• Book: Better Homes and Gardens

    Grandma Willa gave me this cook book –  Better Homes and Gardens New Cook Book as a wedding gift and we use it all the time.  Grandma Willa is one of the most amazing cooks I know.  I am thankful for the times we had cooking together.  Grandma is still cooking a lot of meals for family and friends but due to distance I am not able to participate in her cooking adventures as often as I like.  Below is the note she put in my cook book, which I treasure even more then the cook book itself:

    My Aunt Zell Body, gave me a BETTER HOMES AND GARDENS cook book as a Wedding gift.  It was my first and faithful cook book, and I found it to have many helpful hints as well as great recipes.

    I and the girls wore one out, and almost the second one over the many years.  If I couldn’t find something, needed to substitute, know cuts of meat etc….. I’d go to old faithful BETTER HOMES AND GARDENS.  I hope this new version is as good or better than my old one was.

  • My Parents Are Coming!

    I am very excited to have my parents come out for the Holidays this year.  The majority of my family lives in the Midwest (Kansas, Colorado, Nebraska, and Missouri areas).  We were not able to make it out there this year for the Christmas season so they are coming to see us along with my youngest brother Josh.  The girls are very excited to see Grandpa Russell, Grandma Penny and Uncle Josh. We will be celebrating Christmas and enjoying family time during their few days in South Carolina.  Thankful to have parents who love us and enjoy spending time with our family.

    Somehow I managed to wait until the last moment to finish cleaning and organizing for visitors.  I have some major projects completed but they are flying into Atlanta today and will be arriving early afternoon yet I still have cleaning to do….hm….  I will still be posting on the blog but they may a little shorter during the time that our family is staying at our house.  If anyone is bored today you can help me power clean! =)  Hope you have enjoyed time with your family as well over the Holiday season!

  • Family Recipe: Great Grandma Albrecht’s Corn Bake

    I have so many wonderful memories of my Great Grandma Albrecht.  Thankful for the opportunity to learn from her.  She was beautiful, a great cook, crafty, and full of spunk.  At my bridal shower she brought her Corn Bake as one of her favorite recipes.  Even after age 90 she was still baking!  When she arrived with the Corn Bake and recipe in hand we were curious about the blue dots in it.  In her hurry to get ready and cook she accidentally put a box of blueberry muffin mix into the Corn Bake instead of the Corn Mix.  She waved her hand and just laughed.  It was interesting, but still tasted good.  This is just one of many memories of Great Grandma Albrecht that make me smile.

    Corn Bake

    • 1 small Onion (optional)
    • 1 small pepper (optional)
    • 1/2 cup of melted Butter
    • 1 can Whole Kernel Corn
    • 1 can Cream Corn
    • 1 (8 oz) box Corn Muffin Mix (or Blueberry Muffin Mix if you want to venture out a little more)
    • 3 Eggs
    • 1 cup Sour Cream
    • 1 cup Shredded Cheddar Cheese

    Saute onion and pepper in the butter.  Mix in corn, muffin mix, eggs, sour cream and cheese.  Put in a casserole dish and bake at 350 degrees for 45 minutes.

  • Recipe: Grandma Doris’ Chocolate Mayonnaise Cake & Peanut Butter Frosting

    Grandma Doris makes an amazing Chocolate Mayonnaise Cake with Peanut Butter frosting!  Although it sounds interesting the cake is moist, delicious, and easy to make.  It was one of the first cakes I made as a kid. When Grandma Doris made this cake for dinner and family Holidays there was rarely ever any cake left by the end of the meal.

    Chocolate Mayonnaise Cake

    • 1 cup Mayonnaise
    • 1 cup warm Water
    • 1 1/2 cup Sugar
    • 2 cups Flour
    • 2 teaspoon Baking Soda
    • 1 teaspoon Vanilla
    • 1/4 cup Cocoa Powder

    Mix all ingredients together and bake in 9 x 13 dish at 350 degrees for 30 to 40 minutes.

    Peanut Butter Frosting

    • 2 cups Powder Sugar
    • 1/2 cup Butter
    • 1/4 cup of Milk
    • 2 tablespoons of Peanut Butter (either smooth or crunchy)

    Mix frosting ingredients together. If necessary add more milk until frosting has a smooth texture.  Spread frosting over the Chocolate Mayonnaise Cake.
