  • Recipe: Grandma Doris’ Chocolate Mayonnaise Cake & Peanut Butter Frosting

Grandma Doris makes an amazing Chocolate Mayonnaise Cake with Peanut Butter frosting!  Although it sounds interesting the cake is moist, delicious, and easy to make.  It was one of the first cakes I made as a kid. When Grandma Doris made this cake for dinner and family Holidays there was rarely ever any cake left by the end of the meal.

    Chocolate Mayonnaise Cake

    • 1 cup Mayonnaise
    • 1 cup warm Water
    • 1 1/2 cup Sugar
    • 2 cups Flour
    • 2 teaspoon Baking Soda
    • 1 teaspoon Vanilla
    • 1/4 cup Cocoa Powder

Mix all ingredients together and bake in 9 x 13 dish at 350 degrees for 30 to 40 minutes.

    Peanut Butter Frosting

    • 2 cups Powder Sugar
    • 1/2 cup Butter
    • 1/4 cup of Milk
    • 2 tablespoons of Peanut Butter (either smooth or crunchy)

Mix frosting ingredients together. If necessary add more milk until frosting has a smooth texture.  Spread frosting over the Chocolate Mayonnaise Cake.

  • Gift Giving: Homemade Handprint Ornaments

Are you looking for great gifts to give but are on a tight budget?   This is a simple recipe that uses a few items from your pantry and makes a thoughtful Christmas Gift.  Last year for Christmas gifts we made Homemade Cinnamon Handprints for Grandparents, Aunts, Uncles, and extended family members.  They were inexpensive, easy to do, and the girls had a lot of fun. You probably have all the ingredients already.

    Cinnamon Handprint Ornaments:

    • 2 cups Flour
    • 1 cup Salt
    • 5 teaspoons Cinnamon
    • 3/4 cup Water

Combine dry ingredients in a bowl.  Stir in water gradually to make dough.  If it is sticking to your hands, add more flour or if it is too crumbling add more water.  Knead dough for approximately 8 minutes until smooth.  Refrigerate for 30 minutes.  Roll out dough to desired thickness (typically between 1/4 to 3/4 inches thick).

We used a football cookie cutter for the oval (you can use a circle or anything big enough that they can fit their hands in) than lightly floured their hands before making a slight indention on the clay.  We took a stamp and pressed their first initial in the bottom of each palm to help us remember who it belonged to.  Since my girls are twins their hand sizes are almost the same!

After making the handprint in the clay use a straw to make a hole in the top so you can hang the ornament.

Bake at 325 degrees for 45 minutes to 1 1/2 hour.  (Thicker dough will take longer to bake).  They are done when the clay is dry, you notice a slight change in color.  Cool and add a ribbon of your choice!

Optional: Once cooled you can use spray on polyurethane for extra shine.

Ours still smell great even after a year.  We made more than one batch since we have a large family but you can do as many as you want.  With the extra dough we made Christmas ornaments so we could hang them on the tree.

  • Counting Days on the Advent Calendar

Several years ago my sister-in-law sent us an Advent Calendar.  The girls enjoy getting out all the Christmas decorations and hanging up the calendar.  Our calendar has a small pocket that fits two small pieces of candy  perfectly.  Every day, starting on December 1st through December 24th, the girls get a piece of hard candy from the Advent Calendar.  I pick up the candy when it is on sale or purchase with CVS or Walgreen rewards.  They are excited because they get to eat a piece of candy and can easily count the days until Christmas.  In addition to the candy I have been known to add a verse to read for the day.  It is important that the kids know the true meaning of Christmas especially in a society with so many other influences.

It is a busy time of year and spreading the excitement throughout the month is a lot of fun.  It is an easy way to track the days leading up to Christmas.  The calendar would be fairly simple to make for someone who is crafty and can use a sewing machine.  How do you spread the excitement of Christmas over the whole month for your family?

  • Saving for College – Upromise

Buy Groceries Today, Pay For College Tomorrow!
Our girls are important to us and we are trying to start saving for their college early, especially since we have two that could go to college at the same time!  Every little bit helps!  We have officially been doing Upromise for about 8 months now.  When we signed up we were not aware of all the great benefits it provided.  Most of our earnings are through the groceries we purchase every week.  If you are not familiar with it here is a little more information to get you acquainted.

    • Upromise is free
    • Companies give you money for educational expenses (college bills, student loans and 529 savings)
    • You earn money from everyday activities – buying groceries, shopping online, filling up with gas tank, eating out, and much more.
    • Both local and online stores give you the rewards.  (700+ Online Stores like Best Buy, Ebay, and many more).
    • Over 8,000 participating Restaurants
    • More than 21,000 Grocery & Drug Stores
    • Car Rental Companies
    • Gas Stations
    • Magazine Subscriptions
    • Traveling
    • Buying or Refinancing a house
    • And many more participating companies!

How does Upromise work?  Do your normal shopping online, in the grocey store, and eat out with your family and earn money back.  You can use the money to pay for college bills, invest in a 529 plan, pay down a student loan, and many more.

