A Sweet & Simple Note Can Melt a Moms Heart
Occasionally, Jake has to travel for work and there are times when he is gone random craziness happens at home. On this particular week Jake was gone it was busy with a lot of school activities, tutoring, animals getting out of their pen, doctor appointments, sick kids, and more. This particular day had a tough afternoon noon of school work, followed by chasing the goats back into their zone (multiple times), leftovers for dinner, a couple of not-so-cool Mommy moments, and running around trying to get the kids in bed on time.
By the time the girls were in bed I was exhausted and ready to relax, but lunches still needed to be put together, dishes washed, kitchen picked up, bills to be paid, and more regular household duties waiting for my attention. I decided to take 10 minutes and sit down, on the couch, and reflect on the events of the day. While sitting there I started thinking about everything I could have done better regarding my interactions with the girls in some of the sticky situations specifically regarding my actions, words, and attitude.
As I was thinking about the day I looked over at the dry erase board and saw a note from Karlie. Some days you don’t know if they realize how much we love them…..then they do something spontaneous and sweet like this simple note that melts my heart. And brings more tears! We are not perfect parents by a long shoot, but it does a Moms heart good to know that they really do feel loved and appreciated even in amidst those hurried, frustrating, and crazy days. I had no idea this note was on the dry erase board or when she put it there with everything going on that day, but it was the perfect encouragement boost I needed for that evening. Thankful for my kids and for their thoughtful ways of showing love.
She picked yellow so it’s a little harder to read, but it says:

What’s for Dinner: Our Weekly Menu Plan

There is a lot going on this week. I am hoping to keep the dinner menu simple and easy. Also, there are a couple meals this week I want to duplicate so we can stock up the freezer for those nights in the future when we will not be able to spend a lot of time in the kitchen. I call it my “make 1 – freeze 1” meals. Here is our menu plan for the upcoming week:
Our Weekly Menu Plan
- Monday (Beef or Seafood Entree): Roast, Mash Potatoes
- Tuesday (Kid’s Night to Cook): Pizza, Salad (Make 1 Pizza Dough & Freeze 1)
- Wednesday (Chicken or Vegetarian Entree): Chicken Pot Pie, Fresh Fruit (Make 1 Chicken Pot Pie & Freeze 1)
- Thursday (Pasta or Pork Entree): Pork Chops, Steamed Vegetables
- Friday, Saturday, & Sunday: Leftovers, Family Preference, and Hosting
I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or seafood entree and so forth). It is my goal, at least in the beginning, to have at least the main dish and one side planned. I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.
Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family. On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home. As I go through the menu planning process I will try to share some of our favorite family recipes. If there is a specific recipe you would like please let me know and I will do my best to accommodate (some recipes are a toss together meal and I do not use any set measurements).

Intentional Living: Weekly Goals
I am hoping to get through a bunch of the tasks this week! There is a lot going on around here the next few weeks, but if I remain consistent I will still be able to get a lot accomplish. Looking forward to getting some items done.

I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us. I want to live intentionally not just hope all my dreams and goals come true. When I focus on small steps of improvement I am able to see results as I get closer to my goals. Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick). Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.

What’s for Dinner: Our Weekly Menu Plan

We have a busy week coming up as well as hosting some guests. I am going to try and keep the menu simple with all the school, work, and other activities that will be going on this week. Most of the meals will have to be prepped earlier in the day in order to make efficient use of our packed evenings, but I think we can make it happen. Here is our menu plan for the upcoming week:

- Monday (Beef or Seafood Entree): Beef Minestrone Soup, Fresh Vegetables
- Tuesday (Kid’s Night to Cook): Spaghetti, Fresh Salad
- Wednesday (Chicken or Vegetarian Entree): Special Event
- Thursday (Pasta or Pork Entree): Pork Loin, Steamed Vegetables
- Friday, Saturday, & Sunday: Leftovers, Family Preference, and Hosting
I have a general pattern I try to follow for my weekly Menu Plan (for example Monday we have a beef or seafood entree and so forth). It is my goal, at least in the beginning, to have at least the main dish and one side planned. I will put together the remaining side dishes (veggies / fruits) based on the food items that need to be used up first and compliment the main entree.
Setting a weekly menu plan helps me utilize my time better, thus freeing up extra time to spend with my family. On the days that I am working longer hours I can prep the meal in advance so it will be easier to pull together once I am home. We made it through a busy week last week. This week is starting out a little different since the girls get today, Monday off school with a Teachers In Service. It has been nice having them home for an extra day this weekend. We went through all their Fall and Winter clothes to see what still fits. It always surprises me how much they grow from year to year. Last week Jake was traveling for work and a couple of us were fighting colds so it was a little more exhausting. Hopefully this week everyone will be well and we’ll get back on trip with everything. Here is our menu plan for the upcoming week:

It is hard to believe another week is already upon us. My husband and I were going over our budget this month and decided that the multiple “little” grocery store trips were pushing us over budget so I am going try to do only one grocery stop a week. The once a week grocery trip will include any household or health and beauty items. Also, we have items in our pantry and freezer we need to use up as well. The week ahead of us is looking pretty busy with a few extra activities tacked onto an already crazy schedule. As we were looking at our schedule this week my husband suggested that I do easy and simple meals this week. What’s for Dinner: Our Weekly Menu Plan
It has been awhile since I posted our family menu schedule on the blog. This summer the only week we were home for an entire week was when Jake’s sister and family were visiting us. Thankfully, we had a great summer and safety as we traveled to see a lot of family and friends. We are now back into the school routine schedule so it is essential that I start doing the menu planning regularly. By the time the kids get out of school and we do any after school activities, tutoring, homework, dinner, baths, lunches packed, etc…. our evening is done and it’s time for bed. Since homework takes a chunk of the afternoon and evenings I need to make sure I know what our menu is going to be so I can prep, plan, organize, and have everything ready to run as efficiently as possible so everyone is fed and in bed on time.
I am extremely grateful for a husband who pitches in and helps in the kitchen, there were a couple nights this past week that we were still doing homework when he arrived home from work so he put the finishing touches on the dinner so I could help the kids wrap up homework. Thanks Handsome!!! Eating our evening meal together is important to us. We want to be able to relax and catch up with each other once dinner is served. Since Monday is a Holiday I will be moving our Beef night to Tuesday and giving the girls a week off from cooking until we get the school schedule down. Plus, the kids pitched in and helped with meals as well as special cooking this past weekend. Here is our menu plan for the upcoming week:

What’s for Dinner: Our Weekly Menu Plan
It has been a little wild around here lately and I haven’t been posting my weekly dinner menu for awhile even though I am doing it (most weeks). Since I am already planning the menu I might as well share it with you too. The menu plan is especially important when we are busy. The normal Wednesday and Thursday meal entree’s are switched around due to our schedules that day, I needed to be able to do something that didn’t take a lot of prep and with items we already have in the fridge or pantry. I think it is important to share and encourage each other as we seek to improve our lives and the lives of those around us. I want to live intentionally not just hope all my dreams and goals come true. When I focus on small steps of improvement I am able to see results as I get closer to my goals. Some weeks I get closer to the goals I have in my life and other weeks a take a few steps back (life happens, emergencies occur, people get sick). Once the goals are written down and shared it provides a guideline for what I aim to accomplish this week.
Why Share My Goals?
- To keep me accountable
- To share a piece of my life with you as I strive to be a better Child of God, Wife, Mom, Friend, Homemaker, Entrepreneur and the many other roles I have each week
- To have my goals consistently written down so I can gauge progress more accurately
- Create healthy habits in my life
- To encourage you to share your goals with me as you continue to grown and learn
