• Recipe: Oreo Truffles

    I picked up all the ingredients to make this on our Christmas Baking day, however, I didn’t have enough time to make it on Saturday.  Since I had all the ingredients made this for another Holiday event.  I picked up this recipe by Kraft at the grocery store and it is delicious!

    Oreo Truffles

    • 1 package (8 ounces) Cream Cheese, softened
    • 1 package (approximately 1 pound) Oreo Cookies (or other chocolate sandwich cookie), finely crushed (about 4 1/4 cups)
    • 2 – 8 ounce packages (8 squares each) Baker’s Semi-Sweet Chocolate, melted (you can use 1 Semi-Sweet and 1 White Chocolate if you prefer more variety)

    1.  Mix cream cheese and 3 cups of cookie crumbs until well blended.

    2.  Shape into 48 (1 inch) balls.  Dip in melted chocolate; place on waxed paper.  Sprinkle with remaining cookie crumbs.

    3.  Refrigerate 1 hour or until firm.

  • Recipe: Grandma Doris’ Chocolate Mayonnaise Cake & Peanut Butter Frosting

    Grandma Doris makes an amazing Chocolate Mayonnaise Cake with Peanut Butter frosting!  Although it sounds interesting the cake is moist, delicious, and easy to make.  It was one of the first cakes I made as a kid. When Grandma Doris made this cake for dinner and family Holidays there was rarely ever any cake left by the end of the meal.

    Chocolate Mayonnaise Cake

    • 1 cup Mayonnaise
    • 1 cup warm Water
    • 1 1/2 cup Sugar
    • 2 cups Flour
    • 2 teaspoon Baking Soda
    • 1 teaspoon Vanilla
    • 1/4 cup Cocoa Powder

    Mix all ingredients together and bake in 9 x 13 dish at 350 degrees for 30 to 40 minutes.

    Peanut Butter Frosting

    • 2 cups Powder Sugar
    • 1/2 cup Butter
    • 1/4 cup of Milk
    • 2 tablespoons of Peanut Butter (either smooth or crunchy)

    Mix frosting ingredients together. If necessary add more milk until frosting has a smooth texture.  Spread frosting over the Chocolate Mayonnaise Cake.

  • Thanksgiving Recipe: Hugs & Kisses Cheesecake

    The best for last…..yes dessert!  I love dessert, pretty much any type of sweet is good with me!  I started making this chocolate chip cheesecake about 10 years ago.  Not sure where we got the recipe from but it has been a hit at many events.  If you are looking for something delicious but different for the Thanksgiving dessert try this one out.

    Hugs & Kisses Cheesecake:

    • 2 – (3 ounce) packages of Cream Cheese, softened
    • 1 (14 ounce) can of Sweetened Condensed Milk
    • 1 Egg
    • 1 teaspoon Vanilla Extract
    • 1 cup mini Chocolate Chips
    • 1 teaspoon Flour
    • 1 prepared Chocolate Graham Cracker Crust (8 or 9 inch) OR make your own with 2 cups of Oreo Cookies and a tablespoon of melted butter.
    • Hershey’s Hugs & Kisses (optional on top as decorations)

    Preheat oven to 350 degrees.  Mix cream cheese until fluffy; slowly beat in the Sweetened Condensed Milk until smooth.  Add egg and vanilla and mix well.

    Toss chocolate chips with flour and stir into cream cheese mixture.  Pour into the crust.

    Bake for 35 minutes or until the center springs back when lightly touched.  Cool completely.

    Optional – Chocolate Glaze:  Heat 1/2 cup of mini chocolate chips and 1/4 cup whipping cream in a saucepan over low heat.  Stir until thickened and smooth.  Immediately spread over cooled cheesecake.

    Optional – Decorate the edges of the cheesecake with chocolate shavings and / or Hershey’s Hugs & Kisses.

    Once complete refrigerate until ready to serve.  Serve chilled.
