    Ready for the NICU Graduation Celebration

    Today’s Flashback Friday goes back to September 2005 when the girls went to their NICU Graduation Celebration.  It is hard to believe they are now 7 months old.  We are thankful for all the doctors and nurses that helped our family during the time when the girls were staying in the NICU.  They took good care of our babies and we learned a lot from them during their stay.  It was a great event to celebrate.  Glad the girls were still growing and healthy.

    Relaxing while we pack up the diaper bag and get everything ready to head out.  The super cute dresses are from my Aunt Mary Ann, Uncle Rick, and cousins Renelle & Laurel in Colorado!  Thanks guys, they are adorable!

    Karlie made it through the face painting, but was not happy with us at the end.  She was not a big fan of it.  Her legs were kicking, arms waving, and was about to burst into tears to let us know that she was not impressed with this whole face painting adventure.  A little TLC and snuggle calmed her down quickly and she was fine for the rest of the event.

    For some reason Brina loved chewing on this dress.  Must of tasted good or had an appealing texture.

     Karlie is glad to be back home again.  Her smiley face stayed on for several hours after we arrived back home.

    Karlie and Brina are very lucky girls.  During the NICU Graduation Celebration they won a door prize for some toy blocks and shapes.  They are playing with their new toys now.   They have no clue they won anything, but were happy to play with the new toys.  So exciting!!!

  • Travel & Vacation: Colorado Rocky Mountain Wildlife

    I was going back over some trips that we had taken in the last few years when I came across a trip we took with my parents from Kansas to Colorado.  There were a lot of fun activities and adventures from that trip so I thought I would share a little bit with you and maybe you will see something you might want to do with your family.  I grew up going to Colorado for summer camp and vacation so I have made a few trips through the Rocky Mountains.

    On this particular trip it was the girls first time in the Colorado Rockies.  They loved it and thought it was amazing the number of animals that we saw on the side of the road and near where we were walking around.  All of these animals were in their native wildlife settings, however, some were pretty close to local towns and hiking trails.  They didn’t seem disturbed at all by us taking their pictures.  We did keep a safe distance away just in case (we didn’t want to upset any of the animals).

    The one on the left is the same one as in the first picture, but if you look closely to the right under the tree is another elk.  These were spotted next to the parking lot where our car was in near Estates Park.

     There are chipmunks everywhere.  You are not suppose to feed them, but they are very commonly seen around picnic areas scavenging for bits of food.

     The girls want to pet or pick these little cute chipmunks up, but they are not tame and it wouldn’t be safe either.  They were fun to watch scurrying around.

     Several hours later after our hiking, exploring, picnic, and other adventures we came back down the mountain and it looked like the same goat was still eating from the same area near the road.  He must have found a lot of good food in that area!

    A lot of places in the area have hummingbird feeders.  If you want a few minutes you will see them coming and going.  They are fast and pretty neat to watch.

    The “Travel and Vacation” series is an insight into our trips together as a family, ways we relax, and tips on how to make trips more enjoyable.  Life is short and we were thrilled to have the opportunity to build memories with family and explore of of the most amazing places during our time away.  Explore with a good attitude, look for fun, and it will be an awesome trip jammed packed with positive memories.  It is refreshing having some time away from the regular routine.  Make it a once in a lifetime opportunity to meet new people and learn.  You just might see or try something new that takes your breath away!

    Today’s Flashback Friday goes back to September 2005 when Grandma Kay came to visit for a few days.  The girls were almost 7 months old and are a lot more active than they were when Grandma was here a few months ago (they were actually still in NICU).  We packed a lot of fun into the weekend.

  • Flashback Friday: Growing Up

    Today’s Flashback Friday goes back 10 years.  The girls were 6 months old and starting to learn so much every week.  They are more mobile and on the go.  They love babbling back and forth to each other and to others.  It is fascinating to watch them explore and learn new things.  Our family is blessed with these to sweethearts.

