     Yes, I know I am a little late in posting about Father’s Day, but I promise we did celebrate it!  In fact we are packing in so much fun this summer it is going by too quickly.  For Father’s Day the girls made Jake breakfast in bed!  They were so sweet!

    The girls put together a scrumptious Father’s Day breakfast!  Complete with cashews, homemade Egg McMuffin, blueberry yogurt, granny smith apples, cottage cheese, and a twizzler heart with Jelly Beans inside.     I don’t know if the lighting was off or what but none of my breakfast in bed pictures turned out! 🙁  So moving on to the main meal of the day….another special treat for Dad!

     Happy Father’s Day Jake!  Wishing you an amazing, relaxing, and super fun day!  Thank you for being such an awesome Dad to our girls!  You’re the BEST!!!  We decided to enjoy our meal on the deck under the canopy.  We’ve been loving our meal times outside lately!

    Skipper even joined us up on the deck for the Father’s Day festivities.  She is not allowed to beg and has to sit or lay quietly during meal time.  She did well.  At some point during the dinner Brina went searching for her napkin…..this is where it was found (under Skipper’s head)!  Guess she needed a pillow / drool napkin during dinner!

  • Make A Head Recipe: Egg Breakfast Cups

     

    The only day Jake and the girls headed out early to work in the yard, when I asked what they wanted the answer I got was eggs, bacon, and hashbrowns.  Well, this recipe which I discovered on The Little Birdie Blog included all of these ingredients.  I did have eggs but no bacon or shredded hash browns but I did have ham and tator tots.  I altered her recipe slightly and it was a huge hit with the family.  Karlie told me “Mom you always make the best food!”  I made the several extra to test and see if they would be good to reheat out of the freezer and they turned out well.  These would be a great recipe to “make ahead” of schedule to pull out after your guests have arrived.  I froze some of our Egg Breakfast Cups in a ziploc baggie, each cup was individually wrapped in saran wrap.  All you had to do when you were ready to eat it was pull it out of the freezer and bake for 1 minute and 30 seconds.

    Egg Breakfast Cups:

    • 1 – 24 oz. bag of shredded Hash Browns or Tator Tots cut up
    • 2 teaspoon Salt
    • 1 teaspoon Pepper
    • 2 tablespoons Oil
    • 1/3 cup shredded Cheddar Cheese
    • 1 cup diced Ham (or bacon)
    • Eggs
    • 1 cup shredded Cheddar Cheese
    1. Preheat oven to 425 degrees
    2. Take your bag of hash browns or tator tots ( cut up if tator tots) and mix in the salt, pepper, oil and 1/3 cup shredded cheese.
    3. Grease jumbo muffin tin and divide the hash browns amongst the cups in your muffin tin.
    4. Bake at 425 for 15 to 18 minutes or until toasty
    5. Once they’re finished, take them out and lower the temp of the oven to 350 degrees.
    6. Crack an egg into each of the cups and break the eggs a little bit.
    7. Top with ham (or bacon) and a sprinkle of extra cheese
    8. Bake at 350 degrees for 13-16 minutes (or until the eggs are as firm as you like them).
    9. Slide a knife along the edges to remove from pan when cooled.

    Mix together the cut up tator tots, salt, pepper, and 1/3 cup cheese

    Add the egg on the top of the baked hash brown.

    Break the yokes on the eggs

  • Gift Giving: Breakfast in Bed

    Occasionally for a birthday or Holiday I create Gift Coupons for the girls (or Jake) for their present.  The gift coupons include a variety of fun activities – get out of one chore, breakfast in bed, one big bear hug, and more.  The girls will sometimes save their coupons for months before redeeming them.  It is so sweet to see them cherish the little things like fun coupons I created just for them.  I have learned that when the coupon is redeemed to just stamp the back with the date stamp and let them keep it. Sometimes they will redeem the coupons simultaneously and other times they do it separately.  The breakfast in bed coupon is always a huge hit with the girls!

    I managed to sneak in a take a picture of them eating breakfast in bed, both of them were chatting away and enjoying their yogurt!

  • Family Celebrations: Happy Mother’s Day

    Relaxing in the Hammock with my girls!

    Jake got me a hammock for Mother’s Day.  The girls and I enjoyed some time relaxing, laughing, talking and reading stories together in the hammock on Sunday.

    Karlie told me “Mom, I think you’ll have a lot of fun relaxing in your hammock, you can read a book or read the Bible and talk to God outside now!”

    Brina caught a couple little ladybugs to take on the hammock with us “They like to relax and swing too Mom!”

    I am blessed with two beautiful thoughtful girls and a sweet husband.  This year the girls planned Mothers Day from Breakfast in Bed to the gifts and activities.  It was a fun, memorable and relaxing day with the family. My cup truly runeth over….there was a time in my life when I wondered if I would ever have kids and a family of my own.  Thankful that God chose to bless me with these two wonderful daughters.  Being a Mom brings so many precious rewards, fun, and laughter.

    • Breakfast in Bed – Brina and Karlie brought me Cinnamon Raisin Toast, Fresh Fruit (Strawberries, Pineapple, Cantelope, Honeydew, Mango, & Grapes) and a Strawberry Lemonade Fruit Slushy, delicious!  (sorry no pictures of the breakfast in bed)

    It is the gifts from the heart – the hug, kind word, and thoughtfulness that mean the world to me!  At the same time as I celebrate this amazing day with my family my heart and prayers go out to those who have lost their Moms or who are unable to have children.  Every life is a gift and every day is a treasure from above.   I am thankful for the many blessings (both family and friends) in my life.
