Recipe: Liege Waffles (Gaufre de Liege)
My cousin Renelle made these waffles a few weekends ago and they are AMAZING!!!! You don’t even need to put syrup on the waffles! I ate mine with blueberries on top. Later that weekend I had them just plain and they were sweet and tasty. You may want to make these the night before if you are planning on an an early breakfast otherwise they would make a great brunch since the dough has to rise. They are just as delicious reheated as well. Renelle made deep Belgian waffles for everyone, thanks Renelle for sharing such an awesome recipe with us!!!
Liege Waffles:
Sponge –
- 4 1/2 teaspoons Active Dry Yeast
- 1 1/3 cups warm Milk
- 1 3/4 cups Flour
- 1 tablespoon granulated Sugar
- 1 Egg, lightly beaten
Batter –
- 9 tablespoons unsalted Butter (room temperature)
- 1/4 cup Flour
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Baking Powder
- Pinch of Salt
- 2 tablespoons Granulated Sugar
- 3/4 cup Pearl Sugar
- Extra Flour (for sprinkling)
Directions
Sponge –
- In a small bowl, sprinkle yeast over the milk. Add 1 tablespoon of flour and sugar; set aside for 5 minutes or until foamy.
- Sift remaining flour into a large mixing bowl. Make a well in center and add yeast mixture and egg. Stir well to make a smooth batter.
- Cover with plastic wrap; set aside in a warm place and let rise until doubled or tripled in bulk, about 2 hours.
Batter –
- Place butter, flour, vanilla, baking powder, salt, granulated sugar, and pearl sugar into a bowl and work with back of a wooden spoon to form a paste.
- Work butter mixture into a sponge mixture until well combined. Cover, and set aside for 10 minutes
- With floured hands, shape dough into 10 balls. Flatten one slightly and dust it with flour. If dough seems too wet to handle, just pour the batter directly onto the waffle iron.
- Heat a waffle iron until medium hot. Place a flattened ball in the middle of the iron; close top. Cook for 3 to 4 minutes. If waffle iron is too hot, sugar will burn. Continue baking until all the waffles are done. Waffles may be kept warm in a 200 degree oven until ready to serve.
Yields: 10 Waffles

Family Celebrations: Happy Mother’s Day

Relaxing in the Hammock with my girls! Jake got me a hammock for Mother’s Day. The girls and I enjoyed some time relaxing, laughing, talking and reading stories together in the hammock on Sunday.
Karlie told me “Mom, I think you’ll have a lot of fun relaxing in your hammock, you can read a book or read the Bible and talk to God outside now!”
Brina caught a couple little ladybugs to take on the hammock with us “They like to relax and swing too Mom!”
I am blessed with two beautiful thoughtful girls and a sweet husband. This year the girls planned Mothers Day from Breakfast in Bed to the gifts and activities. It was a fun, memorable and relaxing day with the family. My cup truly runeth over….there was a time in my life when I wondered if I would ever have kids and a family of my own. Thankful that God chose to bless me with these two wonderful daughters. Being a Mom brings so many precious rewards, fun, and laughter.
- Breakfast in Bed – Brina and Karlie brought me Cinnamon Raisin Toast, Fresh Fruit (Strawberries, Pineapple, Cantelope, Honeydew, Mango, & Grapes) and a Strawberry Lemonade Fruit Slushy, delicious! (sorry no pictures of the breakfast in bed)

Mother's Day gift from the girls! It is the gifts from the heart – the hug, kind word, and thoughtfulness that mean the world to me! At the same time as I celebrate this amazing day with my family my heart and prayers go out to those who have lost their Moms or who are unable to have children. Every life is a gift and every day is a treasure from above. I am thankful for the many blessings (both family and friends) in my life.
Family Celebrations: Catching Up with Family Over Spring Break

Cousins Riding Together on the John Deere Gator! Fun Times! The girls and I had the opportunity to go visit family over their Spring Break this year. We had a lot of fun spending time with Grandparents, Great Grandparents, Aunts, Uncles, Cousins, and more! It had been a few months since we had been in the Midwest yet I was amazed how much the girls remembered. They LOVED seeing family and spending time on the farm. Each night they would crash from their busy schedule but they would be up early the next morning ready to (as Karlie put it so nicely) “Go explore more of Kansas!”
I am thankful the girls have an opportunity to spend time with my parents and all four Grandpa and Grandma’s on my side of the family. Each one has a special place in my heart and I am thrilled the girls get to have such wonderful memories of them as well. It has been a nice adventure full of old and new memories. It was such a blessing to see so many family members throughout our stay in Kansas!

