    Cheese & Vegetable Topped Chicken

    This recipe is an altered and lighter version of the Chicken Tomato Pasta Recipe.  The Cheese & Vegetable Topped Chicken recipe is a lower carb version, but is still tasty and healthy.  It is basically baked boneless skinless chicken breast topped with spinach, bok choy, mushrooms, and cheese.  If you are trying to cut out dairy you can eliminate the cheese and it is still a great main dish.

    Cheese & Vegetable Topped Chicken

    The Cheese & Vegetable Topped Chicken recipe is a low carb, but is still tasty and healthy.  It brings baked boneless skinless chicken breast together with a topping of spinach, bok choy, mushrooms, and cheese.

    Ingredients

    • 1 lb Boneless, Skinless Chicken Breasts cooked, seasoned, and drained
    • 1 cup Fresh Spinach
    • 1 cup Fresh Bok Choy
    • 1/2 cup Fresh Mushrooms
    • 1 tbsp Olive Oil
    • 1/2 tsp Minced Garlic
    • Sliced or Shredded Cheese

    Instructions

    • Preheat the oven to 350 degrees.  Grease a broiler pan and put the chicken breast on it (this allows the extra fat and/or juices to drain down and away from the chickens).  Sprinkle lightly with seasoning – salt, pepper, and/or chicken seasoning.  Bake until cooked through.
    • While the chicken is cooking.  Slice up the vegetables into about 1/2 inch to 1 inch pieces (spinach, bok choy, mushrooms).  Heat 1/2 tablespoon of olive oil and minced garlic in a pan over medium heat.  Add the mushrooms and cook them for about 2 minutes.  Add the spinach and bok choy, cooking for an additional 3 minutes or until the leaves are starting to wilt.
    • Place your baked chicken breasts on the plates.  Top with the vegetable mixture.  Optional: Garnish tomatoes and sliced or a sprinkle of shredded cheese.

    Chicken Tomato Pasta Dish

    Another great meal made by my awesome husband.  He came up with this pasta recipe one Sunday for lunch.  The base is animal shaped pasta noodles (can you guess who picked out the noodles)?!   Topped with chicken, tomatoes, bok choy, spinach, and mushrooms.  It was a fresh and tasty combination perfect for dinner out on the deck with the family on a sunny Sunday afternoon.

    Chicken Tomato Pasta Recipe:

    • 1 lb Chicken Breasts (sliced, cooked, seasoned, and drained)
    • 12 oz Pasta (we used Organic Vegetable Pasta in the shape of Animals)
    • 1 large Tomato (or can of diced tomatoes)
    • 1 cup Fresh Spinach
    • 1 cup Fresh Bok Choy
    • 1/2 cup Fresh Mushrooms
    • 1 tablespoon Olive Oil
    • 1/2 teaspoon Minced Garlic
    • Optional – 1/2 small Onion
    • Optional – 1/4 cup shredded Cheese

    1.  Slice the chicken in about 1 inch strips.  Heat 1/2 tablespoon of Olive Oil in a frying pans on medium heat and add the minced garlic (and onion if using it).  Cook over medium heat for 3 minutes.  Add the chicken and stir gently as every couple minutes while working on the other steps. 

    2.  Add water to a pot and turn it on medium-high until it is at a rolling boil and add the pasta.  Cook the pasta per the directions on the package.

    3. Slice up the vegetables into about 1/2 inch to 1 inch pieces (tomatoes, spinach, bok choy, mushrooms).  Heat 1/2 tablespoon of olive oil in a pan over medium heat.  Add the mushrooms and tomatoes cooking them for about 2 minutes.  Add the spinach and bok choy, cooking for an additional 3 minutes or until the leaves are starting to wilt.

    4.  Scoop some pasta onto your plate.  Top with the tomato and vegetable mixture.  Add the chicken and a little more of the tomato and vegetable mixture.  Optional: Garnish with sauteed bok choy centers and a sprinkle of shredded cheese.

    Cashew Apple Chicken

    I love weekends at home for many reasons.  It is awesome spending some extra time with my family.  During the week typically I do most of the cooking do to everyone’s schedule being a more crazy, however, on the weekends many times my husband will cook our family meal.  He comes up with some of the most amazing and delicious dishes.  It is so neat to watch him look in the fridge to see what we have or what needs used up then whipped together a new and tasty meal.

    Our family enjoys chicken, apples, and cashews so this meal was a hit.  I am so thankful for a husband who cooks.  He has widen my recipe collections with the variety of dishes he pulls together.  Yes, I am blessed!

    Cashew Apple Chicken Recipe:

    • 4 Chicken Breasts (boneless and skinless)
    • 1/2 tablespoon Olive Oil
    • 2 Apples, cut up in equal size pieces (we used granny smith because we had them in the fridge)
    • 1 teaspoon Salt
    • 1/4 teaspoon Pepper
    • 1/4 teaspoon Cinnamon
    • 1 tablespoon Maple Syrup
    • 1 tablespoon Italian Dressing
    • 1/4 cup Cashews

    1.  Mix together the salt, pepper,  and cinnamon into a small bowl.  Sprinkle the chicken breasts for a pinch of this mixture and set the remaining spice mixture aside.