    Brina is the more mobile one, but Karlie is only a day or two behind her.  Karlie is the more verbal one, but it doesn’t take Brina to catch up.  They challenge each other and neither one wants to get left behind so they do a lot of their fun activities together.

    It is cute to see them working together like a small team.  Some of their jibber jabber we don’t understand, however, they seem to understand all of it and will randomly bust out laughing about some inside joke they share.

    It’s only been a month since they started eating rice cereal and “solid” food.  The first time we had a lot of tears because they didn’t like it and wanted their bottles.  Now they are all smiles when they get into their high chairs .  They look forward to meal time (I think they consider it another form of play time only messier)!  Oh, how quickly things change in just a few weeks.

    Karlie’s first ride on the rocking cow.  They were a little unsure about this moving cow at first, but as they got older it became a popular toy at our house.  They loved it.

    They are learning how to use a sippy cup.  Karlie sometimes would “act” like she was drinking or play around instead of actually drinking so we had to make sure she was getting enough water.

      Brina tipped over Mr. Octopus while playing and couldn’t get back up.  She was not happy!  Once I sat her back up again she was fine and her happy self again.

    Surprised Karlie woke up to a massive stuffed animal on the swing with her.   Where did this come from?!  “Butch” was a large stuffed dog I got as a kid from Grandpa CE and Grandma Willa.  The girls loved to roll around, climb, and play with it when they were little.

    Brina is fascinated with the new toy which we called “Giggles”.  It would giggle and move around the room.  She loved to followed it around the room and knock it over so it wouldn’t run away.

    Karlie on the other hand was a little suspicious about a laughing and moving toy.  She was fine with it at a distant, but the first time it bumped into her arm she was hysterically screaming like it attacked her.  After watching it a few more times she eventually got used to it and enjoyed it.

    Brina riding the “Hungry Hippo”!  They could ride on the hippo and as it moved it would pick up block and other toys off the floor and put them into a storage bin under the seat.  It made “clean up” more fun for the kids.  They both loved riding on it or being pushed around the house picking up scattered toys.

    Playing together on “Mr. Clown” mat.  They initially would both fit (with all their toys) and stay on the clown mat now they are getting older they never stop moving so even though they might start there they don’t stay very long.

     They loved talking (or babbling) to each other.  This was one time while I was getting them dressed.  Karlie was talking away so I sat Brina up on the changing table with her and they talked back and forth for several minutes.  Who knows what they were saying, but they were having fun.  They were fascinated by the words and noises coming out of each others mouths and would stick their hands inside the others mouth trying to figure out how it all worked.  Loved these little interactions and the cute gibberish they made.

    Looks like a cute baby in the laundry basket - BrinacA whole lot of Brina mischief was found in my laundry basket.  They used to love playing in our laundry baskets.  Once they were older they made it a game to climb in and out, wonder how that started?  Sweet Brina is distracted me from doing the laundry, but hey that can wait until tomorrow, right!?

    Today our Flashback Friday is in August 2005 when the girls were 6 months old.  It is quite an adventure packing up and heading out to visit family, friends, or do errands, but we are getting better at it.  The process of just getting out of the house, into the car, and on our way is usually several minutes long.

    The girls have been enjoying going out and about more.  I try to do at least one fun activity outside of the house each week with family or friends.  They are usually exhausted by the time we get home, but we have fun.  It is good for me to spend time with other Moms too.

    Thankful for family and friends to hang out with.  The girls are really good and for the most part do really well when we are out and about.  They love watching everything.  It is neat to watch them soak everything in during our adventures.

  • Flashback Friday: Sleepy Kids

    Today’s Flashback Friday goes back 10 years when the girls were 6 months old.  They were exploring more and falling to sleep in random places.  Sometimes in the middle of playing with a toy.  I tried to move them a few times, but every time I did they would wake up so I just decided to leave them and let them rest.  Usually the random naps were small power naps and they were back to playing within a few minutes anyway.

    They are beginning to be more mobile and it took more energy to keep up with them.  It is so precious watching them sleep peacefully even if it is in their high chair at a weird angle.  Oh to be that flexible again.

