  • What’s for Dinner: Our Weekly Menu Plan

    This week will be a little wild with some extra craziness adding into it so we are keeping the menu super simple.  The girls will be assisting with a lot of the meals since we have a good bit going on with work, camp, and items that need to be accomplished at home this week.  Thankful that they are getting old enough to pitch in and are a huge help around the house (and in the kitchen cooking) more all the time.  We are blessed with seeing their talents and skills continue to grow.  Here is our menu plan for the upcoming week:

    Our Weekly Menu Plan

    • Monday (Beef or Pasta Entree): Grilled Hamburgers, Baked French Fries
    • Tuesday (Seafood, Soup, Salad, or Sandwich Entree):  Tuna Fish Sandwiches, Leafy Green Salad
    • Wednesday (Chicken or Vegetarian Entree):  Chicken Fingers, Fresh Fruit Salad
    • Thursday (Pork Entree or Kid‘s Night to Cook):  Hotdogs, Baked Beans
    • Friday, Saturday, & Sunday:  Leftovers, Family Preference, and Hosting

    I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or pasta entree and so forth).  It is my goal, at least in the beginning, to have at least the main dish and one side planned.  I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.

    Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family.  On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home.  As I go through the menu planning process I will try to share some of our favorite family recipes.  If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.

    SURPRISE!!!  I’M BACK!!!  Yes, I am still alive and kicking (in case you were wondering)! 🙂  The past few weeks (umm….months really) it has been a little wild around our house.  All good stuff, but a lot of transitions, adjustments, work, school, travel, and everything else.  Also, was experiencing some technical difficulties with my blog and my IT person was super busy so I didn’t want to bug the daylights out of him.  Now that everything seems to be back up and running smoothly again, it is my desire to get everything back up and moving along for you.  A big shout out to those who have commented, emailed, called, texted, and checked in with me to make sure I was still alive during this little blogging siesta.  A huge THANK YOU for being patient and hanging in here with me as my family made some adjustments.  Will have to share more about what has been going on these past few weeks….lots of good stuff and a very full calendar!  It gets easier and quieter as the kids get older, right!?

    It is my goal to stay on top of our dinner menu once again.  We have found a good rhythm for the most part (now that school is wrapping up for the year, ha).  We are finalizing several details regarding our summer schedule, but overall I hope to be available and more up to date in the blogging world.

    It is nice to have people who help keep me accountable and organized throughout my week.  It is encouraging to know that other Moms have to work through all the balancing fun of family, work, home, and a multitude of other activities that I seem to experience.  If you have it all figured out, let me know because I would love to be able to get my ducks in order, have a positively balance life in every area plus a happy family and clean house (at least longer than 5 minutes).  If you haven’t reached that level yet, no worries, I am there with you.  We can do our best and   I am going to give it my best shot to stay on top of everything and organized so here we go!!!!  Here is our menu plan for the upcoming week:

  • Recipes: Chicken Tomato Pasta

    Chicken Tomato Pasta Dish

    Another great meal made by my awesome husband.  He came up with this pasta recipe one Sunday for lunch.  The base is animal shaped pasta noodles (can you guess who picked out the noodles)?!   Topped with chicken, tomatoes, bok choy, spinach, and mushrooms.  It was a fresh and tasty combination perfect for dinner out on the deck with the family on a sunny Sunday afternoon.

    Chicken Tomato Pasta Recipe:

    • 1 lb Chicken Breasts (sliced, cooked, seasoned, and drained)
    • 12 oz Pasta (we used Organic Vegetable Pasta in the shape of Animals)
    • 1 large Tomato (or can of diced tomatoes)
    • 1 cup Fresh Spinach
    • 1 cup Fresh Bok Choy
    • 1/2 cup Fresh Mushrooms
    • 1 tablespoon Olive Oil
    • 1/2 teaspoon Minced Garlic
    • Optional – 1/2 small Onion
    • Optional – 1/4 cup shredded Cheese

    1.  Slice the chicken in about 1 inch strips.  Heat 1/2 tablespoon of Olive Oil in a frying pans on medium heat and add the minced garlic (and onion if using it).  Cook over medium heat for 3 minutes.  Add the chicken and stir gently as every couple minutes while working on the other steps. 

    2.  Add water to a pot and turn it on medium-high until it is at a rolling boil and add the pasta.  Cook the pasta per the directions on the package.

    3. Slice up the vegetables into about 1/2 inch to 1 inch pieces (tomatoes, spinach, bok choy, mushrooms).  Heat 1/2 tablespoon of olive oil in a pan over medium heat.  Add the mushrooms and tomatoes cooking them for about 2 minutes.  Add the spinach and bok choy, cooking for an additional 3 minutes or until the leaves are starting to wilt.

    4.  Scoop some pasta onto your plate.  Top with the tomato and vegetable mixture.  Add the chicken and a little more of the tomato and vegetable mixture.  Optional: Garnish with sauteed bok choy centers and a sprinkle of shredded cheese.

    Fresh out-of-the-oven Homemade M&M Cookies

    There is something comforting about walking into the house and the smell of freshly baked cookies.  It is welcoming, not to mention the delicious taste when you sink your teeth into a warm fresh cookie as it melts in your mouth.  I remember as a kid when we would get off the school bus sometimes my Mom would be pulling a fresh batch of cookies out of the oven for us to enjoy.  No matter how crazy school had been that day you knew you would feel better after Mom’s homemade cookies!

