  • Family Recipe: Dad’s Favorite Carrot Cake

    My Mom is an excellent cook!  Over the years my parents have hosted a lot people in their home and continue to have people over regularly.  I am thankful for all Mom taught me about cooking and for her willingness to allow me to “experiment” in her kitchen as I was growing up.  Mom makes the best Homemade Carrot Cake!  She would make it for special events such as a Holiday or birthdays.  This is my Dad’s favorite cake.   It is rich, moist and delicious.  Here’s her recipe:

    Dad’s Favorite Carrot Cake

    • 2 cups of Sugar
    • 2 cups of Flour
    • 2 teaspoons of Baking Soda
    • 1 teaspoon of ground Cinnamon
    • 1 teaspoon Vanilla Extract
    • 1 1/4 cup Oil
    • 4 Eggs
    • 3 cups grated Carrots
    • 1 cup chopped Nuts (optional)

    Combine all ingredients.  Mix thoroughly and pour into a greased and floured 11 x 13 pan.  Bake at 350 for 40 to 55 minutes.  If you want a layered cake you can do it in two 8 or 9 inch round pans just reduce the bake time by ten minutes and add the Cream Cheese Frosting in between the layers. Cool, then frost.

    Cream Cheese Frosting

    • 1 stick Margarine (softened)
    • 1 lb Confectioner (aka powdered) Sugar
    • 8 oz Cream Cheese (softened)
    • 3 teaspoon Vanilla
    • 1 cup chopped Nuts (optional)

    Cream ingredients together until smooth and place on cooled carrot cake.   Optional you can add the nuts in with the frosting or sprinkle the chopped nuts over the top.  Optional you can add green and orange food coloring to a small amount of the frosting to create a decorative carrot(s) for the top for the cake.

  • Recipe: Mom’s Hot Chocolate Mix

    My Mom made the most delicious homemade Hot Chocolate Mix as kids.  Once it started turning chilly she would make a big batch for the family.  It was one of the best things to drink on a chilly winter day!  If you don’t want a large batch of Hot Chocolate cut the recipe in half.

    Mom’s Hot Chocolate Mix:

    • 8 quart Powder Milk
    • 1 pound Powder Sugar
    • 1 pound Instant Cocoa
    • 1 1/2 pound Coffemate
    • 6 tablespoons of Cocoa

    Mix all the ingredients together and put in an airtight container.  Add 1/2 cup of mix per mug of warm water or milk.

    Optional: You can add marshmallows and / or cool whip for an added touch.

  • Book: “Speaking Mom-ese” by Lisa Whelchel

    This book was given to me after I had the girls, Speaking Mom-ese by Lisa Whelchel.  The first few months after the girls were born were a blur after having 12 weeks of bed rest, followed by an early delivery, complications, and time in the NICU.  It was encouraging to have a devotional from a Mom’s perspective even though a lot of the stories were regarding older kids.   The devotionals were short, sweet, and hit home during those exhausting months.  Since then I have gone through the book again and different devotionals touched my heart this time around.

  • Book: “The Power of a Positive Mom” by Karol Ladd

    This is my second time reading the book Power of a Positive Mom by Karol Ladd.  As a Mom of twin daughters it is important to me to be the best Mommy I can.  Life is full of surprises and I want my home to be a fun, safe and enjoyable place where the girls will continue to grow and flourish. The author, Karol Ladd, has a series of books on the “Power of Positive”.  In this book Karol Ladd offers positive ways we can make an impact of the lives of our children.

  • Event: “Dine Out for Mom”

    There is a special event going on today called “Dine Out For Mom” which is a part of the “Let There Be Mom” organization.  As a Mom with small children it is important for me to remember that life is precious, sweet, and short.  We never know what joys and trials life will bring our way.  You may know of a friend or family member that has gone through serious illness and given only a short amount of time to live.   This event is to remind us to celebrate life, create memories, cherish our family, and help others because our life here on earth is not forever.

    What is “Let There Be Mom”? It is an organization that provides help to Moms when they or their spouse is diagnosed with a serious illness.  “Let There Be Mom” comes along side the family going through this difficult time to preserve memories.  They do this through a variety of services tailored to meet the needs and wishes of the individual families. Some examples of ways they are involved – photography, scrapbooks,  journals, videos, meals, errands, special events, care packages, family cookbooks, and many more wonderful activities.  The “Dine Out For Mom” event today is designed to help raise funds for this great organization.   When you eat at one of the participating restaurants today they will donate a portion of the proceeds to “Let There Be Mom” so they can continue to help families that are losing a loved one.

    Take some time out of your busy day to meet a friend for lunch or take the family out for supper.  What a great way to spend time with those you love while helping a wonderful organization that is committed to preserving family memories.