    At this time they are still sleeping in the same crib.  As they grow and move around more in their sleep the crib it starting to get a little more chummy, but they look so sweet sleeping together I wasn’t ready to move them into separate cribs quite yet.  Occasionally we would come to check on them in the morning and we would see that during the night they scooted down in the crib until their feet were hanging out.  Not sure how it was comfortable, but they didn’t wake up or seem to mind it.

     When we checked on this morning their were two sets of titty bitty toes sticking out from their crib.  It was all I could do not to squeeze those cute little toes, but they were sleeping so peacefully.

    How can that be comfortable Karlie!?  Not sure how she was still sleeping so soundly with her legs sticking out like that?  I think my feet with get cold and go numb.  Guess that’s the fun of being a baby.

  • Travel & Vacation: Old Exchange & Provost Dungeon (Charleston, SC)

    One of the days while we were in Charleston, SC it was raining so we took the time to explore the Old Exchange & Provost Dungeon.  We had gotten a Groupon for a discounted tour of the Old Exchange and Provost Dungeon so we figured it was the perfect day to go.  The girls and I had a lot of fun learning about the building and all the history that took place within it’s walls.  Another time about a year later we were in Charleston again and Jake joined us for our second tour of the building.  It is full of history.  The kids really enjoyed it.  A friend recommended we go see this historic site a couple years ago and we have enjoyed going more than once.

    Old Exchange dates back to the 1670’s when it was used as a Customs and Exchange building for the busy Charleston port.  Pirates were placed in the Provost Dungeon.  British tea was stored inside it’s walls.  You can see the old sea wall inside the Provost Dungeon.  During the American Revolution the colonists hid guns and ammunition inside the building.  There is a lot of neat history in this building.

    The had to keep records of all the exchanges and transactions that took place inside the building.

    The colonists put a powder magazine inside the building and then built a wall in front of it.  Even during the American Revolution when the British soldiers had control and occupied this building they never found it.  After the war when they took down the wall everything was still where they had left it.

    Today we flashback to Jake’s birthday July 2005 when the girls were five months old.  It was his first time celebrating a birthday with two little munchkins with us.  They made the day quite entertaining.  They enjoyed the new things to explore and see throughout the day from birthday banners to candles to rice krispie treats and more.

  • Recipes: Cooking Ground Beef Using a Crockpot

    My favorite way to save time with cooking is to do some of the time consuming and messier tasks all at one time.  One of the ways you can do this is by cooking up your ground beef in advance and freezing it in measured out portions.  When you need cooked beef for a recipe you pull it out, thaw it a little bit, and you are ready for the next step.  I started doing this several years ago and just this one activity saves our entire family a lot of time throughout the month.

    Once we are down to our last bag or two of cooked ground beef in the freezer it’s time to do another big batch a crockpot ground beef.  I can fit several pounds of ground beef into our crockpot at one time.  One crockpot of cooked ground beef will usually last our family at least a month or more (it has lasted up to 3 months for us on more than 1 occasion).  Typically we have about one ground beef based meal per week whether on the week days or weekend.  My husband was a little skeptical about this at first, but after a few months he has come to enjoy being able to pull out a bag of cooked ground beef and proceed forward to the next step of cooking the meal.

    This works really well if you want to cook up a larger batch of ground beef at one time.  It would not be as useful if you are wanting to cook 1 pound of ground beef for a meal later that day (doable, yes, just not as efficient).   I always try to keep an eye out for ground beef deals whenever I am at the grocery store.  If I find a good deal I stick it in the deep freezer and when it is time to cook up the next big batch of ground beef I always have plenty to fill up the crockpot.  This helps you save money in the long run too because you don’t have to pay full price for ground beef (which has gone way up in the last couple of years).  It is a good idea to be home while the ground beef is in the crockpot because it typically only takes 3 to 5 hours and you want to break up the ground beef throughout the cooking process.