    Our kids don’t ride the school bus so they don’t get to experience that “get off the school bus and encounter freshly baked cookies sensation” however, I do try to bring them homemade cookies, send it with them in their lunches, or make them at times when they are home.  It is nice to surprise them with a special treat every once in awhile.  Sometimes if they are playing outside I will make up a quick batch and the next time they come inside they get to sink their teeth into the hot cookies.

    M&M Cookie Recipe:

    •  2/3 cup Margarine
    • 2/3 cup Butter Flavored Crisco
    • 1 cup Sugar
    • 1 cup Brown Sugar
    • 2 Eggs
    • 1 1/2 teaspoon Vanilla
    • 1/2 teaspoon imitation Rum Extract
    • 3 cups Flour
    • 1 teaspoon Salt
    • 1 teaspoon Baking Soda
    • 1 package Chocolate Chips

    Preheat oven to 375 degrees.  Mix the margarine, crisco, sugar, brown sugar, vanilla, rum and eggs together.  Then add the dry ingredients (flour, salt, and baking soda) and mix.  Fold in the M&M’s.  Grease the baking sheet.  Drop by small spoonfuls onto the baking sheet.  Bake for 9 to 11 minutes depending on the oven.  Serves 3 to 4 dozen.

  • Recipes: Octopus Spaghetti

    Our family enjoys having fun in the kitchen.  We have done this recipe a few times especially when the kids are a little younger.  It was one of those days when we had spaghetti on the menu, but instead I decided to alter it to make it more fun for the kids.  The normal spaghetti and meatballs for dinner turned into Octopus Spaghetti which included hotdogs instead of meatballs.

    It really is easy.  While the noodles were still hard I stuck them through pieces of hotdogs.  The hotdogs cooked while the spaghetti noodles were boiling.  I added a little bit of spaghetti sauce, a side dish or two (garlic bread and / or a fresh salad are good ones) and dinner is ready.  The kids love it and enjoy helping with this recipe too.

    Octopus Spaghetti Recipe:

    • 1 package Hotdogs
    • 40 Spaghetti Noodles
    • 1 jar Spaghetti Marina Sauce (store bought or homemade)

    Place a pot of water on the stove and begin heating it up until boiling.   While you are waiting for your water to boil cut each of the 10 hotdogs into 4 equal pieces.  Put 4 dry spaghetti noodles through each piece of hotdog (this allows you to have 4 octopus arms on each side of the hotdog, therefore giving you 8 octopus arms total).  It may take a couple extra spaghetti noodles because you may break a couple when poking them through the hotdogs.  Once the water is boiling place the hotdogs and noodles into your pot and boil until noodles are thoroughly cooked.

    While the hotdogs and noodles are cooking place your spaghetti sauce into a smaller sauce pan and heat until it is hot.  Place the hotdogs and noodles on your plate first and put the spaghetti sauce on top.

    Our kids think the hotdogs and noodles tastes good even without the spaghetti sauce.  You can do it either way.  It is a fun meal, especially for the kids.

    The girls and I made some traction with several big projects this week.  Both girls were a big help too.  Thankful for some time with the kids.  Jake has been busy with work and projects he is tackling too.  He was able to get some work done on the tree house fort a little bit too. We altered our menu schedule a little bit because some evenings were a little crazier than we anticipated so you may see some of the same meals this week.  Here is our menu plan for the upcoming week:

    Thankful for the extra time this week with the kids and extended family.  Jake’s sister and her family will be with us this week.   We also get a chance to catch up with his cousins in this the area as everyone gets together.  The week will be full of fun with everyone around.  Hoping that we have great memories with all the family members.  I am keeping the menu simple and most of the normal days are switched around as it will be a busy and different week for us.  They will be arriving on Monday.  Here is our menu plan for the upcoming week:

    Glad to have the kids out for summer break now!  They have been busy and spent a lot of their time outside despite some of the rainy days we have been having lately.  They are excited about having some time away from school.  We have a lot of fun activities planned, therefore the menu will be pretty simple these next few weeks.  Lunches will consist primarily of leftovers or a packed picnic lunch for our days when we are out and about.  Here is our menu plan for the upcoming week:

    As a family of four our life can get busy.  What’s for Dinner is our weekly menu planning series and one of the ways to help keep us organized, on schedule, and within budget.  Our family typically eats 6 to 7  dinner meals at home a week.  We do try to go out to eat at least once a month as a special treat.  Breakfasts are eaten at home before work and school, lunches are eaten at work, school, or home, so dinner is our main meal together as a family.  Dinner is our time to reconnect, share, and enjoy being together after a busy day.  Our weekly menu plan covers Monday, Tuesday, Wednesday, and Thursday only because the weekend (Friday, Saturday, and Sunday) is our time to spend with family and friends.  The weekends tend to be more spontaneous and my husband (who is the better cook) likes pitching in therefore we keep the menu open for variety.  We use up the leftovers throughout the week for our lunches and on the nights that we are busy or can’t cook.
