    Making Pickled Green Beans

    Our family loves green beans.  Fresh garden green beans are so tasty too!  We always planted a lot of green beans whenever we had a garden.  We typically had several varieties of beans from foot long beans to different types of green beans to purple beans and more.

    Whenever we had extra green beans we would look for a variety of ways to store, eat, and enjoy them.  I recently came across our Pickled Green Bean recipe.  Since it is Spring I thought it would be a good time to share it.    These pickled green beans are crunchy and tasty!

    Pickled Green Beans Recipe:

    • 2 pounds fresh Green Beans (rinsed)
    • 2 1/2 cups White Distilled Vinegar
    • 2 1/2 cups Water
    • 1/4 cup Salt
    • 4 Garlic Cloves (peeled)
    • 1 large bunch fresh Dill Weed
    • 2 teaspoons Mustard Seeds
    • 1 teaspoon Red Pepper Flakes
    • 6 Jars (1/2 pint each) with Rings and Lids

    1.  Locate your jars and sterilize them.

    2.  Trim both ends off the rinsed fresh green beans.  Make sure the green beans fit into your jars if not cut them in half.

    3.  In a large saucepan put the vinegar, water, and salt.  Bring the mixture into a rolling boil over high heat.

    4.  In each jar place 1 garlic clove, 1 sprig of dill, 1/8 teaspoon of Red Pepper Flakes, and 1/4 teaspoon of Mustard Seeds.

    5.  Pack the green beans into the jars, standing them up vertically.

    6.  Ladle boiling mixture into the jars until it is 1/4 inch from the top.

    7.  Put the lids on the jars and allow the jars and contents to cool to room temperature before placing them into the refrigerator.  Let the pickles ferment for 2 to 3 weeks before eating the pickled green beans.

    Makes 6 pint sized jars of Pickled Green Beans.

  • Travel & Vacaation: Disney Epcot’s Butterflies on the Go Flower Garden (Orlando, FL)

    Beautiful flowers at Epcot

    The kids had a blast going into Disney Epcot’s Butterflies on the Go Flower Garden during their International Flower and Garden Festival.  The flowers were absolutely beautiful and butterflies were fluttering all around us.  You could even see butterflies emerging from their chrysalis!  It was pretty neat seeing these winged creatures buzzing all around and a house containing rows of chrysalis.  Not to mention educational for the kids too!

    Our family had a blast exploring Walt Disney World’s Epcot park.  It was a lot of fun seeing all the beautiful sculptures made out of greenery all over the park.  Many Disney characters were represented in the gardens.  It was the kids first time visiting Epcot.  They loved it so much we chose to do it 2 days instead of just one.  Thankful for the opportunity to spend time with my family while seeing these amazing creations.

  • Charleston: Historic Nathaniel Russell House

    Getting ready to tour the Nathaniel Russell House which is located near downtown Charleston.   Nathaniel Russell moved to Charleston when he was in his 20’s and began his career as a shipping merchant.  His exportation of items such as rice, cotton, tobacco, and indigo would go from Charleston to West Africa, New England, Asia, West Indies, England, Europe, South America and more.  Around the time of the American Revolution he was also known to transport African slaves as well.

    Nathaniel Russell married a Sarah Hopton who was the daughter of a wealthy merchant who was established before the American Revolution.  They had two children, Alicia and Sarah.  Later the house would owned by other people such as Governor Allston and once it was used as a school for the Sisters of Charity of Our Lady of Mercy for over 30 years.  When the Historic Charleston Foundation received the house they went to work restoring both it’s interior and architectural structure back to what it was like when Nathaniel Russell owned it.

    The Nathaniel Russell house contained beautiful rooms.  There were many layers of paint, wallpaper, and more on the interior that had to be carefully striped away and be restored.  Some of the fireplaces we saw in the house had as many as thirty layers of paint and the details were barely noticeable until they started carefully striping away all layers.  Fascinating!  The house has a huge beautiful spiral staircase that goes up three floors.  Although, the house was very large especially for that time the stairs actually take up about half of the house.  Every section of the house was built in a different shape from a square, oval, circle, etc….  It was a gorgeous house meant for showing off wealth, not necessarily for the most effective use of space.  They had beautiful gold and decorative wallpaper, mirrors, and more.  The house had a pretty ballroom with a high ceiling and mirrors.  It would have been amazing traveling back in time to see this house during it’s original glory.  Most of the furniture pieces are not original, but are from that period of time.  I am thankful for an opportunity to see a glimpse of this neat house.

    They do not allow pictures inside the house so here is a glimpse of the staircase, but it really doesn’t do it justice.  Pretty amazing to see in person.

  • Travel & Vacation – Exploring Colonial Williamsburg

    We had a chance to explore Colonial Williamsburg in Williamsburg, Virginia on our recent road trip up the East Coast!  It was our first big stop an our road trip.  After driving to the area the day before we spent the night at a local hotel and were up early the next morning with our picnic lunch packed and ready to explore the area.

    Jake had to work on Friday so for the most part it was just the girls and I exploring  Colonial Williamsburg.  He did get to join us for a little bit over his lunch break though which was really nice.  It was a lot of fun seeing so many neat historical places.  The girls did the quest exploration and scavenger hunt.  My phone didn’t work in all the areas so we didn’t finish all the quest activities, but we did get our prize for completing the scavenger hunt.

