra time with them to have fun, relax, and do creative activities together.  Brina wanted to make Dairy and Egg Free Christmas Sugar Cookies so she make a batch, rolled out the dough, cut out the shapes, cooked, frosted, and sprinkled the sugar cookies.  The only thing I helped her do was get the hot pan out of the oven, but otherwise she did it on her own.  So excited to see her start doing more in the kitchen!  Yes, the cookies were delicious too!

    Earlier that day Brina asked me to braid her hair!  She wanted to wear it that way all day so she can have a crinkly hair style!  Plus, it is probably a good hair style to wear when cooking in the kitchen.

  • My Little Chef: Making Blue Raspberry Cookies

    When I am in the kitchen and Brina is around she is always willing to pitch in and help.  She is becoming more efficient cook as she gets older.  Recently, she decided to whip up some blue raspberry sugar cookies as  a “Welcome Home” goodie for Jake who was arriving home that day from a work trip.

    When he is away on a work trip we always try to make or pick up something special for him to have when he comes home.  It is important to us to make sure he knows how excited we are to have him back home again.  It is always so much better when the whole family is home together!

    I am so thankful for kids that enjoy helping out in the kitchen.  The girls have fun helping out in the kitchen and learning some great lessons along the way too.  Grateful for my girls!

  • School Projects: Inside Your Feet Cookie Creation & Writing Assignment

    The girls recently had a writing assignment that they had to do for school.  Karlie came up with an Inside Your Feet Cookie creation.  For extra credit they could make their creations and share them with their classmates and teachers at school.  We came up with a cookie creation using all the ingredients she mentioned in her writing assignment and they turned out fairly well.  The cookies were a perfect treat to share with her classmates instead of cupcakes on Halloween.  Brina also did a cookie creation and writing assignment called The Eye Ball.

    A few days before the actual assignment due date we did a trial run and experimented to make sure we could make her “skin, blood, bones, and ankle joint” to reflect the Inside Your Feet cookie as accurately as possible.  We tried white sparkle writing gel (bottom right) but is blended too much, we tried straight white sprinkles (bottom middle) it was a lot of work and hard to get straight, we tried round white sprinkles (bottom left) too difficult to get straight, we tried pearl balls (top left) wasn’t too bad and would have been a more do-able option, and the final attempt was our favorite and probably the easiest option too, we used white writing frosting.

    We didn’t have any feet cookie cutters and the stores we checked didn’t carry any so Jake made a set we could use with his 3D printer.  Once again it saves the day!

    Up close of the Inside Your Feet Cookie

    Inside Your Feet Items:

    • Sugar Cookie Dough or Brownies(we did some of each)
    • Red Frosting (or white frosting with red dye)
    • White Writing Frosting
    • Red and White Mint

    Make your favorite sugar cookie dough or brownies (your can make from scratch or buy a mix).  The sugar cookies seemed to look more like feet with toes, but the brown mix had less steps to put together.  Make your sugar cookie dough, roll it out, cut out your feet, and bake.  OR Make your brownies first and cut out your feet after they are baked and cooled.

    Once the cookies are cooled you can decorate by putting red frosting on the cookie.  We did not go to the edge of the cookie with the frosting because Karlie wanted to show the layers of the Inside Your Feet Cookie (bottom – skin, frosting – blood and muscles, white – bones, and mint – ankle joint).  Next add your red and white mint.  Draw your foot bones with the white writing frosting.

    The cookies turned out well and were a big hit with Karlie’s class.  It was a lot of fun putting together with her.

    What the different parts of the cookies represent:

    • Bottom Sugar Cookie or Brownies- skin
    • Red Frosting – blood and muscles
    • White Writing Frosting – bones
    • Red & White Mint – ankle joint

    3D Christmas Tree Sugar Cookies

    My friend Ashley at Reflecting on the Simple Things in Life brought over some amazing Christmas cookies earlier this month.  They were delicious and they were a huge hit with our family!  We have one family member that is not eating dairy and eggs so I adjusted Ashley’s recipe a little bit and the cookies came out delicious and beautiful (you would never know they didn’t have eggs and dairy)!  My Mom gave the girls these super cute 3D Christmas trees which the girls loved decorating and putting together.  Thankful for some time to spend with the family and enjoy special treats!