The girls and I had a grand time seeing so many family members and spending time in Kansas. A big thanks to everyone for a super fun trip! It is a Spring Break that the girls will be talking about for years. And yes, they found out that Easter does come to Kansas too! Although we made a lot of wonderful new memories during our trip the girls are ready to see Daddy again. Hopefully he is ready for us!
Love It – Purple Heart Necklace

My Purple Heart Necklace, beautiful reminder of the blessings in my life! Thanks Handsome! My husband has known for years the impact the Little Purple Flower had on my life. We were dating at the time the incident occurred and he was delighted to see God use such a beautiful reminder to encourage me. Since that time Jake has on numerous occasions surprised me with a gift that had a purple flower or something similar on it as a reminder of how much He loves me. The gift is also a visual reminder that God daily gives me the many blessings I have in my life.
On Valentine’s Day my husband and I celebrated together at Winter Jam 2011. When I got up to go to the restroom before the concert started I came back to a small package on my chair. He gave me a beautiful purple heart necklace (totally surprised me) as a way to remind me of His love and the many blessings in our lives as a couple. I had no idea that he was even saving his money to get me such a sweet surprise.
He had been looking for the perfect necklace for awhile until he found the purple heart which he thought it would be a perfect fit for me. For those of you who know me personally I am not a glamour and glittery type of person. I grew up with three brothers on a farm and was more of a tomboy than a princess. I can count on one hand the pieces of jewelry I wear regularly. Every single piece I wear daily Jake picked out on his own for me (most of them were surprises too). I wear my watch, engagement & wedding rings, and my heart necklace he gave me for our 7th anniversary every day. The only other time I wear different or more jewelry is for a special event or Date Night when I an extra necklace, ring, or bracelet. So needless to say I was shocked to receive a necklace on Valentine’s Day and my heart about burst with love for him when I realized it was a purple heart meant to remind me of the little purple flowers in my life.
I am surrounded by many blessings in my life. Some days I have to look harder to find those blessings but they exist no matter how big or small. I am thankful for a God who extends love and grace to me every day. A husband whom I adore and kids that bring so much joy and laughter into my life. The best part is they all love me despite my imperfections and crazy days. Thank you babe for reminding me of the MANY blessing in my life. I am thankful for the amazing gifts God has given me!

Family Celebrations: Happy Birthday Skipper!

Best Buddies - A Girl and Her Dog (Brina and Skipper) The fifth member of our family is full of energy, a loyal friend, loves to play outside and adds a lot of laughter to our family…….Skipper! She is our sweet black lab who the girls absolutely adore! Our little Puddle Skipper Hayes was born on March 14, 2010 and she had fun celebrating her 1st birthday with us! It was a busy day full of a lot of activities but ended it with a little celebration for our furry family member. The girls were so excited to celebrate Skipper’s birthday.

They even had tape on the floor when they were done (you can see a pile in between them on the carpet). They were so excited and had a blast doing the wrapping for their furry sister!

Skipper's Special Birthday Meal! The girls thought it was hilarious putting Skipper’s candle in her special meal. They thought it was funny she would rather have a special birthday meal with “bacon” then a birthday cake. The girls were worried that Skipper was going to burn her nose so she barely got close to the bowl until the candle was blown out, glad they were looking out for her. It was great watching them trying to keep her away from the candle while we sang Happy Birthday!

The unwrapping part of the birthday celebrations was exciting and confusing for Skipper, good thing the girls were there to help! Skipper was very excited to get new bones and a toy! She immediately took one bone into the yard, then realized the other one was still on the porch so went back for that one. I really think she stayed up all night playing and eating her bones!
Happy Birthday Skipper! Hope you enjoyed your play time with the family, your feast, bones, and toy! The girls had fun picking them out, wrapping and celebrating with you!!!
Family Celebrations: “Welcome Ranch” Birthday Party
This year did the girls birthday party celebration at Welcome Ranch. It was our first year doing their party outside of the house and after calling several locations we made the decision to do it at Welcome Ranch. Brina and Karlie’s personalities and tastes are very different (one of the many joys of having twins), however, they both LOVE animals especially horses. Jake and I booked the party and when we sat down to tell the girls they were thrilled. They were okay that we wouldn’t be decorating the house since they would be riding horses for entertainment this year. I think every day after telling them they would ask “Is it this week?” When the day finally arrived they asked every few minutes “How much longer until we can ride the horses?” Thankfully we had another activity planned with friends earlier that day so that distracted them for a couple hours. They were very excited when we were on our way to the horse ranch to celebrate. Here are a few pictures from our day at Welcome Ranch:

The sign at the entrance of Welcome Ranch said "Happy Birthday Karlie 6 & Brina 6" The girls were thrilled to see their names on the BIG sign at the entrance of Welcome Ranch! “We have never had such a BIG sign to wish us Happy Birthday!” They were pleasantly surprised and excited!

She even got a few laughs when explaining the rules. Brina and Karlie were listening carefully so they wouldn’t miss out on anything! They picked out their ranch hats earlier that week at Wilson’s Five & Dime store on Lauren’s Road. I was surprised they wore the hats the entire time!

Happy Birthday Brina & Karlie!!!
Today is my little ones birthday! It seems like it was yesterday we were in the hospital and NICU with them. Even though their due date was in April they decided to come 7 weeks early. They have brought so much joy and laughter to our life! It has been wonderful watching them learn and grow. We pray daily that God will continue to develop them into beautiful young women with a heart for Him.