    Last year in school the girls studied a lot of about the American Revolution, Civil War and more in Social Studies so this adventure really ties into some of the items they have been learning about in school.  Colonial Williamsburg is like taking a step back into America’s past during the time of the American Revolution.  There are hundreds of restored buildings, exhibits, homes, government offices, trade shops, museums and more to explore.

    We had a blast exploring Colonial Williamsburg!  The girls were ready to stay for a week and explore even more.  We only had the one day at Colonial Williamsburg along our road trip, but we packed in a ton of activities into that one day.  Thankfully, we started early and were able to get through a large portion of the items that the girls wanted to do.  It was really neat learning what it would be like to live there during the time of the American Revolution.  All the people were very friendly, helpful, and it was a great day with the kids.  We were all exhausted by the time we got back into the car later that day and headed back onto the road towards our next destination.

  • Vacation: “Sky Safari Zip Lining ” – Basseterre, St. Kitts (Part 2, Pictures)

    We had a fun time exploring the capital of St Kitts.  Basseterre was a neat place to walk the streets and meet people.  They had monkeys you could take pictures with after getting off the port, if you wanted a picture with the monkey you had to pay $20.  You learn quickly to say “no, thank you” because there can be so many people asking for your attention.

    While the rest of us were walking through the shops Dad sat down for a few minutes at a table and ended up getting an aloe massage.  The guy said he looked 20 to 40 years younger after the massage, it was pretty funny to watch!

    There was a sailboat cruise ship at Basseterre, St Kitts.  We encountered a lot of amazing boats during our vacation!

    Coca Cola appeared to be a universal soda of choice in many of the islands!

    A construction crew working on a home.  Often times they would go ahead and run the pipes before building the next level that way they had a head start when they were ready to build again.

    St Kitts had beautiful turquoise water and white beaches.  We didn’t make it to the beach that day because we went on the Sky Safari but we heard a lot of great feedback from other people on the ship.

    The catch of the day!  The fish were almost as big as the fisherman carrying them.  One of the big industries in St Kitts is fishing.  These guys are rinsing off some of their fish they caught earlier that morning.

    We arrived at our excursion.  They took us by bus to the Sky Safari Zip Lining adventure!  It was a beautiful place and soooo much fun going on the zip lines.

    Fresh coconuts were hanging in the trees all over the island.  They had a spot where there were so many coconuts they just couldn’t eat them all.  Almond trees were in abundance as well.

    A tree loaded with fresh fruit, I think these were the goya fruits.  Very popular in the islands!

    A local artist showing us how she does her paintings with wax and canvas.  Each color takes a day to paint and dry some paintings take days before they are complete.  Very interesting to watch.

    I really thought this wagon wheel bench was pretty neat.  The Botanical Gardens had great stuff to see or you can take a moment to relax and enjoy the surroundings while we were visiting.

    We saw several lizard or iguana type animals during our excursions. Although it was neat to see them running around I was thankful they wanted to keep their distance from everyone.  I think our guide called them ground lizards.

     

    Old Sugar Mill in St Kitts

    Sugar Cane was once very popular industry on St Kitts (and many of the other islands).  This sugar mill was no longer active but was very neat seeing how they use to make the sugar from the cane.

    This is St Kitts form of poison ivy, none of us volunteered to touch.  We decided to take our guides word for it on that one.  No one was wanting any type of poison ivy reaction on our vacation.

    This is a St Kitts apple growing in their tree.  Almost everywhere you walked you could see fruit growing in trees.  Even though the apples are not the same as ours I am sure they are delicious.  They don’t eat the skin on their apples.

    This tree was near the Sugar Mill in St. Kitts, in the past it was said that when slaves first came to the islands they were tied up to these thorny tree for several days.  I didn’t even want to touch it because the thorns were so sharp, ouch!

    Jake all geared up and ready to go.  My handsome man helped me get all my gear on as well.  The hats and harness were pretty comfortable and everyone had a blast on the zip line.  Fun times together with family!

    Goodbye Basseterre, St. Kitts hope to see you again!  It was wonderful spending a day with you and we enjoyed all the fun adventures on your island!

    A Vacation To Remember series is a reflection on our recent trip and ways we relaxed.  Life is short and we were thrilled to have the opportunity to build memories with family and explore of of the most amazing places during our time away.  Go with a good attitude and looking for fun and it will be an awesome trip jammed packed with positive memories.  It is refreshing having some time away from the regular routine.  Make it a once in a lifetime opportunity to meet new people and learn.  You just might see or try something new that takes your breath away!

  • Book: Better Homes and Gardens

    Grandma Willa gave me this cook book –  Better Homes and Gardens New Cook Book as a wedding gift and we use it all the time.  Grandma Willa is one of the most amazing cooks I know.  I am thankful for the times we had cooking together.  Grandma is still cooking a lot of meals for family and friends but due to distance I am not able to participate in her cooking adventures as often as I like.  Below is the note she put in my cook book, which I treasure even more then the cook book itself:

    My Aunt Zell Body, gave me a BETTER HOMES AND GARDENS cook book as a Wedding gift.  It was my first and faithful cook book, and I found it to have many helpful hints as well as great recipes.

    I and the girls wore one out, and almost the second one over the many years.  If I couldn’t find something, needed to substitute, know cuts of meat etc….. I’d go to old faithful BETTER HOMES AND GARDENS.  I hope this new version is as good or better than my old one was.