The primary way we use accumulate points is through the Upromise eCoupons which give you bonus cash for purchasing groceries that month after you have activated the coupons.  They track our purchases through the rewards cards we use at Ingles, CVS, Bi-Lo, Publix, and many more.   We have earned over $90 the last few months just buying groceries! If you are looking at ways to save on items you already purchase it may be worth your time to sign up.

  • Gift Giving: Need FREE Batteries?

Are you looking for FREE batteries to go with all those great Christmas gifts you purchased?  Check out the Staples and Office Depot deal this week.  Batteries make great stocking gifts especially since so many toys and gifts use them!  Staples did this offer for several weeks last year and we stocked up on enough batteries to last almost the entire year!

    • Staples – get 100% back in Staples Rewards when you buy a 20 count of package of Duracell AA or AAA Batteries.
    • Office Depot – get 100% back in Work Life Rewards when you buy a 20 count package of Energizer AA or AAA Batteries.

The Staples Rewards come back pretty quickly.  We don’t have an Office Depot very close to us but we have had good luck in receiving from them in the past too.  We go through a lot more batteries in our house with the kids.  Great way to stock up if you are looking at purchasing batteries anyway.

  • Book: “Speaking Mom-ese” by Lisa Whelchel

This book was given to me after I had the girls, Speaking Mom-ese by Lisa Whelchel.  The first few months after the girls were born were a blur after having 12 weeks of bed rest, followed by an early delivery, complications, and time in the NICU.  It was encouraging to have a devotional from a Mom’s perspective even though a lot of the stories were regarding older kids.   The devotionals were short, sweet, and hit home during those exhausting months.  Since then I have gone through the book again and different devotionals touched my heart this time around.

  • Thanksgiving Recipe: Mandarin Avocado Tossed Salad

We all have a recipe for the Green Bean Casserole and other family favorites.  I am going to share a Salad Recipe for a side dish at Thanksgiving dinner.  We adopted this recipe several years ago thanks to Taste of Home!  It has a mix of colors, shapes and textures that the everyone enjoys.  The whole family, including the kids, love this delicious salad.  Sometimes with add in halved grapes for an extra touch to the salad.

    Mandarin Avocado Tossed Salad:

    • 1/2 cup Sunflower Kernels
    • 1/2 cup slivered Almonds
    • 2 tablespoons Butter or Margarine
    • 1/2 cup Vegetable Oil
    • 3 tablespoons Cider or Red Wine Vinegar
    • 1 tablespoon Lemon Juice
    • 2 teaspoons Sugar
    • 1/2 teaspoon Salt
    • 1/2 teaspoon ground Mustard
    • 1 Garlic Clove, minced
    • 4 cups torn Leaf Lettuce
    • 1 can (11 ounces) Mandarin Oranges, drained
    • 1 ripe Avocado, peeled & cubed
    • 1 to 2 Green Onions, chopped

Directions:  in a small skillet, saute sunflower kernels and almonds in butter.  Cool. Meanwhile, in a jar with tight-fitting lid, combine the oil, vinegar, lemon juice, sugar, salt, mustard and garlic; shake well.  In a large salad bowl, toss the lettuce, oranges, avocado, onions and sunflower kernel mixture.  Drizzle with dressing. Serve immediately. Makes 6 to 8 servings.

We usually prep everything the night before and add the dressing when you are ready to serve.  A wonderfully refreshing salad for any meal.

  • Thanksgiving Recipe: Hendrich & Kejr Family Dressing

My Grandma Willa gave me the family recipe for the Hendrich & Kejr Dressing for our first Thanksgiving together as a couple.  You can do several steps the night before to save you some time on Thanksgiving day.  We have enjoyed a lot of wonderful meals and created many memories at Grandpa and Grandma’s.  Thankful for a family that celebrates together.

    • Cook Giblets with a little salt and pepper, 1/2 cup of onions, 1 stalk of celery in enough water to cover, until tender. (It works well if you do this piece the night before Thanksgiving).
    • In a large bowl put 12 cups of crushed dry bread crumbs, 1 tablespoon of poultry seasoning, 1 teaspoon sage, 2 tablespoon of caraway seed, add 1/2 cup melted butter.  Pour over the bread crumbs and stir.  (This can be done the night before as well).  If using seasoned bread cut back on seasoning all but the caraway seed.
    • Add 1 to 2 cups of hot broth and stir together. (You can use giblets for gravy use water or canned broth) stir together all of the above and add 4 eggs beaten lightly with 1/2 cup milk and stir into the above.  If dressing seems dry add more liquid. (You want it to be soft yet hold together slightly).
    • Sprinkle turkey inside and out with caraway seed.  Stuff bird and cook according to directions on the bird.  (You can bake separately as well if you choose).
    • A 10 to 13 pound young bird usually takes 3 1/2 to 4 hours to cook.  For gravy use chicken broth and drippings or Giblet broth and pan drippings.  I go either way.