    Sugar Cookies

    • 1 1/2 cups Non-Dairy Butter (soy or almond), softened
    • 2 cups Granulated Sugar
    • 4 Egg Substitutes (Ener-G Egg Replacer is our favorite and lasts a long time too)
    • 1 teaspoon Vanilla Extract
    • 5 cups All-Purpose Flour
    • 1 teaspoon Salt
    Cream non-dairy butter and sugar until smooth.  Beat in egg substitute and vanilla.  Add flour, baking powder, and salt. Mix well.  Place cookie dough in plastic wrap and refrigerate overnight.
    Next day:  Roll out dough on floured surface 1/4 – 1/2 inch thick.  Cut into shapes with any cookie cutter.  Place cookies 1 inch apart on ungreased cookie sheets.  Bake at 400 degrees for 6-8 minutes.  Cool completely.
    We decorated some of the cookies with sprinkles prior to baking.  The remaining cookies we decorated with icing after cooking.
    Cookie Icing
    • 1 pound Powdered Sugar
    • 1 stick Non-Dairy Butter
    • 1 teaspoon Vanilla Extract
    • 1/4 cup Non-Dairy Cream (coconut, almond, or soy milk)
    • Add Food Color or divide in multiple bowls and create a variety of colors

    Blend together all the ingredients until smooth.  Chose one food color or divide up into multiple bowls and a variety of colors.

  • Be My Valentine: “Steal My Heart” Cookies

    “Steal My Heart” Valentine Cookies

    Last year I picked up this Valentine Heart pan on clearance after Valentine’s Day.  The girls were very excited to try it out this year.  We made these fun “Steal My Heart” Cookies together.  The girls had a blast mixing up the cookie dough and they thought the cookies tasted pretty yummy too.  You can use a variety  of cookie mixes with this cookie sheet.  Below is your basic sugar cookie mix, you can add in a few sprinkles for an extra special touch.

    Sugar Cookies

    • 1/3 cup Butter or Margarine
    • 1/3 cup Shortening
    • 3/4 cup Sugar
    • 1 teaspoon Baking Powder
    • 1 Egg
    • 1 teaspoon Vanilla
    • 2 cups All Purpose Flour
    • Sprinkles (optional)
    • Icing (optional)

    1.  Beat butter and shortening on medium to high speed for 30 seconds.  Add sugar, baking powder, and a dash of salt.  Beat till combined, scraping the bowl so everything is well blended.  Beat in egg and vanilla.  Gradually add the flour into the mixture.

    2.  Cover and chill dough for 1 to 3 hours to make it easier to handle when making cookies or cutouts.

    3.  Lay down wax paper and lightly flour.  Roll the dough to 1/8 inch thickness.  Use a variety of cookie cutters to make the shapes you want.  Place on lightly greased cookie sheet.

    4.  Cut out a heart shape in the middle of the cookies.  Fill the hole with a crushed hard candy.  The candy will melt during baking creating the glass window pane hearts in the middle of the cookies. *We tried using up extra candy canes but they didn’t melt well (they tasted good) but I would stick to the one color hard candies like life savers!

    5.  Bake at 375° for 7 to 9 minutes or until the edges of the cookies are firm and light brown.  Cool until the middle window are set then transfer to a platter.

    Sugar Cookies are a great treat to make around the Holidays.  They are versatile in that they can be made into a variety of shapes and decorated a lot of different ways as well as they are the base for many of other wonderful cookies.  The kids enjoy them and always love helping decorating the sugar cookies with frosting, sprinkles, and more around this time of year.  Sometimes I will make up several batches of Sugar Cookies then freeze the dough so I can pull them out when I need it which helps speed up the process for several other recipes our family enjoys eating and sharing with others.

    Sugar Cookies

    • 1/3 cup Butter or Margarine
    • 1/3 cup Shortening

    Many times I just do steps 1 and 2 so I can use the Sugar Cookie batter base to make a variety of different cookies.  Whether you do sprinkles, frosted, swirls, cups, or whatever enjoy the quick and easy recipe that allows you to share many delicious treats with your family and friends.