    2.  Add the olive oil to a frying pan and allow to heat up using medium heat for about 1 minute. Add the chicken breasts to the pan and cook.  Cook for 10 minutes on one side and turn to cook for an additional 10 minutes on the remaining side.  The chicken should be a light brown on all sides.  While the chicken is cooking on each side do steps 3 to 5.

    3. Preheat oven to 350 degrees.

    4.  Grease a baking dish.

    5.  Dice up the apples and set aside.

    6.  Once the chicken is brown on all sides (see step 2) remove the chicken breasts from the pan and place them into the baking dish.

    7.  Add the Maple Syrup, Italian Seasoning, and spice mixture to the pan of oil and chicken juices.  Heat over medium for about 1 minute.  Add the diced apples and cashews.  Continue to cook for 3 minutes stirring gently.  Remove from heat and spoon the apple and cashew mixture equally over the chicken breasts.

    8.  Cover and bake at 350 degrees for 35 minutes.

  • Chicken Pasta Bake

    The other day I had leftover items that I needed to use up so I came up with this Chicken Pasta Bake.  I don’t like letting leftovers go to waste and this casserole turned out really well.  You can play around with this recipe and add various ingredients depending what you have in the refrigerator that needs to be used up.

    Chicken Pasta Bake

    • 1 lb sliced, cooked, and season Chicken Breasts
    • 16 oz Noodles (any type, I used Rotini)
    • 2 cups shredded Mozzarella Cheese
    • Mushrooms (optional)
    • 1 cup Pasta Sauce (optional)

    Grease an 9×13 pyrex dish.  Preheat oven to 350 degrees.  If your pasta has not already been cooked, go ahead and make it according to the directions on the box.  While the pasta is cooking if your chicken is not already sliced and cooked go ahead and slice your chicken and cook it in a skillet, bake or fry it  (add whatever seasoning you want to it).  Layer drained pasta noodles on the bottom of the pyrex then mix a cup of pasta sauce in with the noodles.  Layer the chicken and mushrooms (if using mushrooms) on top of the pasta.  Sprinkle the shredded cheese over the top and bake for 20 to 30 minutes or until the cheese has melted completely.

  • Chicken & Broccoli Casserole

    I found this Chicken & Broccoli recipe at Pearls, Handcuffs, & Happy Hour.  It is a great combination of chicken, vegetables, and cheese.   This chicken recipe is a hit with our family.   The casserole is best served over rice.

    Chicken & Broccoli Casserole

    • 3 Chicken Breasts, cooked & shredded
    • 2 cans Cream of Chicken Soup
    • 1 cup Mayonnaise
    • 1 cup shredded Cheddar Cheese
    • 1 cup Colby & Monterrey Jack Cheese
    • 1 bag frozen Broccoli pieces
    • Salt & Pepper to taste

    Cook chicken and shred.  Preheat oven to 375 degrees.  Grease a 2 quart casserole dish.  Mix all the ingredients together.  Transfer into casserole dish and cook for 30 minutes or until bubbly.

    Anyone want some fresh fish for dinner?  This is the display of fresh whole fish in the market, you could smell it long before you could see it!

    Whole green curry chicken in the bakery ready to take home for dinner.  It looks a little interesting but their curries were pretty good, however, I did not try this one.

    This one in the meat section kind of made me sick looking at it……goat mutton.  You could by goat brains to cook up for dinner (from what I hear it is a real treat).  Not sure if I could muscle through this one and pretty sure the girls would have a hard time too because goats are “pets not food” in their little world.

    What a great place to eat, the kids seem to LOVE it!  Very neat idea for a restaurant…..an auto-rig shaw with a table and booths for families.  The kids can play and drive it too!

    The shark mouths (see the teeth) have “digustive” salts in the bowls.  I didn’t try these because I noticed several people just using their hands to dip into the bowl instead of using the bowl to scoop it.  Love the table too, the stand is a stack of tires!

    The receipt for the dinner litteraly came in a tin “bill box”.

    And the best is for last……dessert!  Carrot cake and vanilla ice cream.  The ice cream tasted different from what we get in the USA, it almost had a creamier texture.  The carrot cake was good but not quite like my Mom’s homemade carrot cake! 🙂

    Really neat Dadu Maluj Sandwiches with cool outer decorations on the outside that looked like alumimum fool and paint but it was edible.

    Large waterfall outside another one of the Ohri’s restaurant buildings on the other side of town.  Most of the Ohri’s buildings had several different types of restaurants in one building.  You could choose to eat Indian, Chinese, American and once you get into the building.  Some of them you had to book a reservation in advanced to get into they were so popular.

    We went to one of Ohri’s really popular restaurants an India buffet.  On this plate is a variety of meat cooked with Indian spices to try.