    By doing this you make the mess of cooking ground beef once a month (or every couple months) and your done.   No more weekly cooking of your ground beef will also save you more time and clean up mess than you realize!  Seriously!!!  This especially works well if you have an upcoming busy season that you want to prepare for or having a baby soon or summer break or just trying to utilize your time more efficiently.

    Cooking Ground Beef Using a Crockpot Recipe:

    • Several Pounds of Ground Beef (I usually do between 5 to 10 pounds at a time).  You can use traditional beef, grass fed beef, or whatever combination you want.  You can also use whatever percentage of fat you want as well.  Although, the fattier the meat the less actual meat you will have at the end because the fat will be drained off.  We like to buy 93% lean or higher, but at times we do pick up a lower one if it is at a great price (we always stick to 85% or higher).

    1.  Fill your crockpot up to the top with ground beef (every crockpot holds a different amount, but try to fit in as much as possible).  I have put in frozen ground beef (pulled directly from the freezer) as well as thawed ground beef (either way will work fine), but you will be able to fit more of the thawed ground beef into your crockpot therefore creating more meals out of your finished product.

    2.  Put your crockpot on the low heat setting and cook for 3 to 5 hours.  The time will vary depending on how much meat you put into your crockpot and whether or not it was thawed or frozen.   Place the lid on the crockpot and let it cook for an hour.

    3.  After the first hour of cooking add your spices (whatever you typically use to season your ground beef).  We like to keep it simple by adding minced onions and Grill Mates Montreal Steak Seasoning Other good seasonings that compliment the ground beef are salt, pepper, garlic seasoning, etc…  After adding the seasonings take a straight edged spatula or wooden spoon and break up the meat so it starts forming the ground beef crumbles.  Place the lid back on the crockpot and allow it to cook for another hour.

    4.  After the 2nd hour remove the lid and break up the meat again.  This will help it form the nice uniform ground beef crumbles that work well in recipes.  If you do not stir it regularly than the ground beef will form larger clumps of meat which do not work as well in many of the recipes that call for ground beef.  You can still break up the larger clumps at the end, but it will take longer and they will not be as evenly seasoned or as uniform.

    5.  Repeat step #4 every additional hour until your ground beef is cooked thoroughly.  You should have a nice brown color and your meat crumbled into fairly even size pieces.

    6.  Once the hamburger is cooked turn off the crockpot.  Place a small holed strainer on top of a large metal bowl and pour your cooked ground beef into the strainer.  The strainer will keep your cooked meat in it while the oils will drain into the large bowl underneath.  Allow the hamburger to drain for 10 minutes.  Blot with a paper towel to get rid of any access fat.

    7.  Allow the meat to cool completely.  Once it is cool divide the meat up into individual bags or containers by measuring out 2 cups of meat per container (this is approximately 1 pound of ground beef per bag or container).  If you get to the end and you don’t have enough for an additional 2 cups divide the remaining meat equally between the individual containers already fill.  Typically, I have between 2 to 2 1/2 cups of cooked meat per bag or container.  Every time you have a recipe that calls for 1 pound of hamburger all you have to do is pull out 1 of these bags or containers and use it.  Each one of these is used in a family meal.     If you have 6 bags or containers this should get you through your next 6 meals that use cooked ground hamburger.  Say you do 1 meal like this a week this should last you 6 weeks before you have to cook ground hamburger again!

    This allows you to pull the meat out prior to dinner, make your meal, and eliminates a lot of time and mess.  Which means you can spend more time with your family or doing something you enjoy!

    Today’s flashback Friday goes back about 10 years when the girls first were introduced to a pool.  The first trip to the pool with the Greenville Mother’s of Multiples Club family party.  We didn’t even have swimming suits for them yet so we took them in onesies and swimmer diapers.  They were not to thrilled about the pool the first time around.  Both were a little surprised and not overly excited about it.  You would never know that now though!

    The second time we went to a pool was about a week later with our friend Mike and Ashley.  We had gotten the girls swimsuits in the meantime and they did a little better the second time around.  Still not thrilled about it, but they tolerated it better.