    AMAZING Indian dish (I wish I could remember the name of it)!  It makes my stomach growl just looking at it.  It was a mix of sweet and crunchy, but it was a beans and meat mixture….so delicious!

    One thing I didn’t realize until going over to India was they enjoy what we call “crunchy chicken”!  It is normal to be eating a chicken dish and find a bone.  I think they do it to add more flavor to the meal but it surprises you the first few times.  You are just more careful when you eat chicken!

    The “Travel and Vacation” series is an insight into our trips together as a family and ways we relax.  Life is short and we were thrilled to have the opportunity to build memories with family and explore of of the most amazing places during our time away.  Explore with a good attitude, look for fun, and it will be an awesome trip jammed packed with positive memories.  It is refreshing having some time away from the regular routine.  Make it a once in a lifetime opportunity to meet new people and learn.  You just might see or try something new that takes your breath away!

    The week went by quickly.  I have been fighting off a cold so I didn’t do as well bargain shopping throughout the entire week.  Thankfully I was able to find some amazing deals early in the week and was able to stock up on some candy to share with others (including the girls school) during some upcoming events and parties.  I was running low on shredded cheeses (a big no-no in our house) so I was able to stock up on it and other items this week.  Here is my weekly update on our Groceries $40 for 4.

    Groceries from Ingles

    • $29.28 at Ingles for 1 bag Laura Lynn Bread, 2 blocks Laura Lynn Sharp Cheddar Cheese, 5 bags Laura Lynn Shredded Cheese, 1 box Margarine, 1 bag Ham Lunch Meat, 1 whole Chicken, 1 box Pillsbury Yellow Cake Mix, 1 box Pillsbury Brownie Mix, 1 bag Laura Lynn Miniature Marshmallows, 1 container Fresh Lemons, 1 Sweet Yellow Onion, 1 bag Regular White Pitas, 1 bag Onion Pitas, 2 bags Deli Egg Roll Wraps, and 1 container Spinach Bites.  (Everything I bought this week at Ingles was on sale, marked down, or on clearance including the meat, diary, and produce!)

    • $0.70 at CVS for 4 bags Oreo Mini Snack Packs, 2 bags Wonka Nerds, 2 bags Milky Way Simply Caramel, 2 bags Hershey’s Cookies N Cream, 1 bag Twizzlers Strawberry Twists Snack Pack, 2 bags Butterfinger Fun Size, 1 bag 100 Grand Fun Size, 2 bags Nestle Crunch Fun Size, 2 bags Whoppers Snack Size, and 2 jars Skippy Peanut Butter.  (My family will not be eating all this candy and sugar, but I was thrilled to get it since I have several upcoming parties and celebrations where I need to bring goody bags.  All the items were on clearance after the Halloween Holiday or on sale and will come in handy for upcoming events.  It was a great price on clearance items and none of the items expire until late 2012.  The Extra Care Bucks were a huge savings help.  To see more details about this shopping trip go to my CVS: Spent $0.70 and Got $3 ECB’s)

    This week I spent $29.98 on groceries.  Even though I only a little under on my budgeted amount for the week I was able to stock up on several items.  The Halloween Clearance at CVS was pretty amazing and the items I picked up on will be beneficial for several different upcoming events so it was worth to stock up the pantry at those prices.  I hope that next week is better week and we can come under budget!

    School is continuing at full throttle and we are finding ways to stay busy, ha!   I was able to get some great items on clearance and stock up on some lunch box items.  Here is my weekly update on our Groceries $40 for 4.

    Groceries from Aldi's and Walgreens
    Aldi Groceries:
    • $48.39 at Aldi’s for 4 boxes Macaroni & Cheese, 1 bag Cinnamon Bagels, 2 boxes Moo Tube Yogurts, 1 box refrigerator Pie Crusts, 4 bags Cheese Sticks, 2 boxes Seasoned Potatoes, 1 three pound bag Chicken, 1 bag White Tortilla Chips, 1 bag Sugar Wafers, 1 bag Cheddar Nuggets, 1 box Oatmeal, 2 packs Taco Seasoning, 1 box Butter, 2 blocks Cheddar Cheese, 4 boxes Vanilla Pudding, 1 container Light Sour Cream, 1 bag Granulated Sugar, 2 Blueberry Pancake Mixes, 5 boxes Tropical Fruit Rolls, 1 bag Carrots, and 2 containers fresh Mushrooms (I was able to get several of these items marked down at Ali’s, which is rare for me, yay!)

    Walgreen Groceries:

    • $1.21 at Walmart for 4 boxes Baking Soda, 3 bags Disney Car Marshmallows, 1 two liter Lemon Lime and 2 gallons Milk (the Baking Soda & Milk was on sale and the Marshmallows & Lemon Lime was on clearance.  I used a couple Register Rewards towards the purchase.)

    This week I spent $49.60 on groceries.  Even though I was only a little over on my budgeted amount for the week I was able to stock up on several items.     Thankfully I had extra in the grocery wallet to cover the expense.  I hope that next week is an even better week and we can come under budget for the week.
